FAWLTY TOWERS

Steps:

• Bring a pot of water to a boil.
• Core the tomatoes, and then make a small"X" on the bottom (flower) end.
• Drop them into the boiling water, removing when the skins begin to loosen, about 30 seconds.
• Drain, and then immediately submerge in cool water.
• When cool, peel each tomato and slice horizontally into four or five slices.
• Sprinkle each slice with salt, pepper and sherry vinegar.
• On individual plates, reassemble the tomatoes with the flat side down, putting a basil leaf or two between each layer.
• Surround with a little basil oil, sprinkle with a bit more salt, and garnish with fresh basil.

FANCY MOUSSE TOWERS

Steps:

• In a small bowl, beat the cream, milk and pudding mix until stiff peaks form. Transfer to a small resealable plastic bag; cut a small hole in the corner of the bag. , Drizzle two serving plates with chocolate syrup. Place a chocolate wafer in the center of each plate; pipe with some of the pudding mixture. Repeat layers twice. Garnish with whipped cream, chocolate and mint if desired.

FAWLTY TOWERS SALAD DRESSING

Steps:

• Mash the cheese with a little oil.
• Add the Worcestershire sauce, lemon juice, vinegar and balance of the oil.
• Shake well or process in a blender until creamy.
• Store refrigerated.

FAWLTY TOWERS' CHEESE SALAD

Steps:

• Cook the bacon in a pan for 7-8 minutes or until crisp.
• Remove with a slotted spoon and drain on absorbent paper.
• Add the butter to the pan and melt.
• Add the garlic and bread and cook for 3-4 minutes until crisp and golden.
• Drain on absorbent paper.
• Mix the cheese (Stilton is a wonderful English blue-veined cheese – you may substitute other blue-veined cheese) and mayonnaise together.
• Stir in the cream and black pepper.
• Beat well to blend.
• Mix the salad leaves, bacon and croutons together.
• Place on serving plates, top with the dressing and serve.
