SAVORY WAFFLES SIX WAYS

- Start with recipe for Top Notch Waffles:
- Whisk 2 cups flour, 1/4 cup confectioners' sugar, 2 teaspoons baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda in a large bowl. Whisk 1 1/2 cups milk, 1 1/2 sticks cooled melted butter and 2 eggs in a separate bowl until combined; pour into the flour mixture and stir until just combined. (A few small lumps are fine.) Preheat a waffle iron; lightly brush with butter, then fill with batter three-quarters full and cook until the waffles are golden and crisp.
- Sesame, Scallion and Sausage
- Add 1 bunch thinly sliced scallions, 3 thinly sliced dried Chinese sausages and 2 teaspoons each toasted sesame oil, sesame seeds and grated ginger to the batter. Top the waffles with a fried egg.
- Smoked Salmon and Chives
- Reduce the milk to 1 1/4 cups and add 1/2 cup sour cream. Add 4 ounces chopped smoked salmon, 1/4 cup minced chives and 2 tablespoons chopped tarragon to the batter. Top the waffles with more sour cream and chives.
- Bacon and Almond
- Add 8 chopped cooked bacon slices, 1/2 cup finely chopped marcona almonds and 2 teaspoons each ancho chile powder and chopped thyme to the batter. Top the waffles with maple syrup.
- Goat Cheese and Kale
- Add 4 ounces crumbled goat cheese, 1 cup finely chopped kale, 2 tablespoons chopped mixed herbs (parsley, basil and dill), 1 teaspoon grated lemon zest and 1/4 teaspoon cayenne pepper to the batter. Top the waffles with arugula salad.
- Chili Cornbread
- Replace 1 cup of the flour with cornmeal. Add 1 cup each thawed frozen fire-roasted corn and shredded pepper jack cheese, 1/4 cup chopped cilantro and 1 minced seeded jalapeno to the batter. Top the waffles with honey and hot sauce.
- Salami-Provolone
- Add 1/2 cup each shredded provolone and grated parmesan, 2 ounces finely chopped salami and 1 teaspoon pepper to the batter. Top the waffles with ricotta and olive oil.

- Over medium heat, in a non-stick skillet, heat maple syrup. Break eggs into maple syrup. While eggs are cooking, toast waffles. When eggs have been cooked to desired doneness, place on waffles, pouring hot maple syrup over top. Serve immediately.

- In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

MAPLE SYRUP FRIED EGGS ON WAFFLES
From a Canadian website and posted for the Zaar World Tour to Canada. This is a different way to cook eggs and a yummy one at that! It sure is simple enough. *UPDATE* to the hype about this recipe! A non stick pan is a MUST..once I did these over the campfire in cast iron and burned the heck out of the syrup, BUT that may have been my fault! YES I have done brown and serve sausages in the pan with the syrup, just add a little more syrup. AND I have even done the sausages with some thinly sliced apples in a little butter and the syrup, cooked til tender then add the eggs and a little more syrup. I personally don't like fried eggs or runny yolks, so for my portion I tend to break the yolk and loosely scramble the egg before dropping it in the hot syrup.....then I just let it cook kind of like and omelet with out mixing it too much until it sets then dump the whole thing on the waffle! In a pinch we have this with frozen french toast BUT it is so much better with a nice fat crunch eggo!

- In a heavy saucepan, bring maple syrup to a boil over medium heat just until syrup thickens. Meanwhile, in a bowl, beat eggs lightly with milk and salt.
- When syrup has thickened, reduce heat to low. Using a wooden spoon, drop spoonsful of the egg mixture into hot syrup. Cook for 2 to 3 minutes or until eggs are set. Immediately remove saucepan from heat and place it in a larger pan of cold water to cool slightly. Spoon eggs into serving bowls and drizzle with syrup.
- Note: Sometimes a teaspoonful of butter is dropped into the syrup before the eggs.
MELBA WILSON'S SOUTHERN FRIED CHICKEN AND EGGNOG WAFFLES

- To cook the chicken, put the chicken pieces in a bowl and sprinkle with the salt, pepper, paprika, poultry seasoning, and garlic powder. Add the mustard and use your hands to work everything into the chicken. Pour in the buttermilk, cover with plastic wrap, and refrigerate for 2 hours.
- Heat 3 inches of oil to 325°F in a deep cast-iron skillet over medium heat. Combine the flour and Sazonador seasoning in a brown paper bag. Add a few pieces of chicken at a time and shake it like you mean it! Working in batches, fry the chicken until it is beautifully brown and crispy on one side, about 15 minutes. Turn and cook until a meat thermometer inserted into the meat registers 160°F, about 15 minutes. Drain on paper towels.
- To make the waffles, combine the flour, baking powder, cinnamon, and nutmeg in a medium bowl. Whisk the eggnog, egg yolks, and butter in another bowl. Stir the wet ingredients into the dry until combined; you don't want the batter to be lumpy or too smooth-just right.
- Whisk the egg whites until almost stiff; fold them into the batter.
- Heat a waffle iron. Spray the waffle iron with cooking spray. Pour some of the batter into the middle of the iron, following the manufacturer's instructions. Close and cook until golden brown and cooked through, 3 to 4 minutes. Repeat with the remaining batter.
- Top the waffles with fried chicken, Strawberry Butter, and maple syrup. Are you ready to Paaarrrtyyy!?
- Put the butter in a food processor fitted with the metal blade, and blend until smooth. Add the berries and grenadine and pulse until combined, but with small pieces of berry still visible.

- Heat waffle iron to high. Heat oven to 200 degrees. In a medium bowl, whisk together the flour, sugar, baking powder, and salt; set aside.
- In a medium bowl, whisk together egg yolks, milk and oil. Add to flour mixture, whisking just until large lumps disappear.
- In a small bowl, beat the egg whites to stiff glossy peaks. Fold whites into batter.
- Ladle about 1/3 cup batter into each section of the waffle iron; spread batter almost to the edges. Close iron and cook until no steam emerges, 5 to 7 minutes.
- Transfer cooked waffles to a baking sheet. Transfer to oven to keep warm while baking the remaining batter. Serve with butter and maple syrup.

- 1. Heat up a waffle iron.
- 2. Combine flour with baking powder and salt in a large bowl.
- 3. In a separate medium bowl, combine eggs and sugar with electric mixer for 1 minute on high speed. Add water, milk and oil and mix until combined.
- 4. Pour wet mixture into the dry stuff. Add food coloring, and mix on medium speed for about 30 seconds.
- 5. Spray waffle iron with non-stick cooking spray. Pour 1/2 cup of batter onto waffle iron and close. Cook for 1 minute, then carefully remove waffle and cool. Waffle should not have browned, repeat with remaining waffle batter.
- 6. When waffles are cool, seal them up in freezer bag and freeze.
- 7. When preparing waffles to eat, cook as with originals: In a toaster on the lowest setting until browned. You may have to break or cut waffles in
- half so that they fit all the way into your toaster.
- Tibits: Here are the minor adjustments you can make to the above recipe to create clones of three other Eggo varities.
- BUTTERMILK WAFFLES:
- Use 1/2 cup milk, 3/4 cup buttermilk 3/4 cup water.
- BLUEBERRY WAFFLES:.
- Add 3/4 cup dried and chopped blueberries to the basic recipe batter. Stir in blueberries after combining wet ingredients with dry ingredients.
- WHOLE WHEAT WAFFLES:.
- Use 1 1/2 cups of all-purpose flour and 1 1/2 cups of whole wheat flour. Also, increase water to 3/4 cup.
