The Nicaraguan version of Coleslaw,Ensalada de Repolla, is bright and flavorful with a lime and cilantro vinaigrette.Yield: 8 c

Ingredients

4 c cabbage, (shredded (about ½ of a medium head))
1 carrot, (julienned)
½ red onion, (diced)
1 large tomato, (diced)
¼ c white vinegar
1 lime, (juiced (about 2 Tbsp juice))
½ tsp salt
¼ c fresh cilantro, (chopped (plus extra for garnish))

Steps:

In a large bowl, combine shredded cabbage, julienned carrot, red onion pieces, and tomatoes.
In a small bowl, whisk together white vinegar, lime juice, salt, and chopped cilantro. Pour the dressing over the mixed vegetables and toss lightly.
Let the mixture rest for at least 2 hours in the refrigerator before serving.

1/2 taza de mayonesa KRAFT Real Mayo Mayonnaise
1/4 taza de jugo de limón verde (lime)
1 cucharadita de salsa de chile HEINZ Chili Sauce picante
1/4 cucharadita de sal
1 taza de granos de elote (maíz) enteros
2 tazas de repollo (col) morado y 2 tazas del verde, desmenuzados
2 chiles serranos, sin semilla, bien picaditos
8 rebanadas de tocino (tocineta) OSCAR MAYER Bacon, cocidas y desmenuzadas
1/2 taza de rebanadas de cebollitas verdes

Steps:

Mezcla la mayonesa, el jugo de limón verde (lime), la salsa picante y la sal; ponlos aparte.
Cocina el maíz en una sartén grande a fuego medio-alto hasta que esté dorado y tostado.
Mezcla la col, el maíz, los chiles, el tocino y la cebollita verde en una ensaladera grande. Agrega la mezcla con mayonesa; revuelve todo ligeramente. Enfría la ensalada en la nevera hasta el momento de usar.
