A pandoro mold is traditionally used in Italy to make a sweet bread, but any heavy nine-cup mold may be used. Cooking times may vary.

Yield Makes 1 loaf

Number Of Ingredients 10

1 packet active dry yeast
2 teaspoons sugar
1 3/4 cups warm water, 100 degrees to 110 degrees
4 cups all-purpose flour, plus more for dusting
2 teaspoons salt
2 teaspoons very coarsely ground black pepper
3/4 cup (about 4 ounces) prosciutto, chopped into 1/4-inch dice
3/4 cup (about 4 ounces) Italian Fontina cheese, chopped into 1/4-inch dice
Olive oil, for bowl
1 large egg, lightly beaten

Steps:

  • In bowl of electric mixer fitted with a dough hook, mix yeast and sugar with warm water; stir until dissolved. Let stand until foamy, 10 minutes.
  • Add flour, salt, and pepper to yeast mixture. Mix on low speed until a smooth ball is formed (dough will be slightly sticky), 5 minutes. Transfer to a lightly floured surface, and pat into a 10-by-10-inch square. Scatter prosciutto and Fontina on top; press in.
  • Pull four corners of dough into center, form a ball, and transfer, seam side down, to a lightly oiled large bowl. Cover with plastic wrap. Let rise in warm, draft-free place until doubled in volume, 1 hour.
  • Heat oven to 425 degrees with rack placed in lower third. Punch down dough, pull four corners of dough into center to form a ball, and place in lightly oiled pandoro mold, seam side up. Cover with plastic; let rise until it is even with the top of the mold and slightly mounded, 30 minutes. Brush top with egg glaze. Bake until top is a dark golden brown, 35 minutes. Cover bread with a tent of aluminum foil; reduce heat to 350 degrees. Continue baking until base of bread sounds hollow when tapped and sides are golden brown, 30 to 40 minutes. Unmold bread onto cooling rack, top side down, until completely cool, 1 hour. (If sides of bread are not brown, set bread on oven rack, top side down, for another 5 minutes, until golden.) Bread will keep wrapped in plastic wrap for 1 to 2 days, although fresh bread always tastes best.

One 11-ounce tube refrigerated French bread dough
1/4 teaspoon freshly ground black pepper
8 slices prosciutto
Olive oil, for brushing

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Unroll the French bread dough and sprinkle with the pepper. Cover with the prosciutto. Roll into a log and twist, pulling and shaping it into an 8-inch ring. Pinch the ends together.
  • Place on the prepared baking sheet, brush with the oil and bake until golden, 20 minutes. Brush with more oil; bake 5 more minutes. Remove from the oven and brush with more oil before serving.

1 1/2 cups watercress, cleaned and thick stems discarded
8 slices sourdough bread
2 tablespoons olive oil
2 teaspoons balsamic vinegar
1 clove garlic, minced
salt & freshly ground black pepper

Steps:

  • Combine the olive oil, balsamic vinegar and garlic and brush on the sourdough bread.
  • Grill the sourdough bread over a moderate flame until the bread is toasted.
  • Arrange some of the proscuitto, cheese and watercress in between two slices of bread and sprinkle with salt and freshly ground black pepper.
  • Cut in half on the diagonal.

Leftover croissants may seem like a stretch, but there's an easy work around to ensure you can enjoy this savory bread pudding. Some bakeries offer 2-for-1 deals on pastries after 4:00 p.m., so stock up on them then.

Butter or cooking spray, for greasing
3 eggs
1 cup milk
1/4 teaspoon sea salt, optional
2 ounces prosciutto, cut into strips
2 ounces provolone, shredded
4 day-old croissants, cut or torn into 1/2-inch pieces

Steps:

  • Grease an 8-inch loaf pan, and then set aside.
  • In a deep bowl, beat together the eggs, milk and salt if using with a fork. Add half of the prosciutto and provolone, and all of the croissant pieces. Use a rubber spatula to stir until well mixed. Pour into the prepared pan. Press the croissants down with the spatula to help them absorb the milk mixture. Sprinkle the remaining cheese and prosciutto on top. Cover with foil, and refrigerate at least 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Bake for 20 minutes. Remove the foil, and bake until puffed and the cheese is golden, 30 minutes more. Serve hot.

