EASILY THE BEST GARLIC HERB ROASTED POTATOES RECIPE BY TASTY
Here's what you need: russet potatoes, baking soda, salt, olive oil, garlic, fresh rosemary, black pepper, salt, pepper, fresh parsley leaf

Steps:
- Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
- Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
- Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
- Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
- Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
- Preheat oven to 425°F (220°C).
- Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
- Transfer to oven and roast, without moving, for 30-35 minutes.
- Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
- Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

WAY TOO EASY CAJUN POTATOES
These were a staple in the Irish Channel in the good ole days. I still make mine in a cast iron pan but you can use any oven proof pan. For those who must have heat, add extra cayenne. To shorten baking time we sometimes nuke the potato chunks a little before adding to the oil.

Steps:
- Pre heat oven to about 375-400.
- With a fork score all over the potatoes (peeled or not), this will make them more crisp.
- Chop the potatoes into 1 1/2-2 inch chunks.
- Put the oil in the pan (warming the pan first is good, but not vital), add potatoes, sprinkle all seasonings over (go easy with the salt; more can be added after cooking) and toss and stir potatoes with two forks until all chunks are coated.
- Bake for 15 mins, stir well (again with the forks), bake a further 10-15 minutes.
- Note: If you've nuked them, the potatoes will need a little less time. Watch them towards the last few minutes.

You can eat these potatoes with breakfast, lunch, dinner, or even on their on. Flavorful and simple, I'm sure you will love them, everyone i made them for does. This recipe came about when i was bored, and i just started adding things together, and people started to eat it, and i thought that was great. Enjoy!

Steps:
- Cut potatoes into medium sized chunks, make sure that they are clean before they enter skillet. Rinse well!
- heat skillet on medium low, and add olive oil or butter.
- once potatoes are clean and skillet is hot, add potatoes into the skillet.
- If you are using bacon or any other meat, cook your potatoes for about 5 mins, remove potatoes, and add your bacon, cook for about 2-3 mins, then add bell pepper, and onion. cook for about 3 mins, and add potatoes back.
- add Adobo, sazon, garlic powder, and pepper. Stir so that it can be distributed evenly.
- Cook for about 5 mins, then add chili powder.
- Add water, and cover, let simmer for about 10 mins or until potatoes are tender. If you like spicy food, then add chili flakes or whatever spicy ingredients you like before of course you cover up and start to simmer potatoes.
- If you like somewhat hard, crispy potates, you can exclude the water and just cook for about 10 mins or until done.
- Then serve with favorite beverage(s) and enjoy!
