1 tablespoon extra-virgin olive oil
¾ pound chorizo sausage, chopped
2 pounds ground chicken
¼ cup chili powder
1 ½ tablespoons ground cumin
1 onion, chopped
3 cloves garlic, finely chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, drained
1 (15 ounce) can white beans, drained
1 (12 fluid ounce) can or bottle beer
1 (28 ounce) can fire-roasted diced tomatoes, with juice
3 cups chicken stock
1 (6 ounce) can tomato paste
salt to taste

Steps:

  • Heat olive oil in a Dutch oven or a large pot over medium-high heat; cook and stir chorizo in hot oil until heated through, about 2 minutes. Remove chorizo using a slotted spoon to a bowl. Add chicken; cook and stir until chicken is browned and crumbly, 5 to 6 minutes. Season with chili powder and cumin.
  • Stir chorizo, onion, garlic, red bell pepper, black beans, and white beans into chicken; cook and stir until onion begin to soften, 5 to 6 minutes. Pour beer into chili; bring to a simmer. Add tomatoes, chicken stock, and tomato paste; simmer until heated through, about 5 minutes. Season with salt. Reduce heat to low and simmer until flavors blend, about 30 minutes.

200g cooking chorizo , cut into chunks
25g butter
350g good chicken livers , cleaned and trimmed
110g bag baby salad leaves
bunch parsley , roughly chopped
large handful walnut halves
1 tbsp walnut oil
1 tbsp white wine vinegar

Steps:

  • Cook the chorizo in a large frying pan until crisp. Remove with a slotted spoon and set aside, reserving 1 tbsp of the chorizo oil. For the dressing, whisk together the walnut oil, reserved chorizo oil and white wine vinegar, then season.
  • Melt the butter in the same pan until sizzling, then cook the chicken livers for about 2 mins each side. Combine everything together in a large bowl, then drizzle over the dressing, toss well and serve straight away

Serves:2 as a light meal, 4 as an appetizer. Made in minutes, this smoky salad is just what's needed for a lazy summer lunch, perfect with a pile of crusty bread and a glass or two of chilled dry sherry.

6 chicken livers, cleaned
all-purpose flour, seasoned with salt and freshly ground black pepper
1 tablespoon vegetable oil, for cooking
1 chorizo sausage, cut into 1/4in thick slices
2 tablespoons dry sherry
4 tablespoons extra virgin olive oil, to taste
1 tablespoon red wine vinegar, to taste
mixed salad leaves (such as baby gem lettuce and watercress)
8 cherry tomatoes, halved
crusty bread, to serve

Steps:

  • Coat the chicken livers in the seasoned flour, shaking off any excess. Set aside.
  • Heat the vegetable oil in a heavy-based frying pan over a medium-high heat and fry the chorizo slices for 3-4 minutes or until crisp.
  • Use a slotted spoon to remove the chorizo slices onto a warm plate, leaving the chorizo flavoured oil in the pan.
  • Add the chicken livers to the pan and fry for 2-3 minutes or until golden-brown and just cooked through.
  • Remove the chicken livers from the pan and add to the chorizo.
  • Pour off any excess oil from the pan, leaving behind the juices. Return the pan to the heat, pour in the sherry and stir to deglaze, scraping up any flavorsome brown bits from the bottom of the pan.
  • In a small bowl, whisk together the olive oil and vinegar with a pinch of salt and freshly ground black pepper. Taste and add more olive oil or vinegar if necessary.
  • Pour enough dressing over the mixed leaves and tomatoes to coat lightly and toss gently to combine.
  • Divide the salad between serving plates then scatter over the chorizo and chicken livers, pour over the pan juices and serve with crusty bread.

