- Put turkey drumsticks in a large bowl with enough water to cover. Stir salt into water to dissolve.
- Brine drumsticks in refrigerator for 2 hours; drain. Rinse drumsticks with clean water and pat dry.
- Preheat oven to 350 degrees F (175 degrees C).
- Brush butter over drumsticks to coat; season with black pepper.
- Pour chicken broth into a roasting pan. Lay turkey legs into the broth. Place a lid on the roasting pan.
- Bake in the preheated oven until no longer pink at the bone and the juices run clear, 1 hour 45 minutes to 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

BRINED ROSEMARY CRUSTED TURKEY WITH PAN GRAVY

- For the brine: Combine 8 quarts cold water, the salt, sugar, coriander seeds, fennel seeds, red pepper flakes, garlic, bay leaves, carrots, celery and onions in a large container. Immerse the turkey in the brine and refrigerate for 2 to 3 days.
- To prepare the turkey for cooking: Remove the turkey from the brine the night before roasting and pat it thoroughly dry with paper towels. Combine the butter, rosemary and some salt in a small bowl. Taste it to make sure it tastes good. Work the butter under the skin of the turkey and massage it into the breasts and the legs. Massage the butter on the outside of the skin as well. Tie the legs together and over the breast so they will protect it during cooking to help keep it moist and juicy. Place the turkey on a sheet tray and refrigerate overnight UNCOVERED! Yes, that's right, uncovered. This will help the skin dry out and become really brown and crispy. Pay close attention not to have any food that will not be cooked near the turkey in the fridge.
- Thanksgiving Day: Take the turkey out of the fridge 1 hour before placing in the oven.
- Preheat the oven to 450 degrees F.
- For the gravy: Place the garlic, celery, onions, celery root, fennel, bay leaves, sage and thyme in a roasting pan and season with salt. Put the chicken stock and wine in the bottom of the roasting pan and place the turkey on top.
- Put the turkey in the oven until the skin of the turkey gets really nice and brown, about 40 minutes. Lower the heat of the oven to 350 degrees F for the remainder of the cooking time. Baste the turkey every 30 minutes or so and add more stock to the roasting pan if needed. Think about 17 minutes per pound for the turkey. Tent the turkey with aluminum foil when it gets to the proper color to prevent it from getting too dark.
- Remove the turkey from the oven when a thermometer inserted in the thickest part of the turkey reads 160 degrees F. Be sure the thermometer is not touching a bone when doing the reading.
- When the turkey has reached the proper temperature, remove it from the roasting pan and let it rest for at least 30 minutes. Cover loosely with aluminum foil.
- To finish the gravy: Remove the bay leaves, sage and thyme and from the roasting pan. Using an immersion blender, blend the veggies together until smooth. Taste and adjust the seasoning if needed (it will).
- Carve the turkey, and don't fight over the drumsticks.
- Give thanks for such a great turkey!!!

This is a great way to have a small scale turkey dinner anytime of the year. Serve with rice, noodles, or dressing. This recipe can also be increased very easily.

- Preheat the oven to 350 degrees F (175 degrees C). Rinse the turkey legs and pat dry.
- Stand the turkey legs upright (as if the turkey were standing). Press a knife downward into the deep tissue, creating 2 or 3 long pockets. Press a piece of celery into each opening. Pull back the skin on the legs, rub with butter, and season with a little salt. Put the skin back into place, rub with more butter, and season lightly with salt. Lay the legs in a roasting pan.
- Roast uncovered for 1 1/2 to 2 hours, until the legs are golden brown and the internal temperature is 180 degrees F (82 degrees C) when taken with a meat thermometer. Add more water if needed while roasting, and baste occasionally with the juices or butter.

- Skin and season turkey legs with salt and pepper (or your favorite seasoning salt).
- Shake the legs in a plastic bag, with seasoned (salt and pepper) flour to coat.
- Coat legs in beaten mixture of egg and Tabasco.
- Press legs in fresh bread crumbs to coat.
- Place legs on foiled baking sheet.
- Microwave butter and garlic for one minute.
- Pour melted butter mixture over turkey drumsticks.
- Sprinkle thyme on each drumstick. Bake 350 for 2-21/2 hours uncovered (but cover with foil if you think crust is getting too browned). No need to turn drumsticks over while baking.

