Ensalada de pollo (Mexican chicken salad) is a super easy and delicious meal made from shredded chicken and veggies. It can be served with tostadas, crackers or bread.

1/3 cup sour cream
1/2 cup mayonnaise
1 tsp garlic salt
1/2 tsp ground black pepper
1/4 cup diced white onion
1/4 cup chopped celery
1/4 cup chopped pickled jalapenos (plus 2 tbs of the juice)
15 oz can of mixed veggies (drained)
3 cups shredded chicken

Steps:

  • In a bowl combine the sour cream, mayonnaise, garlic salt, and pepper and mix well.
  • Add the onion, celery, jalapenos and the juice from the jalapenos to the bowl. Mix well.
  • Next add the veggies and chicken and mix again until everything is well coated.
  • Transfer to the fridge to chill for about an hour before serving.

7 oz peas (, fresh or frozen)
1 red onion (, finely chopped)
2 firm green apples (, peeled and diced)
1 chicken (, cooked, boned, and very finely chopped)

¾ cup mayonnaise
2 tablespoons strong mustard
1 clove garlic
2 teaspoons brown sugar
2 teaspoons Worcestershire sauce

Steps:

  • In a steamer, cook the potatoes, peas and carrots until fork-tender.
  • Let cool completely. Set aside.
  • In a large salad bowl, combine the potatoes, carrots, half of the peas, onion, apple and chicken, salt and mix.

2 medium yellow potatoes (cut into 1/2" cubes)
3/4 cup peeled and diced carrots
3/4 cup frozen peas
1/2 cup frozen corn
3/4 cup mayonnaise
3/4 cup full-fat sour cream
2 Tablespoons freshly squeezed lime juice (the juice of about 1 lime)
1 Tablespoon jalapeno brine (from pickled jalapenos, optional)
1 1/2 teaspoons yellow mustard*
4 cups cooked shredded chicken (about 1 pound)
1/2 teaspoon kosher salt (plus more to taste)

Steps:

  • Start by cooking the vegetables. Place the potato cubes in a pot of salted boiling water, and boil until the potatoes are just fork tender (about 8 minutes).
  • In a separate medium sized pot, simmer the carrots, peas, and corn together until they are just cooked through (about 3 minutes).
  • In a large bowl, mix together the mayonnaise, sour cream, yellow mustard, lime juice, and jalapeno brine. Add in the chicken, salt, potatoes, and vegetables, and toss to coat. Taste and adjust salt to your preference.
  • Chill in the refrigerator for 1 - 2 hours before serving.

1/2-2/3 cup real mayonnaise
1 lime, juice of
1 garlic clove, minced
1 cup chopped celery
1 cup chopped onion
1 lb cooked chicken meat, diced
3 hard-boiled eggs, chopped
salt
pepper

Steps:

  • Cook the carrots and peas separately in the microwave for about 2-3 minutes on high.
  • Carrots should be soft, peas dark green.
  • Chill thoroughly in the refrigerator.
  • Mix the mayonnaise, lime juice, and garlic in a bowl; adjust the mayonnaise to get the right consistency.
  • In a large bowl, toss the carrots, peas, celery, onion, and cooked chicken together; add the mayonnaise mixture, a little at a time, until you get the proper consistency.
  • Salt and pepper to taste.
  • Gently fold in the chopped eggs.
  • Serve well chilled on a bed of lettuce.