25g butter
1 shallot , finely chopped
2 garlic cloves , 1 crushed, 1 squashed
200g chorizo , skin removed, sliced
4 thick slices of bread
1 tbsp olive oil , plus extra for drizzling (optional)
300g chicken liver , trimmed of any sinew or tubes
good splash of dry sherry (Fino works well)
4 tbsp double cream
small handful of parsley , chopped

Steps:

  • Melt the butter in a frying pan. When sizzling, add the shallot and the crushed garlic, and stir around the pan for 1-2 mins to soften. Add the chorizo and cook for 4 mins over a medium heat to release some of the oils.
  • Meanwhile, heat a griddle pan until hot. Drizzle the slices of bread with the olive oil and rub the squashed garlic all over the surface. Put on the griddle pan and cook for 1 min each side until nicely charred with lines.
  • Turn up the heat under the chorizo pan, add the chicken livers and sear for 1 min. Add the sherry, bubble for 1 min more, add the cream and parsley, then season well. Put 2 slices of bread on each plate, top with the chicken liver mixture and a drizzle of oil, if you like.

6 ounces baby spinach leaves or 6 ounces mixed salad greens
5 tablespoons olive oil
1 tablespoon butter
8 ounces chicken livers, trimmed and thinly sliced
3 tablespoons vin santo
3 ounces parmesan cheese, shaved into curls
salt & freshly ground black pepper

Steps:

  • Wash and dry the spinach or salad greens. Tear leaves into a large bowl, season with salt and pepper to taste and toss gently to mix.
  • Heat 2 tbsp of olive oil with the butter in a large heavy based frying pan. When foaming, add the chicken livers and toss over a medium to high heat for 5 minutes or until the livers are browned but still pink in the centre.
  • Remove the lovers from the pan with a slotted spoon, drain them on kitchen paper, then place on top of the spinach.
  • Return the pan to a medium heat, add the remaining oil and the vin santo and stir until sizzling.
  • Pour the hot dressing over the spinach and livers and toss to coat. Put the salad in a serving bowl and sprinkle over the parmesan shavings.
  • Serve at once.

3 mild or spicy chorizo sausages, about 4 ounces., cut crosswise into coin-shaped slices, or a 6 ounce piece, cut into chunks
12-16 baby zucchini, halved lengthwise, about 10 oz.
1 lb. boneless, skinless, cooked or smoked chicken, cut or pulled into long strips
4 cups loosely packed mixed red and green lettuce leaves
1/2 bunch arugula or watercress
16-20 black olives, about 3 ounces
sprigs of cilantro or flat-leaf parsley
Vinaigrette
2 tablespoons balsamic vinegar
1/3 cup extra virgin olive oil
2 garlic cloves, crushed
kosher salt or sea salt and freshly ground black pepper

Steps:

  • Heat a nonstick skillet or stove-top grill pan, add the chorizo slices or chunks, and sauté gently on all sides until the juices run and the edges are slightly crisp. Set aside.
  • Mix the vinaigrette ingredients together in a small bowl or pitcher. Use some of the mixture to brush the zucchini halves, then add them to the still-hot pan and cook for 5 minutes on each side or until hot and golden.
  • Put the chicken into a large salad bowl and add the lettuce leaves and olives. Drizzle over the remaining vinaigrette, then add the chorizo and its juices, and the cilantro or parsley. Toss well, then serve immediately with garlic bread, toasted ciabatta, or warmed focaccia.

12 whole chicken livers
1 1/2 tablespoons unsalted butter
5 tablespoons corn oil
3/4 teaspoon freshly ground black pepper
3/4 teaspoons salt
4 cloves garlic, peeled, crushed and chopped (about 1 tablespoon)
3 tablespoons coarsely chopped parsley, preferably the flat-leaf variety
6 cups diced iceberg lettuce
3 tablespoons red-wine vinegar

Steps:

  • Wash the chicken livers under cool water. Separate into halves, discarding the connecting sinew.
  • Heat the butter and 2 tablespoons of the oil until very hot in one very large saucepan (about 12 inches) or two smaller saucepans. Add the chicken livers in one layer, sprinkle them with half the salt and pepper, and saute over high heat for 1 minute, partly covering the pan with a lid to prevent splattering. Turn, and cook the livers for 1 minute more. (The livers should be pink inside.)
  • Add the garlic and parsley, and mix well. With a slotted spoon, transfer the livers to a bowl, cover and set aside.
  • Place the diced lettuce in a large serving bowl. Add the chicken liver pan drippings, and toss to mix well. Add the remaining salt and pepper and the vinegar, and mix well.
  • Divide the salad among six individual plates, serving 4 liver halves per person. Serve immediately, while still lukewarm.
