A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

- Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

CRISPY HOME FRIES

Steps:
- Cut potatoes into 3/4-inch cubes. Cut onion into 2 or 3 slices, then cut rings in half and separate the layers.
- Heat oil in a 10-inch nonstick skillet over medium-high heat. Add cubed potatoes to the hot skillet and season with garlic salt and seasoned salt. Spread them out evenly over the bottom and allow to cook for 5 to 8 minutes without turning. Turn, and continue cooking, turning every 5 to 8 minutes, until evenly browned.
- When potatoes have reached the desired color, add onion. Cook, stirring every couple of minutes, until onion is slightly cooked, 5 to 8 minutes longer.
- Carefully remove potatoes and onions from the oil and place on a paper towel-lined plate. Allow to cool for 2 to 5 minutes before serving.

FAT FREE SKILLET HOME FRIES
I love home fries but can't have them on my diet because they are fried. So, when I saw this recipe in the 'Eat Up, Slim Down' cookbook put out by Prevention magazine I wanted to put it here so I had it the next time the mood strikes.

Steps:
- In a large, heavy nonstick skillet, heat 1/2 cup broth to boiling.
- Add potatoes, scallions, onion salt, garlic powder, sage, pepper and paprika.
- Cover and cook over high heat 5 minutes, or until liquid is absorbed, turning potatoes occasionally.
- Reduce heat to low and cook 10 minutes, adding broth as needed until potatoes are tender and browned.

HOME FRIES

- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. SKILLET HOME FRIES
Steps:
- Heat oil in a cast iron skillet over medium heat. Add onion and saute until soft. Add poblano, red pepper and garlic and cook for 1 minute. Add paprika and cook for 1 minute. Add potatoes and season with salt and pepper to taste. Cover and cook until almost cooked through. Remove cover and continue cooking for 5 to 10 minutes until golden brown.
EASY FAT-FREE SEASONED FRENCH FRIES
I just started making these, and thought I'd share since I didn't see anything exactly like it. Great for a individual snack!

Steps:
- Preheat oven to 450 degrees.
- Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
- Cut potato to desired wedge sizes.
- Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
- Shake until the pieces are coated evenly.
- Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
- Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
- Enjoy with sauce of your choice!

- Scrub and rinse potatoes under cool water then pat dry using a kitchen towel. You may peel them if you like, or leave the skins on for a more rustic dish. Cut potatoes into ¾" cubes. Try to be consistent when cubing them, so they cook evenly.
- Place a large non-stick (or cast iron) skillet over medium heat then add the butter and oil. Once the butter melts, place potatoes in an even layer on the bottom of the skillet. Cover and cook for 10 minutes, turning potatoes once or twice during the cooking process.
- Remove lid then season the potatoes with salt, pepper, garlic powder and paprika. Stir to coat the potatoes evenly with seasonings then add onions on top of potatoes. Replace lid for an additional 5 minutes, stirring occasionally.
- Remove lid and let potatoes cook uncovered, until tender on the inside and crispy on the outside. This may take an additional 10–15 minutes depending on how crispy you like your home fries. Remove from heat, taste for seasoning and serve while they are nice and hot. Enjoy!
