FLUFFY FIRE HOUSE CINNAMON ROLLS
I came up with the recipe cooking at the fire station. It is my take of a recipe that was passed down from older firemen at my station. I love this recipe because the cinnamon rolls are fluffy and rise to be huge!

Steps:
- Sift 2 cups flour, sugar, and salt for dough together into the bowl of a stand mixer fitted with the paddle attachment. Stir in yeast. Add butter and blend at low speed until combined. Add hot water (the hottest it comes from your tap) all at once with the mixer running. Mix in egg until fully incorporated. Add remaining 2 cups flour and mix briefly until dough is soft and flour is incorporated.
- Change to the dough hook and knead dough for 10 minutes. If dough does not knead, you may need to add a little bit more flour carefully while the mixer is running. Once the dough climbs up the dough hook you have the right consistency. Make dough into a ball.
- Oil a bowl. Place the dough into the bowl and turn to coat with oil. Cover with a cloth and let sit until doubled in size, 1 to 2 hours.
- Cover your countertop with flour and roll dough out to a large rectangle, roughly 18x24 inches. Sprinkle brown sugar, pecans, and cinnamon on the dough, then pour melted butter over top. Roll the dough up from the longer side and cut into twelve 2-inch pieces. Place the pieces in a baking pan or on a baking stone. Cover with a cloth and let rise until doubled in size, about 45 minutes. Keep a close eye on the rolls; if they start to fall or look deflated at all, bake them immediately.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake the rolls in the preheated oven until golden brown, 6 to 10 minutes.
- Meanwhile, combine confectioners' sugar, butter, cream cheese, vanilla, and salt in a large bowl; beat with an electric mixer until no lumps of cream cheese remain. Whip for 2 to 3 more minutes on medium speed.
- Spread icing on warm rolls and serve.

FARM WIFE CINNAMON ROLLS
When a lady brought these rolls to the Farm Women's club meeting, all the women wanted the recipe. These ladies knew homemade bread and rolls. That means this is a Good recipe!

Steps:
- Melt Criso in small pan on stove. Set aside.
- Put yeast, salt, sugar and warm water into bowl and stir until yeast is dissolved.
- Warm milk slightly in microwave( just enough to take the chill off) add milk and stir. Stir in melted Crisco (if the melted Crisco appears to be too hot, you may add a small cube of ice to cool it slightly).
- Stir in three cups flour and mix well. Add more flour, one cup at a time till dough is no longer sticky.
- Knead on floured board, about 3 minute Divide dough in half. Roll out half on floured board, till about 1/2 inch thick and in oblong shape. Spoon melted butter on top. Sprinkle sugar cinnamon mixture on top. Roll up, jelly roll style. Slice into 2 inch thick rolls, place on greased cookie sheet. Cover, and let rise until double. Bake in 350°F preheated oven about 20 minutes or until slightly brown on top.
- Take roll from oven. Mix powdered sugar with milk and vanilla, whisk until powder sugar is dissolved. Spoon on top hot rolls. Enjoy.

EASIEST CINNAMON ROLLS EVER
An invention of my own, this shortcut recipe is for when you need cinnamon rolls fast! NOTE: These rolls work well with splenda for baking for an almost (some sugar in pizza crust dough) sugar free option (although not as sticky)!

Steps:
- Preheat oven to 375.
- Unroll pizza crust.
- Spread evenly with softened butter leaving 1/2 inch unbuttered at one end of long side.
- Sprinkle evenly with sugar and cinnamon.
- Sprinkle with nuts or raisins (optional).
- Roll up dough long ways and pinch unbuttered edge to seal.
- Slice into 9 sections. place in greased 9X9 inch pan.
- Bake for 15 minutes or until lightly browned and dough is no longer gooey.

GRANDMOM'S CINNAMON ROLLS

- Prepare dough: Heat milk in a saucepan over medium heat until just about to boil, 3 to 4 minutes. Add sugar, shortening, and salt; remove from heat and let cool to lukewarm, about 10 minutes.
- While the milk mixture is cooling, sprinkle yeast over water and let sit for 10 minutes.
- Pour lukewarm milk mixture into a bowl; add 1 cup flour and beat well. Beat in yeast mixture and egg. Gradually beat in remaining 2 1/2 cups flour. Cover and let rise until doubled in size, about 1 hour. Test by pressing a finger into the dough; a fingerprint should stay.
- Preheat the oven to 375 degrees F (190 degrees C). Grease two 9-inch square baking pans.
- Prepare filling: Mix sugar, melted butter, and cinnamon together in a bowl.
- Turn dough out onto a lightly floured board and divide in half. Roll one piece into a 16x8-inch rectangle. Spread 1/2 of the filling over top. Start at the long edge of the rectangle and roll up as for a jelly roll. Cut into eight 1-inch slices and place cut-sides down into one prepared baking pan. Repeat with remaining rectangle.
- Bake in the oven until golden brown, 20 to 25 minutes.
- Meanwhile, prepare frosting by mixing confectioners' sugar and water together in a bowl.
- Remove rolls from the oven. Transfer to a large serving plate and spread frosting over top.

HOMEMADE CINNAMON ROLLS
Near my hometown, there used to be a Jumer's Restaurant. They made homemade cinnamon rolls that were absolutely delicious. These are a variation of Jumer's rolls.

Steps:
- Preheat oven to 350°F.
- Dissolve yeast in warm water. Set aside for 10 minutes.
- Mix sugar and cinnamon in a ziploc bag. Set aside for later.
- Place Bisquick in a large bowl and add yeast. Mix slightly.
- Add cold water and form into a ball.
- Turn dough out onto the counter top and cut into quarters.
- Roll each quarter into an oblong piece.
- Brush each quarter with melted butter and sprinkle with the cinnamon/sugar mixture.
- Roll each quarter up and cut into 4 rolls.
- Place on a greased cookie sheet with sides of rolls touching.
- Brush tops with any remaining butter and sprinkle a little more cinnamon/sugar mixture on top.
- Bake for 20 minutes.
- (If desired, make some powdered sugar icing and drizzle over the top of the rolls.).
