Falafel lunchbox image

Make this falafel salad fun with a bento-style lunchbox. It's great for toddlers and young children who prefer lunches with lots of individual elements. Use shop-bought falafel or make our Edamame falafel

Number Of Ingredients 11

250g pouch cooked grains or lentils (we used red & white quinoa)
handful of baby spinach
¼ cucumber , chopped
handful of cherry tomatoes , halved
2 carrots , grated
1 pomegranate , seeds only
10 olives (optional)
12 falafel
4 tbsp hummus
drizzle of olive oil (optional)
½ lemon , quartered

Steps:

  • Divide the grains between the lunchboxes. Top each one with the vegetables, falafel, a spoonful of hummus and a drizzle of oil, if using, or divide the ingredients between the compartments of a bento-style lunchbox. Put a lemon in each box for squeezing over just before eating.
