1 (1 1/4 kg) roasting chickens (12 or 1.2kgs)
600 g potatoes
100 g margarine, for the mash
1 cup skim milk, for the mash
2 cups frozen peas

Steps:

  • Place chicken in oven bag and roast until cooked approximately 1 ½ hours.
  • Peel potatoes and cut into quarters, add a dash of salt and cook until tender, approximately 15-20 minutes Mash together with milk and margarine.
  • Place peas in pot and cover with water, add a dash of salt and cook for approximately 15 minutes.
  • Cut chicken into 4-6 pieces and serve with mash and peas.

Number Of Ingredients 11

4 chicken thighs
1 egg
1 tablespoon skim milk
1 1/2 cups rice bubbles, made into crumbs (measure crushed)
1 tablespoon garlic salt
1 tablespoon parsley flakes (dried or fresh)
1 tablespoon margarine, for cooking (I use nettelex)
300 g potatoes
1/2 cup milk, for adding to mash
2 tablespoons margarine, for adding to mash
200 g fresh green beans

Steps:

  • Peel potatoes and put in a pot and boil till soft. When soft mash together with margarine and milk.
  • Steam Beans until tender.
  • Beat egg and milk in one bowl and set aside, in another bowl combine rice crumbs, garlic salt and parsley.
  • Dip each chicken thigh in egg mixture first and then rice crumb mixture next. Press down firmly as you go.
  • Heat frying pan with margarine and fry chicken until cooked and brown.
  • Serve with mash and beans.
