1 bunch fresh cilantro
3 cloves garlic, minced
salt and pepper to taste

Steps:

  • In a medium bowl, mix together tomatoes, cilantro, garlic, and salt and pepper. Mix well, cover, and chill for at least 3 hours before serving.

Whip up a batch of cheesy biscuits with salsa and they'll be piping hot and ready to serve in 30 minutes.

1 2/3 cups Gold Medal™ self-rising flour
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/4 cup butter or margarine, melted
1/4 cup water

Steps:

  • Heat oven to 425°F. Generously grease large cookie sheet with shortening or cooking spray. In large bowl, stir together flour and cheese. Add remaining ingredients; stir just until blended.
  • On lightly floured surface, knead dough gently just until smooth. Press or roll out dough to 12x6-inch rectangle. With sharp knife or pizza cutter, cut dough into 1-inch-wide strips; cut each strip into 2-inch pieces. With thin spatula, place strips about 1/2 inch apart on cookie sheet.
  • Bake 11 to 13 minutes or until light golden brown. Immediately remove from cookie sheet. Serve warm.

1 package (8 ounces) cream cheese, softened
1/3 cup thick and chunky salsa
2 eggs
1/2 cup (2 ounces) shredded cheddar cheese
2 tablespoons chopped ripe pitted olives
1 tablespoon chopped green onion
1 garlic clove, pressed
1/4 cup sour cream
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 350°F. Whisk cream cheese in Classic Batter Bowl until smooth. Whisk in salsa and egg until well blended. Stir in cheese.Chop olives and green onion with Food Chopper. Press garlic with Garlic Press. Stir into cream cheese mixture. Generously spray Deluxe Mini-Muffin Pan with vegetable spray. Fill muffin cups using Medium Scoop (1 per muffin cup).Bake 15-18 minutes or until center is set. Let cool in pan 5 minutes. Remove and cool on Stackable Cooling Rack. Spread tops with a small amount of sour cream. Chop fresh cilantro using Professional Shears. Sprinkle over sour cream.

  • Preheat oven to 350 degrees F.
  • In a large bowl, beat the cream cheese until smooth.
  • Blend in salsa and eggs.
  • Stir in cheddar cheese, olives, onion and garlic.
  • Lightly spray mini muffin pan with oil, fill with mixture.
  • Bake 15- 18 minutes until centers are set.
  • Remove from oven and cool in the pan for 5 minutes.
  • Top with additional salsa or sour cream if desired.
