A fabulously boozy jelly pud - the perfect dinner party dessert

2 gelatine leaves
4 tbsp hot water
100ml elderflower cordial
punnet of raspberries
sparkling white wine

Steps:

Soak gelatine leaves in cold water. Dissolve the gelatine in a measuring jug in the hot water from the kettle. Add the elderflower cordial and top up with sparkling white wine to make 450ml of liquid in total. Drop a few raspberries into six tall glasses and fill to about a third with the elderflower syrup. Leave to set completely, then add a few more raspberries and some more elderflower syrup. Repeat again until the glasses are nearly full to the top.

The Elderflower Spritz is EO's version of the St-Germain cocktail invented by Robert Cooper, the creator of St-Germain liqueur. The difference is that we add lemon slices for citrus in the middle. Our recipe was developed as a French version of the Italian Spritz, to offer to guests who dislike the bitterness of Aperol. Its flowery essence is calming and soothing, with a welcome simplicity.

4 ounces Perrier-Jouët Grand Brut champagne
2 ounces St-Germain elderflower liqueur
2 ounces club soda
3 thinly sliced lemon wheels

Steps:

Fill a large wine goblet with ice. Carefully pour the champagne over the large cold ice cubes, followed by the St-Germain, and finish with the club soda. Add the lemon wheels and stir slightly.

12 strawberries, hulled and sliced (1 1/4 cups), plus whole berries for serving
12 thin cucumber slices, halved (3/4 cup), plus whole rounds for serving
2 tablespoons superfine sugar
3 ounces fresh lemon juice
9 ounces gin, such as Citadelle, chilled
6 ounces St-Germain, chilled
Club soda, chilled; and Peychaud's bitters, for serving

Steps:

Muddle sliced strawberries, halved cucumber slices, sugar, and lemon juice in the bottom of a pitcher until fruits break down and release most of their juices and sugar has dissolved. Stir in gin and St-Germain to combine. Fill 6 glasses halfway with ice. Divide fruit-and-gin mixture evenly among glasses. Top each with 1 to 2 ounces club soda; stir once. Top each with a few dashes of bitters, whole strawberries, and cucumber rounds; serve immediately.
