My Granny made this for Easter dinner. We were all sitting at the table commenting on how delicious it was. She sat down took a bite and sighed, Ahhh, I'll never make this again. We all told her she was crazy and asked for the recipe.

4 cups chopped peeled sweet potato
1 sweet onions (such as Vidalia®), cut into wedges
2 cloves garlic, sliced
3 tablespoons olive oil
1 tablespoon balsamic vinegar, or more to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix sweet potatoes, sweet onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.
  • Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.

3 sweet potatoes
2 tablespoons oil
1 tablespoon dried rosemary
1 teaspoon salt
1 teaspoon pepper
fresh parsley, chopped, for serving

Steps:

  • Preheat the oven to 400°F (200ºC).
  • Slice the top and bottom off of the sweet potatoes, and slice potatoes in half crosswise. Rest each half on the broader end, then slice 3 times vertically and horizontally. Turn the potatoes on their side and make 4 or five more slices, to form cubes.
  • Transfer the sweet potatoes to a baking sheet, then add the oil, rosemary, salt, and pepper. Toss to coat evenly.
  • Bake for 35-40 minutes, until the sweet potatoes are tender and starting to brown around the edges.
  • Let cool for 5 minutes. Garnish with chopped parsley before serving.
  • Enjoy!

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

Let the campfire burn down to make these ember-roasted sweet potatoes, or sweet potatos rescoldo, which are a smoky delight served with butter or gremolata.

4 equal-size sweet potatoes, scrubbed
4 Tbsps. unsalted butter
Fleur de sel
Crushed red pepper flakes
A handful of fresh parsley leaves, chopped
¼ cup chopped fresh mint leaves
⅓ cup (35 g) chopped toasted almonds or walnuts
½ cup (118 ml) extra-virgin olive oil, plus more for drizzling
¼ tsp. honey
Grated zest of 1 lemon
Coarse salt and freshly ground black pepper
Fleur de sel
1 cup (237 ml) plain yogurt, chilled

Steps:

  • Prepare a fire and let the charcoal burn down to a bed of embers, coals, and ashes for rescoldo. If cooking indoors, preheat the oven to 375°F (190°C).
  • Bury the sweet potatoes in the embers, coals, and ashes, making sure they are completely and evenly covered. Roast until they are tender all the way through. If cooking indoors, arrange the sweet potatoes on a sheet pan and roast for about 45 minutes, or until tender all the way through. The cooking time will vary depending on the size of the sweet potatoes: after about 20 minutes, part the embers with long-handled tongs and try to pierce a sweet potato all the way through with a long bamboo skewer. It will probably meet with some resistance toward the center and feel about half baked. Turn the potatoes over with the tongs and replace the embers and ashes, adjusting them as necessary for even cooking, and roast for about 20 minutes longer. When the sweet potatoes are done, carefully dig them out and wipe off the ashes with a dish towel or paper towels.

  • When the sweet potatoes are done, cool them very slightly, then cut them crosswise in half. With your fingers protected by a dish towel, slowly push the skin inward so the insides explode up from the top. Transfer the sweet potatoes to serving plates. Sprinkle with fleur de sel to taste, drizzle with olive oil, and add a large spoonful of cold yogurt to each potato. Spoon some gremolata over the yogurt and serve the rest on the side.

Once sauce has turned a dark amber and has thickened to coat the back of a spoon, remove from heat. Stir in coconut oil and vanilla.
  • Stir together remaining can coconut milk and ginger in a separate medium saucepan. Bring to a boil over medium-high. Remove from heat, and let stand 30 minutes. Pour through a fine wire-mesh strainer into a bowl, and discard solids. Stir into coconut-caramel mixture.
  • Wrap each sweet potato in heavy-duty aluminum foil. Place sweet potatoes on bottom grate of grill.
  • Light 1 charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour coals over sweet potatoes. Roast sweet potatoes, rotating occasionally, until completely tender, 40 minutes to 1 hour. Remove potatoes from coals, and let cool 10 to 15 minutes. Remove foil, and cut potatoes in half. Top evenly with butter and desired amount of coconut-caramel mixture.
