CHICKEN SOUP WITH ELBOW MACARONI



Chicken Soup with Elbow Macaroni image

This is a great recipe for when it's cold out or you're feeling a little under the weather. It makes a ton, so it's great for a big group or if you want leftovers.It is very hearty and low cal.

Celery, raw, 2 cup, diced
Carrots, raw, 2 cup, chopped
Onions, raw, 2 cup, chopped
Butter, salted, 1 tbsp
Pacific Natural Foods Organic Low Sodium Chicken Broth, 3 boxes
Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 box
Kirkland Grilled Chicken Breast Strips, 350 grams, chopped
Yellow Sweet Corn, 1 Can
Peas, 1 Can
Ronzoni Smart Taste Elbow Macaroni, 1 box
Season to your taste with
Lawry's Seasoned Salt
Lawry's Seasoned Pepper
Celery Salt
Poultry Seasoning

Steps:

  • Saute the onions, celery and carrots in the butter unitl they are transluscent.
  • Add 3 boxes of Chicken Broth and bring to a boil.
  • Season to your taste.
  • Add the box of macaroni and cook for 12 minutes.
  • Turn down the heat and add the chopped chicken, corn and peas.
  • After you ladle into bowls, you can top with 5 grams of Parmesan for an extra 20 calories.

COMFORT FOOD!! A creamy cheese soup which will satisfy big appetites! There is a hug in every spoonful! Noodles, cheese and veggies all add to the goodness of this soup.

1 cup elbow macaroni, uncooked
1/4 cup butter
1/2 cup carrot, finely chopped
1/2 cup celery, finely chopped
1 small onion, finely chopped
5 cups milk
8 ounces chicken broth
2 cups cheddar cheese, shredded
2 tablespoons cornstarch
3 tablespoons water
1 cup cooked chicken, chopped
1 (8 ounce) whole kernel corn, drained
1/4 cup frozen baby green pea
salt and pepper

Steps:

  • Boil macaroni noodles in unsalted water until tender. Drain and set aside.
  • Melt butter in a large saucepan. Add carrots, celery and onion. Sautee lightly for 2-3 minutes. Remove from heat and set aside.
  • In a large dutch oven, combine milk and cheese. Simmer on low heat just until cheese melts. Add chicken broth slowly.
  • In a small bowl combine cornstarch in water until a smooth paste; stir slowly into milk mixture. Cook until mixture thickens and comes to a boil. Boil 1 minute stirring constantly.
  • Into dutch oven stir in chicken, macaroni noodles, vegetable mixture, corn and peas. Simmer 2-3 minutes until heated thoroughly.
  • Ladle and sprinkle with cheese. Serve and enjoy!

A filipino soup favorite made with elbow macaroni, milk and butter. This is perfect anytime you feel like having soup.

Number Of Ingredients 11

2 cups elbow macaroni
1 lb chicken breast, in bite sizes
1/2 cup evaporated milk
2 tablespoons butter
1 tablespoon of minced garlic
1 medium onion, finely chopped
1/2 cup sliced carrot
1 knorr chicken chicken bouillon cube
salt and pepper
1 tablespoon fish sauce (optional)
8 -10 cups water

Steps:

  • Boil water in a pot, add chicken until cooked and set aside.
  • In med heat, add the butter, onion, garlic and carrots.
  • Add elbow macaroni, raise the heat to high, stirring often until macaroni is cooked.
  • Add back the chicken and Knorr Chicken Cube to boil and simmer.
  • Stir in evaporated milk to boil and simmer.
  • Season with salt and pepper or fish sauce.
