These power-packed treats are easy to prepare, fun to eat, and full of protein and whole grains.

3/4 cup honey
2 tablespoons unsalted butter, plus more for baking dish
3 cups old-fashioned rolled oats
1 1/3 cups slivered almonds (6 ounces)
Coarse salt
1 cup raisins or other dried fruit
1/3 cup creamy almond butter or other nut butter
1/4 cup light-brown sugar

Steps:

  • Preheat oven to 325 degrees. In a small saucepan, heat 1/4 cup honey and butter over low. Cook, stirring, until butter melts, 2 minutes.
  • In a large bowl, combine oats, almonds, and pinch of salt. Drizzle honey mixture over oat mixture and stir to combine; wipe saucepan clean. Spread mixture evenly on a large rimmed baking sheet. Bake until golden brown, about 20 minutes, stirring occasionally. Let cool completely on sheet, 10 minutes. Return to large bowl and add raisins; stir to combine.
  • Lightly butter an 8-inch square baking dish. In saucepan, combine 1/2 cup honey, almond butter, and brown sugar over medium. Cook, stirring occasionally, until mixture comes to a boil and sugar dissolves, 10 minutes. Drizzle over oat mixture and stir until combined; transfer to baking dish. With a spatula, firmly press granola into dish. Refrigerate until firm, about 1 hour, then cut into 16 bars or squares. Store in an airtight container at room temperature, up to 5 days.

1/2 cup chopped raw, unsalted walnuts
1/2 cup chopped unsalted almonds
1/2 cup chopped unsalted pecans
1/2 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup raisins, optional

Steps:

  • Preheat the oven to 300 degrees F. Spray a large baking sheet with cooking spray.
  • In a medium bowl combine the oats, nuts, maple syrup, salt, cinnamon and the raisins, if using. Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes. Transfer the sheet to a cooling rack and let cool completely. Store in the refrigerator in an airtight container.

2 cups quick-cooking oats
1 cup old-fashioned oats
½ cup hulled pumpkin seeds
½ cup slivered almonds
1 cup mixed nuts
1 cup dried cranberries
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 13x9-inch pan with lightly-greased parchment paper; an inch or so of parchment paper should stick up on 2 sides to form lifting handles.
  • Mix the quick-cooking oats, old-fashioned oats, pumpkin seeds, almonds, mixed nuts, cranberries, and sweetened condensed milk together in a bowl; spread into the prepared pan, evenly pressing into the corners and out to the sides.
  • Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars.
  • Allow the the bars cool for 5 minutes in the pan before using the parchment paper to lift them from the pan. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

⅓ cup peanut butter
3 tablespoons butter, melted
¼ cup brown sugar
2 tablespoons honey
1 tablespoon corn syrup
1 teaspoon vanilla extract

1 ⅔ cups old-fashioned oats
⅓ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  • Stir peanut butter and melted butter together in a bowl until smooth. Add brown sugar, honey, corn syrup, vanilla extract, cinnamon, and salt; stir. Mix applesauce into peanut butter mixture.
  • Combine oats and flour in a bowl; toss to coat oats with flour. Stir peanuts and raisins into oat mixture. Pour peanut butter mixture over the oat mixture; stir to coat completely. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven for 10 minutes. Sprinkle chocolate chips over the top and continue baking until chocolate melts and edges begin to brown, about 5 minutes more. 2 1/2 cups rolled oats
1 cup chopped nuts (I use walnuts, almonds and a small handful of sunflower seeds)
1 cup chopped dried fruit (I use dried apricots and dried cherries)
1/2 cup honey
3 tablespoons brown sugar
2 tablespoons butter (optional)
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.
  • Grease an 8x8 glass pan.
  • Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
  • While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
  • Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
  • When oats and nuts come out of the oven, turn it down to 325.
  • Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
  • Stir in the chopped dried fruit.
  • Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
  • Bake at 325 for 20 minutes, and let cool completely before cutting.
  • Wrapped in saran wrap, these will keep for at least a couple of weeks!

1/4 cup light brown sugar

1/4 teaspoon ground cumin
1/4 teaspoon cayenne

2 cups mixed nuts, such as walnuts, pecans, hazelnuts and almonds

Steps:

  • Mix spices and reserve.
  • Heat nuts in a dry skillet and cook, stirring frequently, until begin to toast, about 4 minutes.
  • Transfer to a small bowl and set aside.
  • Add the butter, sugar, water and spices to the hot skillet and cook, stirring, until a glaze forms, about 1 minute.
  • Return the nuts to the skillet and toss to combine with the glaze.
  • Cook for about 1 to 2 minutes, or until the nuts are glazed and golden brown.
  • Remove from the heat and transfer to a baking sheet lined with aluminum foil, separating with a fork.
  • Let rest until cooled and the sugar has hardened, about 10 minutes.
  • Store in an airtight container.

12 tablespoons (1 1/2 sticks), plus 1 tablespoon cold unsalted butter
1 3/4 cups plus 3 tablespoons all-purpose flour
2/3 cup confectioners' sugar, plus more for garnish
1/4 cup cornstarch
3/4 teaspoon salt plus a pinch
4 eggs, lightly beaten
1 1/3 cups granulated sugar
1 1/2 teaspoons lemon zest
2/3 cup fresh lemon juice, strained
1/4 cup whole milk
2 tablespoons limoncello, or other lemon-flavored liqueur, optional

Steps:

  • Lightly butter a 9 by 13-inch baking dish with 2 teaspoons of the butter and line with 1 sheet of parchment or waxed paper. Butter the top of this sheet of paper with 1 teaspoon of the remaining butter and then lay a second sheet of parchment or waxed paper crosswise over the first sheet. The parchment should be cut large enough so that the sides are even with the top of the baking dish; this extra paper will function as handles to help you remove the lemon squares from the pan later. Set pan aside. In a large bowl combine 1 3/4 cups of the flour, 2/3 cup of the confectioners' sugar, the cornstarch, and 3/4 teaspoon of the salt and mix thoroughly. While the crust is baking, assemble the filling by combining the eggs, granulated sugar, flour, and lemon zest in a medium bowl and whisking until smooth. Stir in lemon juice, milk, limoncello, and remaining pinch of salt and mix well. When the crust is golden brown, remove it from the oven and reduce the oven temperature to 325 degrees F. Stir the lemon mixture again, then pour onto the warm crust. Bake until the filling is set, about 20 minutes. Transfer to a wire rack to cool completely. Grasp the waxed paper that lines the 2 longest sides of the baking dish and remove the bars from the pan by pulling up gently. The entire dessert should easily dislodge and come away from the pan.
