Time 40m

Yield 4 servings

Number Of Ingredients 9

1/4 cup olive oil
2 Vidalia onions, thinly sliced
Kosher salt
1 1/2 cups pearled farro
1 pound asparagus, trimmed and cut into 1-inch pieces
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon red wine vinegar
2 pinches crushed red pepper flakes
Freshly ground black pepper

Steps:

  • Bring a medium pot of water to a boil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions and 1/4 teaspoon salt and cook, stirring occasionally, until soft and translucent, about 25 minutes. Increase the heat to medium high and cook, stirring often, until golden brown, 5 to 10 minutes more.
  • While the onions cook, add the farro to the boiling water along with 1 teaspoon salt. Boil until tender but still very toothsome, about 20 minutes. Add the asparagus and cook until crisp-tender, about 2 minutes; drain well.
  • Add the farro and asparagus to the caramelized onions along with the parsley, vinegar and red pepper flakes. Season with salt and pepper. Transfer to a bowl and serve.

FARRO WITH ASPARAGUS, HAZELNUTS AND KALE TOPPED WITH ROASTED MUSHROOMS

Farro with Asparagus, Hazelnuts and Kale Topped with Roasted Mushrooms image

Provided by Rachael Ray : Food Network

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 15

Salt
1 1/4 cups farro, pearled
1 1/2 pounds mixed mushrooms (such as shiitake, crimini and hen of the woods), slice the criminis and coarsely chop the hen of woods and shiitakes
About 1/3 cup EVOO, plus extra for serving
2 tablespoons chopped fresh thyme
Freshly ground black pepper
3 to 4 cloves garlic, finely chopped
2 shallots, chopped
1 bundle thin asparagus trimmed and sliced on an angle
1 small bundle flat Tuscan kale (also called Lacinato or dinosaur), stemmed and finely chopped
Freshly grated nutmeg
1/3 cup dry sherry or Marsala
1/2 cup chopped hazelnuts
Lemon juice, for serving
Sherry vinegar, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a pot of water to a boil, salt the water and cook the farro to tender, 20 minutes or so.
  • Meanwhile, toss the mushrooms with about 1/4 cup EVOO or just enough to lightly coat, and then season with the thyme. Roast to deeply fragrant and brown. Season with salt and pepper.
  • While the mushrooms are in the oven, heat about 2 tablespoons EVOO, 2 turns of the pan, in a skillet over medium-high heat. Add the garlic, shallots and asparagus and cook to tender crisp, 2 to 3 minutes. Add the kale and wilt, season with salt and pepper and nutmeg to taste. Deglaze with the sherry.
  • Toast the nuts in a small skillet until browned and fragrant.
  • Drain the faro and combine with the vegetables. Cool and store for a make-ahead meal. The farro can be served room temp or reheated in a microwave or skillet. Store the toasted nuts in an airtight container at room temp. Reheat the mushrooms in a skillet to warm through. Serve the farro and vegetables sprinkled with the nuts, a little lemon juice and top with roasted mushrooms.
  • Alternatively, the farro can be served as a cold salad and the mushrooms can be roasted off the night you want to serve it. If the cold farro is too dry, dress with sherry vinegar or lemon juice, and more EVOO.

2 cups grape tomatoes
3 tablespoons chopped fresh flat-leaf parsley
1/4 cup coarsely grated ricotta salata

Farro Salad with Asparagus and Parmesan image

A light and delicious way to get your whole grains. Perfect salad for picnics, baby or bridal showers or just because!

Provided by Duncan

Categories     Salad     Grains

Time 13h15m

Yield 12

Number Of Ingredients 9

2 cups farro
¾ pound fresh asparagus, trimmed
1 cup red and yellow cherry tomatoes, halved
¾ cup chopped walnuts
¾ cup dried cranberries
½ cup chopped fresh parsley
⅓ cup chopped fresh chives
¼ cup balsamic vinaigrette, or to taste
1 cup shaved Parmesan cheese, divided

Steps:

  • Soak farro in a large bowl of water for at least 12 hours. Drain.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the drained farro, and return to a boil. Reduce heat to medium, then cook the farro uncovered, stirring occasionally for 20 minutes. Reduce heat to low, cover, and continue simmering until tender, about 30 more minutes. Drain and allow to cool.
  • Bring a large pot of lightly salted water to a boil. Add the asparagus, and cook uncovered until tender, about 3 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the asparagus is cold, drain well, and chop. Set aside.
  • Place farro, asparagus, tomatoes, walnuts, cranberries, parsley, and chives in a large bowl. Drizzle the balsamic vinaigrette over and sprinkle about 3/4 cups Parmesan cheese, then toss. Top with the remaining 1/4 cup of Parmesan cheese. Serve at room temperature.

1 lb fresh asparagus spears
4 tablespoons olive oil
1 shallot, finely chopped

GRILLED ASPARAGUS AND FARRO SALAD

Grilled Asparagus and Farro Salad image

This superfood salad uses the ancient whole grain farro as its base, it has a nutty flavor and satisfying chew (not to mention eight grams of fiber per serving). To compliment and add texture to every bite, stalks of asparagus are grilled, chopped, and tossed in along with lemon zest, almonds, fistfulls of dill and scallions, and briny feta cheese. Great on its own as a vegetarian meal, this recipe can also serve as a formidable co-star to any grilled chicken dish.

  • Bring a pot of water to a boil. Add 1 tablespoon kosher salt. Trim off the asparagus tips and set aside. Divide the stalks into two equal portions. Coarsely chop one portion—this is going to get boiled and puréed. Chop the remaining portion into 1/4- to 1/2-inch slices and set aside with the tips. Boil the coarsely chopped asparagus stalks until soft, about five minutes. Use a spider or slotted spoon to remove the stalks from the pot and transfer to a colander. Rinse quickly under cold water or put in ice water; then drain and transfer the asparagus to a blender or food processor. Purée until smooth. Set aside. Boil the asparagus tips and thinly sliced stalks for 2 minutes more; then use a spider or slotted spoon to remove the asparagus pieces from the pot and transfer to a colander. Rinse quickly under cold water or put in ice water. You can use the pot of asparagus-cooking water as your risotto making liquid if you wish.
  • Put stock or water in a medium saucepan over low heat. (If you are using the asparagus water, there’s no need to do this.) Put butter in a large, deep skillet or pot over medium heat. When it is hot, add onion, turn heat to low, and cook, stirring occasionally until it softens, 5 to 7 minutes.
  • Add farro or rice and cook, stirring occasionally, until it is glossy, about 2 to 3 minutes. Add white wine or prosecco, stir, and let liquid bubble away. Add the salt. Add warmed stock (or asparagus water) ½ cup or so at a time, stirring occasionally. Each time stock has just about evaporated, add more.
  • After 30 minutes, begin tasting the risotto. You want the grains to be tender but with a bit of crunch; it could take as long as 45 minutes total to reach this stage. When it does, stir in the asparagus purée and the remaining pieces of asparagus, being sure to drain the asparagus pieces first.
