Simple and original dessert from my home country, Guatemala. It can make a nice coffee break a little more special and it's really easy to make.

Number Of Ingredients 2

1 ¼ pounds white sugar
8 egg whites

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
  • Combine white sugar and egg whites in a saucepan over low heat; cook, stirring constantly, until well blended and heated through, about 10 minutes.
  • Pour white sugar and egg white mixture into a large bowl. Beat with an electric mixer until stiff peaks form, about 5 minutes.
  • Scoop beaten egg whites into a pastry bag fitted with a star tip. Pipe into small swirls onto a baking sheet, spacing them 1 inch apart.
  • Bake in the preheated oven until firm, about 15 minutes. Turn off oven and keep baking sheet inside as oven cools, about 15 minutes.

6 claras de huevo
-1 cucharadita de esencia vainilla
-2 tazas de azúcar
-Jugo de limón
-Colorante (opcional, este lo usa solo si quieres espumillas de colores)
-Pisca de sal

Steps:

  • Ingredientes-Procedimiento1.-Como primer paso bata las seis claras de huevo hasta obtener una consistencia suave y espumosa.2.- Paso siguiente, agregará de poco en poco azúcar y jugo de limón y seguirá batiendo.3. Luego, a la misma consistencia añadirá una pisca de sal y una cucharadita de esencia vainilla y continuará batiendo por unos minutos más hasta que la mezcla se torne espesa (a punto de nieve).4.- Posterior a eso, con ayuda de una manga pastelera, exprima la mezcla en bolitas sobre una bandeja, que seguidamente meterá a su horno, el cual deberá poner a calentar a uno 120 grados centígrados aproximadamente.5.- Dejar dentro por 30 o 45 minutos, hasta que se observen doratitas. Apaga el horno y sacar hasta después de una hora.6.- Finalmente deje enfriar y las espumillas estarán listas para ser degustadas.

  • Peel the guavas -they should be very soft and ripe- with a vegetable peeler. Remove the seeds and just keep the meaty flesh parts. Put the guava pieces in a large bowl and mix it with sugar until everything is pureed. You can use a fork or a vegetable masher for this part.
  • The alternative method is to cut the guavas in halves, place them in the blender (no water), and blend until you have a puree. Then strain the puree and use an electric blender to mix in the sugar.
  • Add the egg whites to the guava and sugar puree, mix using the electric mixer until you have stiff creamy texture. As mentioned the texture will be coarser if you made the guava puree by hand and smoother if it was done in the blender.
  • Serve immediately in ice cream bowls or ice cream cones, drizzle with the arrope or berry sauce and sprinkles or coconut flakes.
