EASY PUMPKIN MAC AND CHEESE
Pumpkin, when added to macaroni and cheese, sneaks a hidden vegetable to your meal! The onion and garlic add some flavor, too! Additional seasonings may be added too.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, heat oil in a saucepan over medium heat. Saute onion and garlic until softened and lightly browned, about 5 minutes. Stir in whole wheat flour until combined. Stir in soy milk, pumpkin puree, and Cheddar cheese.
- Drain pasta and mix into the sauce. Cook until heated through, about 5 minutes.

PUMPKIN MAC 'N' CHEESE RECIPE BY TASTY

Steps:
- Preheat the oven to 190°C (375°F)
- Chop up the pumpkin into chunks and place on a baking tray.
- Drizzle over the oil, salt, pepper, and ground sage, and coat evenly with your hands.
- Roast in the oven for 20 minutes.
- Once cooked leave to cool slightly and blend ⅓ of the pumpkin, set aside.
- For the sauce, in a large ovenproof pan, melt the butter over a medium-low heat.
- Gradually mix in the flour to create a roux.
- Add the milk in 4-5 parts stirring well in between.
- Continue to stir and cook the sauce for a further 5-10 minutes or until the sauce is simmering and thickened.
- Stir in the ground nutmeg, garlic powder, pepper, cheddar, and Parmesan.
- Stir in the blended pumpkin.
- Stir in the remaining whole pumpkin and macaroni, mix until combined.
- Top with the cheddar, mozzarella, and Parmesan.
- Grill for 10 minutes at 200°C (400°F) until the cheese is brown and bubbling.
- Serve.

PUMPKIN MACARONI AND CHEESE

- Butter a casserole dish. Mix 2 cups of the puree and all other ingredients together in dish. Spread 1/2 cup puree over the top of the mixture. Top with bread crumbs. Bake in a preheated 425-degree oven for about 20 minutes (longer if ingredients are cold when combined).

- 1.Preheat oven to 350 degrees F 2. Cook pasta in a large pot following package directions. When pasta is done cooking drain and return to pot. 3. While pasta is cooking, in a medium sauce pan, melt butter over medium heat. Stir in flour, salt, and pepper. Add whipping cream and milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. 4. Stir in cheese, pumpkin, and sage until cheese is melted. Stir cheese sauce into pasta to coat. Transfer macaroni and cheese to an ungreased 2-quart rectangular baking dish 5. In a small bowl, combine bread crumbs, parmesan, walnuts, and oil; sprinkle over pasta. 6. Bake, uncovered, for 30 minutes, or until bubbly and top is golden. 7. Let stand 10 minutes before serving

Steps:
- Cook bow ties in a large pot until al dente, drain, rinse return to pot and put to side.
- In a med. sauce pan melt 2 Tbs. butter and saute garlic and onion until soft and fragrant. Add remaining 2 Tbsp butter and cornstarch, stirring to form a roux.
- Add milk and Dijon and cook on med. high heat, stirring constantly until slightly thickened. Add cheeses one at a time, stirring until melted completely before adding the next one. Finally add 1/2 the Pecarino and stir.
- Reduce heat to low and fold in crabmeat, stirring until well coated and warmed through.
- Pour cheese and crab mixture over bow ties in the pot and gently mix until well covered.
- Ladle bow ties into a 9x13 casserole dish and sprinkle top with bread crumbs and remaining Pecarino cheese and chives.
- Place in oven at 350°F and bake until bubbly and golden.

- Meanwhile, bring a large pot of water to a boil. Add noodles and 1 tablespoon kosher salt, then cook just until al dente according to package instructions. Drain, then transfer noodles to a large bowl. Pour pumpkin sauce over the top, then stir in the cheddar, Greek yogurt, and 2 tablespoons Parmesan. Fold in all of the caramelized onions and reserved bacon.
