SPOOKY HALLOWEEN EYEBALLS
These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

Steps:
- Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
- Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
- Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

EYEBALL MARTINI
We fashioned spooky eyeballs out of radishes, olives and grapes and added them to a traditional martini for a creepy cocktail for your next grown-up Halloween party.

Steps:
- To make each radish eyeball, peel radish, leaving streaks of red skin for "blood vessel" effect. Cut off one tip of radish about 1/4-inch deep. Using small melon baller or paring knife, scoop out small hole from sliced tip side; place olive half in center. Place in martini glass.
- To make each grape eyeball, carefully peel back skin of grape from one edge. Using small melon baller or paring knife, cut small hole in center of exposed flesh. Place small cranberry or blueberry in hole. Skewer grapes onto toothpick; place in martini glass.
- To make each olive eyeball, place baby carrot in pitted hole of olive. Cut off carrot flush with end of olive. Skewer olives onto toothpick; place in martini glass.
- To make cocktail, place several ice cubes in cocktail shaker or mixing glass. Add gin and vermouth. Cover; shake (or stir) 30 seconds. Strain into martini glass and serve.

EYEBALL SOUP
My family has fun serving this creamy soup to unsuspecting guests and watching their reaction when they stir up an onion "eyeball". You can make the soup a day ahead and reheat it in the slow cooker.

- Pour boiling water over the gelatin and stir to dissolve completely. Pour the mixture into ice cube trays with rounded bottoms (you should be able to fill 2 trays). Refrigerate until partially set, about 20 minutes. Push the blueberry eyeballs into the partially set gelatin and refrigerate until thoroughly set. Dip the ice cube tray in warm water for 15 to 30 seconds and run a knife around the edges of each ice cube. Turn the "eyes" out on a serving plate and refrigerate until serving time.
BLOODY EYEBALL PUNCH

- Stuff the cherries into the holes of the lychees, using a toothpick to keep them in place if necessary. Place each stuffed lychee on a sheet pan or in a freezer-safe casserole dish. Freeze for at least 8 hours and up to overnight.
- Mix the prosecco, vodka and cherry juice together in a large punch bowl. Taste and add the reserved lychee juice as needed for sweetness. Remove the toothpicks from the frozen lychees. Add the "eyeballs" to the punch and serve with a gummy worm draped over the rim of each glass, if desired.

- Using a melon baller or small ice cream scoop, place 2 small scoops (about 2 Tbsp. each) of whipped topping into each of 12 dessert dishes for "eyeballs." Place a blueberry in each scoop for the "pupil." Freeze 30 minutes or until firm.
- Meanwhile, stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 2-1/2 cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice. Spoon gelatin into prepared dishes around each eyeball, leaving the top of the eyeballs exposed.
- Refrigerate 1-1/2 hours or until firm.

EERIE EYEBALL POPS

- Break the Madeira cake and cookies into the bowl of a food processor, pour in the melted milk chocolate and whizz to combine.
- Tip the mixture into a bowl, then use your hands to roll into about 10 walnut-sized balls. Chill for 2 hrs until really firm.
- Push a skewer into each ball, then carefully spoon the white chocolate over the cake balls to completely cover. Stand the cake pops in the pumpkin, then press a Smartie onto the surface while wet. Chill again until the chocolate has set. Before serving, using the icing pens, add a pupil to each Smartie and wiggly red veins to the eyeballs.

SPOOKY EYEBALLS
I found this in a supermarket leaflet. I haven't tried them myself but thought they looked fun for all those Halloween parties!

- Cut the eggs in half and scoop out the yolks.
- In a bowl mash the yolks with the cream cheese.
- Fill the eggs with the cream cheese mixture and push an olive into the middle of each one.
- Dip a wooden toothpick into the foodcolouring and draw bloodshot veins onto the cheese mixture, running from the olive to the outside.

- In a small bowl, combine 1 cup confectioners' sugar, peanut butter and butter. Shape into 1-in. balls; place on a waxed paper-lined pan. EYEBALL BROWNIE POPS

- Heat oven to 350°F. Grease bottom only of 9-inch square pan with shortening or cooking spray. Make and bake brownies as directed on box for 9-inch pan, using water, oil and eggs. Cool completely.
- Line cookie sheet with waxed paper. Using cookie scoop, scoop brownies into 36 (1 1/2-inch) balls. Roll between hands to smooth edges; place on cookie sheet. Refrigerate to keep chilled.
- Line a second cookie sheet with waxed paper. In medium microwavable bowl, microwave candy coating uncovered on Medium (50%) 1 minute, then in 15-second intervals until melted; stir until smooth. Remove several brownie balls at a time from refrigerator. Dip tip of lollipop stick about 1/2 inch into melted coating and insert stick straight into brownie ball no more than halfway. Dip brownie pop into melted coating to cover, letting excess drip off; place on cookie sheet. Immediately adhere green gummy candies and press brown candies in center for pupils. Let stand until set. Use food decorating pen to draw veins on eyeball pops.
