This simple Fattoush salad, traditional to Middle Eastern cuisine, may not be as well known as tabbouli but is every bit as good.

2 large pita breads (or see Variation)
1 heaping cup cherry or grape tomatoes, halved
1 medium cucumber, peeled, quartered lengthwise, and sliced
2 scallions, thinly sliced
1/4 cup chopped fresh parsley and/or fresh mint leaves to taste
1/4 cup thinly sliced red onion
Several radishes, thinly sliced
2 tablespoons olive oil, preferably extra virgin
Juice of 1 lemon
2 to 3 big handfuls of baby greens or 1/2 small head shredded dark green lettuce
Salt and freshly ground pepper to taste

Steps:

  • Cut the pita breads into 1 inch or so squares with kitchen shears or a sharp knife. Toast in a 375º F. oven or toaster oven until golden and turning crisp, about 8 to 10 minutes.
  • Combine the remaining ingredients in a serving bowl. Add the cut pita and toss again. Serve at once.

1 pita bread, toasted until well browned, cut or broken into 1/2-inch squares
2 medium tomatoes, diced (we used 2 cups small, cherry-sized heirlooms and cut them into halves)
1/2 cucumber, diced
2 tablespoon minced red onion
1 generous handful fresh cilantro leaves
1 generous handful fresh mint leaves, julienned the leaves
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt, or to taste
Freshly ground black pepper
Ground sumac, for garnish

Steps:

  • Combine tomatoes, cucumber, onion, cilantro , mint, olive oil, lemon juice, salt, and several grinds of black pepper. Taste and adjust the seasoning; you may need more olive oil, lemon juice, salt, or pepper. 2 pita bread
1 head romaine lettuce, chopped
4 radishes, diced
1 English cucumber, sliced
1 tomato, diced
3 green onions, chopped
2 cloves garlic, crushed
½ cup chopped fresh parsley
¼ cup chopped fresh mint
salt and ground black pepper to taste
¼ cup lemon juice
¼ cup olive oil
1 tablespoon ground sumac

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place pita bread on a baking sheet.
  • Bake in the preheated oven until the bread is a light brown, 5 to 7 minutes. Remove from the oven and allow to cool, 1 to 2 minutes. Break toasted bread into bite-size pieces.
  • Combine lettuce, radishes, cucumber, tomato, garlic, green onions, parsley, mint, and salt and pepper together in a bowl; toss until salad is well mixed.
  • Pour lemon juice, olive oil, and sumac into a salad dressing bottle with a lid; cover and shake until blended. Add dressing to salad and toss.
  • Garnish salad with toasted pita.

4 pieces pita bread
2 plum tomatoes, seeded and chopped
1 green pepper, cored, seeded and chopped
1 red pepper, cored, seeded and chopped
1 cucumber, seeded and chopped
4 green onions, finely chopped
1 garlic clove, crushed
1 tablespoon flat leaf parsley, finely chopped
1 tablespoon of fresh mint, finely chopped
1 lemon, juice of
1 tablespoon olive oil
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste

Steps:

  • Preheat the oven 400ºF
  • Cut the bread into small (1 inch) pieces, place on a baking tray and toast in the oven for 5-10 minutes until crisp and light brown.
  • In a large bowl, combine the chopped tomatoes, green peppers, red peppers, cucumber, spring onions, garlic, parsley and mint.
  • Toss with the lemon juice and olive oil. Salt and pepper to taste.
  • Now add the toasted bread and mix well.
  • Serve immediately.

2 small pita rounds
½ cup olive oil, plus 2 tbs
salt, to taste
2 medium hearts romaine lettuce
1 medium cucumber
2 cups cherry tomato
5 scallions
½ cup radish, sliced
1 red bell pepper, seeded and diced
2 cups fresh parsley, chopped
1 cup fresh mint, chopped
1 ½ lemons, juiced
1 tablespoon white wine vinegar
2 cloves garlic, minced
2 teaspoons ground sumac, or lemon zest
¼ teaspoon allspice
pepper, to taste

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the pitas in half to make 4 thin rounds. Place the pitas on a nonstick sheet pan. Brush with 2 tablespoons of olive oil and season with salt.
  • Bake for about 5 minutes, until the outside is golden brown. Let cool until they become crispy.
  • Make 3 cuts lengthwise on each of the romaine hearts, remove the stems, and chop into smaller pieces. Rinse, drain, and add to a large salad bowl.
  • Seed the cucumber, dice it, and add it to the salad bowl.
  • Cut the tomatoes in half and add them to the salad bowl.
  • Mince the scallions and add them to the salad bowl.
  • Add the radishes, bell pepper, parsley, and mint to the salad bowl and toss to combine.
  • In a liquid measuring cup or small bowl, combine the remaining ½ cup (120 ml) of oil, the lemon juice, white wine vinegar, garlic, sumac, allspice, salt, and pepper and whisk until well-combined.
  • Pour the dressing over the salad.
  • Break the crispy pitas into small pieces and add to the salad. Toss well.

Fattoush is a classic Lebanese dish. It is often eaten by itself as a starter or light lunch. Saumac is an essential ingredient. It is a spice that is made from the dried, powdered berries of the sumac tree. It was my first time trying Saumac and I really enjoyed it, next time I would add one more teaspoon of the Saumac. This was used as a side salad for Recipe #218539 . This recipe comes from a book called "The Lebanese Cookbook" by Hussien Dekmak

1/2 cos lettuce, chopped
1 cucumber, chopped

1 tablespoon flat leaf parsley, chopped

2 (8-inch) pita breads
7 tablespoons extra-virgin olive oil
Salt and pepper
3 tablespoons lemon juice
1/4 teaspoon garlic, minced to paste
1 pound tomatoes, cored and cut into 3/4-inch pieces
1 English cucumber, peeled and sliced 1/8 inch thick
1 cup arugula, chopped coarse
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
4 scallions, sliced thin

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 375 degrees. Using kitchen shears, cut around perimeter of each pita and separate into 2 thin rounds. Cut each round in half. Place pitas, smooth side down, on wire rack set in rimmed baking sheet. Brush 3 tablespoons oil over surface of pitas. (Pitas do not need to be uniformly coated. Oil will spread during baking.) Season with salt and pepper to taste. Bake until pitas are crisp and pale golden brown, 10 to 14 minutes. Set aside to cool. (Cooled pitas can be stored in zipper-lock bag for 24 hours.) 2. While pitas toast, whisk lemon juice, garlic, and 1/4 teaspoon salt together in small bowl. Let stand for 10 minutes. 3. Place tomatoes, cucumber, arugula, cilantro, mint, and scallions in large bowl. Break pitas into 1/2-inch pieces and place in bowl with vegetables. Add lemon-garlic mixture and remaining 1/4 cup oil and toss to coat. Season with salt and pepper to taste. Serve immediately.