3 1/2 cups bread flour
1/2 teaspoon salt
1 teaspoon fast rising yeast

1 tablespoon herbs (I use Dried Blend of Aromatic Herbs, Onions, Garlic)

Steps:

  • Place all the bread ingredients except prosciutto in the bread machine pan in the order suggested by the manufacturer.
  • Select dough cycle and start machine.
  • At end of cycle take dough out and punch dough down and flatten; roll to a rectangle. place prosciutto over in a single layer then roll up as a jelly roll.
  • Score top. Place loaves on greased cookie sheet. Cover; let rise until double, about 40 hour.
  • Preheat oven to 400 degrees F.
  • Brush loaf with milk. Sprinkle with herbs. Bake until a hollow sound when tapped, about 25 minutes; cool on wire racks.

Prosciutto Bread (aka Lard Bread) Recipe - (3.8/5) image

2 cups plus 3 tbsp bread flour
1 tbsp. malt powder (or 1 tbsp sugar)
3/4 tsp. instant yeast
1/2 tsp. coarsely ground black pepper (I used regular grind pepper and a scant 1/2 tsp)
3/4 tsp. salt
1 cup water (70F -90F)
8 oz. Prosciutto, 1/8″ thick, cut into 1/4-inch dice (no need to use Parma Prosciutto for this bread and you can substitute salami, sweet capicolo or pancetta or, if you don't like the meats, you can try cheese but you should probably use half the amount)
4 tsp. bacon fat, lard, or butter, melted

Steps:

  • Step 1: Mix flour, malt powder and yeast in a stand mixer. Combine salt with flour mixture in the mixer bowl - this is done separately from the first mixing so the salt doesn't retard the action of the yeast. Step 2: Add water to mixing bowl and mix into flour with dough hook on low to moisten. Knead for seven minutes on medium speed. Mix in prosciutto on low speed. Dough should be slightly tacky but not sticky. If dough is too sticky knead in more flour a little at a time. If the dough is too dry, spray with a bit of water and knead. Step 3: Shape dough into a ball and place on a lightly floured surface. Sprinkle dough with flour, cover with plastic wrap and let rest for 20 minutes. Step 4: Roll dough into an 18" cylinder and form into a ring. Ensure the ends stick together and place on parchment paper on a large cookie sheet. Spray dough with cooking spray and cover with plastic wrap. Let rise in a warm draft-free place until doubled for about 1 hour. I usually heat my oven to the lowest setting and then shut it off before placing dough into it to allow it to rise. Also, I like to let the last rise happen overnight but I didn't have time for that this time. Step 5: Use a pizza stone or baking sheet on a low shelf of the oven and place a baking sheet on the lowest shelf of the oven (or on the bottom of the oven if your heating element isn't on the bottom of the oven). Preheat oven to 450 degrees for at least 10 minutes. Step 6: Transfer bread to pizza stone or baking sheet in the preheated oven and brush with about 1/3 of melted butter. Add about half to a dozen ice cubes into the baking sheet on lowest shelf of the oven. Step 7: Bake 15 minutes. Remove parchment paper and turn bread front to back to allow for even baking. Brush bread with about another 1/3 of melted butter. Add another dozen ice cubes. Bake another 5 minutes. Reduce temperature to 400 degrees. Bake another 10 to 15 minutes. Step 8: Turn off oven and leave bread in the oven with door propped open for another 5 minutes. Step 9: Remove bread from oven and brush with the remaining butter. Allow to cool but if you aren't having company or bringing this bread to a function, this bread tastes delicious slightly warm and crispy. Use this bread to make Saveur's stuffing.

100 grams sourdough starter
250 grams water
8 grams kosher salt
394 grams bread flour
rice flour for bread form (banneton)
1 10-inch banneton (proofing basket)

Steps:

  • Measure out starter into a bowl. Add water, salt, and bread flour. Mix until ingredients are well blended into a very sticky dough. Cover with aluminum foil; let rest 4 hours at 70 to 75 degrees F (22 degrees C).
  • With wet hands, fold dough over on itself 3 or 4 times. Cover with foil and allow dough to ferment for 2 more hours.
  • Generously dust a bread form with rice flour (see Chef's Note for banneton substitution).
  • Scrape dough out onto a lightly floured work surface (you can use bread flour or all-purpose flour). Shape into a ball with a smooth, unbroken surface, using just enough flour on the surface to keep it from sticking. Transfer smooth-side down to banneton. Pinch together the rougher edges of the surface toward the center to smooth them and maintain the round ball shape.
  • Cover and refrigerate 12 hours to slow the fermentation process.
  • Remove loaf from the refrigerator and let it rise in a warm spot until the dough springs slowly back and retains a slight indentation when poked gently with a finger, about 3 to 5 hours.
  • Preheat oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with parchment paper.
  • Dust surface of dough with flour. Gently invert banneton over the baking sheet and transfer dough onto parchment paper. Gently brush off excess rice flour. Score the top of the dough about 1/8-inch deep with a sharp knife to create a shallow slit running across the center. Mist entire surface lightly with water.
  • Bake in the center of preheated oven until beautifully browned, 25 to 30 minutes.
  • Transfer to a rack to cool completely (do not slice loaf while it is still warm).

