A very quick, tasty side dish that pairs well with an Asian-themed meal. They would also be great topped with a stir-fry.

Steps:
- Cut the bottom 2 inches off the mushrooms and discard. Separate the mushroom strands gently.
- Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant, about 1 minute. Add mushrooms and stir-fry until they begin to wilt, about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.

ENOKITAKE MUSHROOMS COOKED IN FOIL

Steps:
- Preheat oven to 475 degrees.
- Cut off bottom ends of mushrooms where linked together.
- Rub center of 2 12-inch squares of heavy-duty aluminum foil with a little of the butter.
- Place 2 bunches of mushrooms in center of each foil square. Dot with remaining butter. Sprinkle with salt and pepper and cover each batch of mushrooms with two sprigs of dill. Add 1 lemon slice to each and carefully fold foil into package to enclose mushrooms neatly. Bake 10 minutes.

EASY MUSHROOMS IN FOIL
I love mushrooms and I love this easy side dish. This is good to grill along with steak at the same time or other foods.

Steps:
- Place mushrooms, garlic and butter on a large piece of foil.
- Wrap ingredients well and place on grill for about 10-15 minutes (depending how hot the grill is and where they are placed), until mushrooms are tender.
- Add salt and pepper to taste before serving.

Steps:
- Place tomatoes in a saucepan and cook until reduced by half. Stir often to prevent sticking.
- Heat oil in another saucepan and add garlic. Cook briefly and add tomatoes, oregano, basil, parsley, salt and pepper.
- Meanwhile, cook mushrooms in foil. Remove and discard lemon slices and dill sprigs. Add mushrooms to sauce.
- Cook and drain spaghetti. Pour sauce over and toss. Serve with grated Parmesan cheese on side.

- Prepare the mushrooms according to the type that you’re using. For shiitake, simply remove the stems. For enoki or shimeji, cut off their bottoms and break up any large clusters. For eringi, cut them into roughly bite-size pieces.
- In a medium bowl, stir together the soy sauce, sake or wine, oil, garlic, pepper, and parsley. Toss the prepared mushrooms with the soy sauce mixture.
- Set a wide piece of kitchen foil (about 16 inches [40-cm] long) in a shallow bowl or dish. Place a slightly smaller piece of parchment paper on top of it. Dump the mushrooms and sauce in the center of the parchment and gather up the sides of the parchment and foil to cover the mushrooms. Crimp or fold the edges over several times to form a tight seal, completely enclosing the parchment paper.
