3 medium tart green apples, cubed
2 cups cubed honeydew
2 cups halved green grapes
3 kiwifruit, peeled, sliced and quartered
1 cup reduced-fat plain yogurt
3 tablespoons confectioners' sugar
3 tablespoons orange juice
1/2 teaspoon grated orange zest

Steps:

  • In a large bowl, combine the fruit. In a small bowl, combine the yogurt, sugar, orange juice and peel. Spoon over fruit; serve immediately.

1 cup milk
1 (3 ounce) package lime Jell-O gelatin
1 (3 ounce) package cream cheese
1 (8 ounce) can crushed pineapple
1 cup Cool Whip
1 cup of chopped pecans

Steps:

  • Place marshmallows and milk in top of a double boiler. Heat until marshmallows are melted. Add Jello and stir until dissolved; cool.
  • Beat cream cheese until light and fluffy. Mix with pineapple, then stir into marshmallow mixture.
  • Fold in Cool Whip and nuts, turn into dish and chill until firm.

I named this salad so because of its gorgeous emerald-color dressing. I've tried many different versions of it (nobody minds eating Succos food in the spring - it's better than eating Pesach food on Chanukah, which we often do because of deadlines!), and they all went over very well. Personalize the salad and garnish to your liking. My favorite is cabbage with small chunks of dried apricot. Love the flavor and color combo. Thanks go to my daughter-in-law Chaya for the idea. 1 (14-oz./400-g.) bag shredded cabbage
scallions, chopped
red onion, finely diced
dried apricots, diced
1 fresh nectarine or peach, cut in small chunks
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup slivered almonds
1/4 cup chopped pecans
1-2 tablespoons Gefen Olive Oil
pinch or 2 hot paprika or cayenne pepper
1 full tablespoon brown sugar
salt, to taste
black pepper. to taste
1/2 package (1/2 ounce) prechecked fresh dill
1/2 cup oil
1/4 cup water
1/3 cup + 1 tablespoon Manischewitz Honey
3 and 1/2 tablespoons vinegar
3 and 1/2 tablespooons fresh lemon juice or Heaven & Earth Lemon Juice
5 cloves garlic, minced or 5 cloves Gefen Frozen Garlic
3/4 teaspoon kosher salt

Steps:

  • Place all ingredients in a small frying pan and heat together for about 10 minutes over a low/medium flame. When the nuts start to pop, they're ready.
  • Place all ingredients in the food processor fitted with the knife blade. Blend together for a few minutes until it turns emerald green. (This lasts in the fridge for about two weeks.)
  • Pour cabbage into a large bowl. Add add-ins of your choice, or leave as is. I often just serve this salad with cabbage alone.
  • Immediately before serving, add dressing to taste. Mix together well.
  • Top with roasted nuts or serve nuts on the side. Alternatively, you can add chopped candied pecans instead.

Steps:

  • In a large pot of boiling salted water, over medium heat, add the beans and blanch for 3 minutes. Remove from water and shock in an ice bath. Drain, pat dry and add to a large serving bowl. Add the remaining ingredients and toss.

2 green bell peppers, seeded and cut into 1 1/2-inch dice
3 vine-ripe tomatoes, seeded and diced
1 small onion, chopped
1 large clove garlic, finely chopped
1/2 cup flat-leaf parsley leaves, coarsely chopped
1/2 lemon, juiced (1 tablespoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Coarse salt and black pepper
1 teaspoon ground cumin, 1/2 a palm full

Steps:

  • Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

1 large Yukon gold potato (about 8 ounces), peeled and diced
4 cups canned reduced-sodium chicken or vegetable broth
5 to 6 cups (from 1 large bunch) flat-leaf parsley
Coarse salt and ground pepper
Optional garnishes (choose one): croutons, edible flowers, extra-virgin olive oil, grated Parmesan cheese, or minced fresh herbs like chives

Steps:

  • In a large heavy pot or Dutch oven, heat oil over medium-low heat. Add onion and garlic; cover and cook, stirring occasionally until onion has softened, about 3 minutes. Add potato and broth, and raise heat to high; bring the mixture to a boil.
  • Reduce heat to medium; cover and simmer until potato is tender, about 10 minutes. Stir in the parsley and cook, uncovered, until parsley is wilted, about 2 minutes.
  • Working in batches, puree mixture in blender until smooth; season with salt and pepper. Ladle into individual soup bowls and garnish, if desired, with one of the optional garnishes. Serve immediately.

1 cup uncooked wild rice
1/2 cup olive oil
1/2 cup lemon juice
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
1/2 bunch kale
1/2 bunch swiss chard (or spinach)
1/2 diced red bell pepper
1/2 diced yellow bell pepper
1/2 thinly sliced fennel bulb
1 bunch green onion, chopped
1/2 cup chopped parsley
toasted almonds (optional) or walnuts (optional)

Steps:

  • Bring 3 cups of water to a boil. Salt the water (if desired) and add rice. Bring back to a boil, cover, reduce heat to simmer and cook for 60 to 65 minutes. When the water is absorbed, remove from heat and let cool.
  • Meanwhile, make the dressing by whisking together olive oil, lemon juice, garlic, salt and pepper. When the rice is cool, toss with dressing.
  • Remove tough stems and ribs from greens and chiffonade. Combine with peppers, fennel and green onion. Just before serving, toss veggies with dressed rice.

GREEN TOMATO SALAD

Green tomatoes are either nearly impossible to find or in such abundance that farmers at the greenmarket almost give them away. This recipe was inspired by Rachael Ray, who gets green tomatoes from a wholesaler when they're scarce or has a favorite farmer at the Union Square Greenmarket in Manhattan set some aside during the late spring and early summer when they're abundant. You can adjust the amount of peppers to control the heat. And red tomatoes work fine if you can't find green ones.

3 large green tomatoes, cored, quartered and thinly sliced lengthwise
2 teaspoons kosher salt, plus more to taste
1 Persian cucumber or 1/3 seedless English cucumber, thinly sliced
1/2 medium white onion, thinly sliced
A fat handful each of parsley and mint, chopped
1 to 2 green chiles, such as serrano or jalapeño, seeded and thinly sliced or finely chopped
Juice of 1 lime
1/4 cup extra-virgin olive oil
Freshly ground black pepper, to taste

Steps:

  • Place tomatoes in a large mixing bowl and toss with the salt. Transfer to a fine strainer and let drain for 20 to 30 minutes.
  • In a shallow dish, combine tomatoes with the cucumber, onion, parsley, mint, chile peppers, lime juice and olive oil. Toss to combine. Add salt and pepper to taste.

2 tablespoons olive oil
1 pound zucchini (4 medium), thinly sliced
2 , poblano or Anaheim chile kimmy, , roasted, peeled and cut into thin strips or squares
1 large avocado (Hass variety preferred), peeled and cubed
8 pimiento-stuffed green olives, sliced crosswise
salt and freshly ground pepper, to taste
Romaine lettuce, shredded or chopped
1/3 cup , crumbled queso, fresco (fresh Mexican cheese)

Steps:

  • Prepare the vinaigrette, then heat the oil in a large nonstick skillet and sauté the zucchini, until crisp-tender and still bright green, about 2 minutes. Transfer to a large bowl. Refrigerate about 15 minutes, then add to the bowl the chile strips, avocado, and pimientos. Add the pepper and about 2 tablespoons vinaigrette. Toss to coat the salad. Add salt, if needed.