Helen Oless developed this bread while working as a baker at Bloomingdale's in the early 1980s. Ms. Oless put into practice years of experimentation with flours, yeasts and baking techniques to create delicious country-style brick-oven breads, then the pride of the store's bakeshop. They included rye, whole wheat, white, currant-whole wheat, walnut-whole wheat as well as more exotic combinations such as an aromatic cheddar cheese-caraway and this prosciutto-olive braid.

1 tablespoon cornmeal for baking sheet
6 ounces slab prosciutto, finely chopped (least salty variety)
1 teaspoon olive oil
1 garlic clove, mashed in salt
2 teaspoons fennel seed, bruised in mortar and pestle
1/4 teaspoon black pepper, freshly ground
1 1/4 cups hot (about 110 degrees) tap water
1 tablespoon dry yeast
1 1/2 teaspoons sugar
2 cups all-purpose flour
1/4 cup vegetable shortening (at room temperature)
1 1/2 dozen Greek olives, chopped
3 cups bread flour (approximately)

Steps:

  • Sprinkle baking sheet, approximately 9 1/2 by 11 inches, with cornmeal and set aside.
  • Saute prosciutto in 1 teaspoon olive oil over medium heat for 1 1/2 to 2 minutes. Remove from heat, stir in garlic, fennel seed and pepper. Pour contents into large mixing bowl.
  • Add hot water, yeast and sugar.
  • Stir in 1 cup all-purpose flour. Beat in 1/4 cup shortening. Add chopped olives.
  • Add 1 more cup of all-purpose flour. Dough will be sticky at this point. Scrape out onto work surface.
  • Gradually knead in 3 cups of bread flour until dough is smooth and elastic.
  • Cover with inverted bowl; rest for 10 minutes.
  • Roll dough into a 10-inch-by-15-inch rectangle. Cut three strips in rectangle, leaving about 1/2 inch at end uncut. Braid and pinch bottom end.
  • Place on prepared baking sheet. Cover with plastic wrap and put in a warm place until light and doubled in volume - about one hour. When doubled, bake in preheated 400-degree oven until hollow sound is heard when loaf is tapped on bottom.

2 slices Tuscan, ciabatta, or other crusty bread
4 to 6 thin slices Parmesan
2 thin slices prosciutto
2 tablespoons unsalted butter
2 eggs (preferably organic)
4 salted anchovy fillets, finely chopped
1 garlic clove, peeled and thinly sliced
1 handful fresh baby spinach
1 squeeze fresh lemon juice
Salt and freshly ground black pepper to taste

Steps:

  • Preheat broiler, with the tray set at the lowest position. Broil the bread on one side until toasted, 1 to 2 minutes. Remove and divide the cheese and prosciutto evenly on the untoasted sides. Return to broiler and cook, open-faced, until the prosciutto is crispy and the cheese has begun to melt, about 1 minute. Turn off broiler, leaving the sandwiches inside to stay warm. In a frying pan, melt 1 tablespoon of the butter, then fry the eggs to the desired doneness. Remove the sandwiches and top each with an egg. Add the remaining butter to the pan and sauté the anchovies and garlic over medium-high heat, stirring constantly, until the garlic begins to soften. Add the spinach and cook until it wilts, then add the lemon juice, salt, and pepper. Spoon over the sandwiches and serve.
  • Suggestions for the kids
  • Omit the anchovies, garlic, spinach, and lemon juice. Top with another slice of toast before serving. And if the prosciutto and Parmesan are too sharp, replace them with honey-baked ham and white cheddar.

Steps:

  • Place prosciutto in a large pot with 12 cups water; bring to a boil over medium heat. Reduce heat to medium-low and simmer, skimming surface occasionally, until the fat from the prosciutto is rendered into the broth, about 2 hours.
  • Strain through a fine-mesh strainer into an airtight container; let cool. Cover and keep refrigerated for up to 1 week, or freeze for up to 3 months. Before using, bring broth to a simmer and stir to reincorporate fat.