"BLUE THUNDER" TURKEY DRUMSTICKS

- For the turkey: Remove the tendons from each drumstick (or ask your local butcher to do it for you): With a flexible boning knife, make a cut at the knob end of the drumstick to separate the tendons from the bone. Locate the major tendon that resembles a cooked piece of fettuccini and follow it up the drumstick with your boning knife to cut it out. Repeat for the 3 to 4 other major tendons. Using a pair of pliers, grab and pull out the minor tendon that resembles a cooked piece of spaghetti. Repeat for the 5 to 6 other minor tendons. Scrape the boning knife against the bone to clean up any leftover meat.
- For the marinade: Place the cranberries, rosemary, sage, allspice, cloves, and cinnamon stick in a large plastic container and add 1 to 2 cups boiling water just to cover. Allow to steep for 10 to 15 minutes.
- For the brine: In a large bowl, dissolve the salt with 1 to 2 cups boiling water, whisking until the salt has dissolved.
- For the injection mixture: In a 16-ounce pint glass, combine the garlic juice, onion juice, hot sauce, chile sauce, Worcestershire sauce and stir. Fill the glass with beer and stir.
- Add the marinade mixture to the brine mixture, and then pour in the remaining beer to cool it down.
- Inject each drumstick a couple of times with the injection mixture using a meat injector. Place the drumsticks in the marinade and add 1 gallon cold water to cover. Refrigerate overnight.
- Preheat the smoker to 250 to 300 degrees F.
- Remove the drumsticks from the marinade and place in the smoker. Place the applewood chips in the smoker and smoke for 30 to 40 minutes. When they are done, they will have a light golden color and an internal temperature of 110 to 120 degrees F.
- Fill a turkey fryer with the peanut oil until it reaches the maximum capacity line. Light the burner and heat the oil until it is between 340 to 360 degrees F.
- Carefully drop each turkey drumstick into the oil and fry until the internal temperature of the drumstick registers 160 to 165 degrees F, 15 to 20 minutes. Remove from the oil and place on a paper towel on a wire cooling rack. Allow a resting time of 10 minutes before serving.

- In a large resealable plastic bag, combine flour and white pepper. Add drumsticks, one at a time, and shake to coat. In a skillet, brown drumsticks on all sides in oil. - Preheat the oven to 350 °F (177 °C). Before you do anything else, switch on your oven. Let it warm up to 350 °F (177 °C) while you prepare your drumsticks.
- Peel back the skin. Grip the skin near the bone and gently peel it toward the top of the drumstick. Don't pull it off entirely; just peel it back, so you can tuck butter and seasonings underneath.
- Rub 1 tablespoon (14 g) of butter over the meat of each drumstick. This will keep the meat moist while the drumsticks bake. For larger drumsticks, you can use up to 3 tablespoons (42 g) of butter.
- Season the turkey. With the skin still pulled down, sprinkle salt and pepper all over the turkey legs. For more flavor, try rubbing a tablespoon (about 2-4 g) of chopped herbs onto the buttered turkey meat while the skins are still pulled back.
- Pull the skin over the meat and rub it with butter. Stretch the skin back over the meat and rub another 1-3 tablespoons (14-42 g) of butter over the skin of the turkey.
- Sprinkle the skin with salt and pepper. Use a liberal amount of both salt and pepper to bring out the best in the turkey's flavor.
- Lay the turkey legs in a roasting pan. Use a pan large enough to easily hold all of the legs with no overlap. If you want to catch the drippings, use a metal roasting rack over a drip pan.
- Bake the turkey drumsticks for 90 minutes. Place them in the preheated oven for 45 minutes. Turn them over and cook them for another 45 minutes. Insert a meat thermometer into the thickest part of the meat.
- Let the meat rest for 15 minutes before serving. This gives the juices time to reabsorb into the flesh, making the meat juicy. Serve whole or remove the meat from the bone.
