Everyday Meatloaf image

Meatloaf is a classic homestyle dinner and you can enjoy our version on your low FODMAP diet, even during the Elimination phase.

2/3 cup (165 ml) ketchup
1/3 cup (71 g) firmly packed light brown sugar
1 tablespoon plus 2 teaspoons balsamic vinegar
1 tablespoon Dijon mustard
2 1/2 pieces (93 g) low FODMAP gluten-free white bread
1/2 cup (120 ml) lactose free whole milk, 2%, 1% or fat free
1 1/2 pounds (680 g) ground beef, (preferably 80%)
1/2 pound (225 g) ground pork
2 large eggs, (at room temperature, whisked well)
1/2 medium carrot, (scrubbed and grated)
1/2 medium red bell pepper, (finely chopped)
1/4 cup (8 g) finely chopped fresh flat leaf parsley
1/4 cup (16 g) finely chopped scallions, (green parts only)
1 tablespoon Worcestershire sauce
2 teaspoons Low FODMAP Garlic-Infused Oil,
1 teaspoon kosher salt
1/2 teaspoon dried thyme
Freshly ground black pepper
4 slices meaty bacon, (choose gluten-free if on a gluten-free diet)

Steps:

  • For the Sauce: Whisk all of the sauce ingredients together; set aside.
  • For the Meatloaf: Position rack in center of oven. Preheat oven to 350°F/180°C. Have a roasting pan ready.
  • Grind the bread slices in a food processor fitted with a metal blade until finely ground. Measure out 3/4 cup (84 g) of soft breadcrumbs and combine the measured breadcrumbs with milk in a large mixing bowl; allow the breadcrumbs to absorb the milk for 5 minutes. (Any extra breadcrumbs can be frozen in a zip top bag and saved for another use). Add eggs, carrot, red bell pepper, parsley, scallions, Worcestershire sauce, olive oil, salt, thyme and a generous amount of black pepper to the same bowl and use your hands to mix well. Scrape meatloaf mixture into center of roasting pan and use your hands to form an oval loaf shape about 9-inches long, 6-inches wide and 2-inches thick (23 cm by 15 cm by 5 cm). Spread about half of the sauce on top of the loaf, coating the top and sides. Reserve any remaining sauce to serve alongside cooked meatloaf. Use your fingers to lay bacon over the meatloaf on a slight diagonal, tucking the ends underneath the loaf. The sauce will help the pieces stick and stay in place.
  • Cook for about 55 minutes to 1 hour or until meat is cooked through and the bacon is crisp. An instant read thermometer inserted in the center of the loaf should read 160°F/72°C. You can crisp up the bacon further, if you like, by placing meatloaf under the broiler for 30 seconds to 1 minute, taking care not to burn. Meatloaf is ready to cut into slices and serve with the reserved sauce alongside. We like it hot, room temperature or the next day in a sandwich. Any leftovers can be wrapped well with plastic wrap and refrigerated for up to 3 days.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 medium yellow onion, peeled and cut into eighths
2 cloves garlic
2 stalks celery, cut into 2-inch pieces
2 carrots, peeled and cut into 2-inch pieces
1/2 cup flat-leaf parsley leaves
1 large egg
1 cup ketchup
3 teaspoons dry mustard
1 tablespoon coarse salt
2 teaspoons freshly ground black pepper
2 tablespoons brown sugar

Steps:

  • Heat oven to 375 degrees. Place bread in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. Transfer to a medium bowl, and add ground beef.
  • Place onion, garlic, celery, carrots, and parsley in the bowl of a food processor fitted with the steel blade; pulse until fine. Add to meat mixture, using hands to mix well. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
  • Combine remaining 1/2 cup ketchup, remaining teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.
  • Brush mixture over meatloaf; place in the oven with a baking pan set on the rack below to catch drippings. Cook until a meat thermometer inserted in the center reads 160 degrees, about 90 minutes. If top gets too dark, cover with foil, and continue baking.

12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

2/3 cup dry breadcrumbs
1 cup milk
1 1/2 lbs ground chuck
2 eggs, beaten
1/3 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon ground pepper
1/4 cup brown sugar
1/4 cup catsup
1/4 teaspoon ground nutmeg
1 teaspoon dry mustard

Steps:

  • Soak bread crumbs in milk.
  • Add beaten eggs, seasonings, onion (process in food processor to puree for picky eaters).
  • Mix together well.
  • With hands, gently add ground chuck and mix together lightly.
  • Place in loaf pan sprayed with PAM.
  • Bake in 350º oven 45-50 minutes.
  • Prepare topping in small bowl.
  • Pour over meat loaf during last 15 minutes of baking time.
  • *The more you handle the ground beef during the making of meat loaf the tougher it becomes.
  • **Edited - For different texture and taste sautee onion in a bit (1 Tablespoon +/-) of butter. Add 1/2 cup grated carrots (sautee with the onions) for a little extra punch of color and flavor.

5 ounces half-and-half
5 ounces ketchup
1 1/2 pounds extra-lean ground beef
1 1/2 pounds bulk sweet Italian sausage
2 cups panko breadcrumbs
6 sprigs fresh cilantro, chopped
Nonstick cooking spray, for the pan

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.

Steps:

  • Combine all chili sauce ingredients and set aside.

½ cup mayonnaise
¼ cup Italian-style bread crumbs
2 tablespoons Dijon mustard

2 tablespoons ketchup
1 tablespoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix ground beef, mayonnaise, bread crumbs, mustard, onion, salt, and pepper together in a large bowl until well combined. Transfer mixture to a 9x5-inch loaf pan with high sides. Form into a loaf by picking it up and forcing it down into the pan, making sure to knock out any air and square off all sides.

  • Remove form the oven and let rest for 5 minutes. Remove meat loaf to a serving platter and slice into 8 slices.
