1/2 cup packed light brown sugar
1 tablespoon margarine or butter, melted
8 diagonal slices (1/2 inch thick) soft-crust French bread
1 1/2 cups fat-free cholesterol-free egg product or 4 whole eggs plus 4 egg whites, lightly beaten
1 3/4 cups fat-free (skim) milk
1 teaspoon ground ginger
2 cups sliced fresh strawberries
1/4 cup powdered sugar

Steps:

  • Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In small bowl, mix brown sugar and butter until well blended. Spread mixture in bottom of dish. Arrange bread slices over brown sugar mixture.
  • In medium bowl, mix beaten eggs and egg whites, the milk and ginger until well blended. Pour over bread in dish. Let stand at room temperature 15 minutes. Meanwhile, heat oven to 350°F.
  • Bake 45 to 50 minutes or until center is puffed and knife inserted in center comes out clean. Immediately cut into squares; serve with strawberries and powdered sugar.

1 loaf brioche bread, cut into 3 in slices
1 cup granulated sugar
8 cups heavy cream
2 vanilla beans, seeds scraped
6 large eggs, beaten
½ cup cream cheese, softened
½ cup ricotta cheese
½ cup strawberry, quartered
½ cup strawberry, quartered
½ lemon, juiced
1 teaspoon granulated sugar
½ lemon
½ cup blueberry
¼ cup maple syrup
1 cup heavy cream
2 tablespoons granulated sugar
½ teaspoon vanilla extract
½ cup turbinado sugar
4 fresh mint leaves
kitchen torch

Steps:

  • Make the French toast: Using a paring knife, make a small slit in the side of each slice of bread, going almost to the other side, but not all the way through. Set aside.
  • In a large pot over medium heat, combine the granulated sugar, heavy cream, and vanilla bean seeds and bring to a simmer. Whisk until the sugar is dissolved and the mixture is warmed through, about 5 minutes.
  • Add the eggs to a large bowl. Slowly a ladleful of the cream mixture and whisk to temper the eggs so they do not scramble. Remove the cream mixture from the heat and slowly stream the egg mixture into the pot, whisking to combine. Let cool to room temperature.
  • Arrange the sliced brioche in a 9 x 13-inch (19 x 27 cm) baking dish. Pour the cooled custard mixture over the bread. Let soak for at least 1 hour.
  • Preheat the oven to 350°F (180°C).
  • Transfer the soaked brioche to a clean 9 x 13-inch (19 x 27 cm) baking dish. Bake for 35-40 minutes, or until golden brown on top. Remove from the oven and let cool to room temperature.
  • While the toast bakes and cools, make the filling: In a medium bowl, combine the cream cheese, ricotta cheese, and strawberries. Beat with an electric hand mixer on medium speed until fully combined and fluffy. Transfer to a piping bag fitted with a large round tip and chill in the refrigerator until ready to use.
  • Make the macerated strawberries: In a separate medium bowl, combine the strawberries, lemon juice, sugar, and lemon zest. Stir well, then set aside to macerate for 10 minutes.
  • Make the chantilly cream: In a separate medium bowl, combine the heavy cream, sugar, and vanilla. Beat with an electric hand mixer on medium speed until soft peaks form.
  • Pipe the ricotta and cream cheese mixture into the center of each slice of French toast, being careful not to overfill.
  • Top each slice of French toast with a generous sprinkle of turbinado sugar. Brûlée the sugar with a kitchen torch until melted and golden brown.
  • Add the blueberries and maple syrup to the macerated strawberries and stir to combine.
  • Garnish each slice of brûléed French toast with a spoonful of the berry mixture, a dollop of chantilly cream, and a mint leaf. Serve immediately.

1/2 cup pineapple cream cheese spread (from 8-ounce container)
1/2 cup orange marmalade
2 tablespoons butter or margarine, softened
4 eggs
1 1/2 cups milk
1 teaspoon vanilla
3/4 cup light corn syrup
1/4 cup frozen orange juice concentrate

Steps:

  • Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Toast 6 slices of the bread; place in pan. Spread each slice toast evenly with cream cheese and marmalade. Butter remaining bread slices; place butter sides up on toast.
  • Beat eggs, milk and vanilla in medium bowl with wire whisk until blended. Pour over bread. Cover with aluminum foil and refrigerate at least 6 hours or overnight.
  • Heat oven to 350°. Uncover and bake 35 to 45 minutes or until deep golden brown and slightly puffed. Cut between bread slices. Serve with Orange Syrup.
  • Method for Orange Syrup: Mix ingredients in small microwavable bowl. Microwave uncovered on High about 1 minute or until heated.

We had this the morning after Christmas. This is another of my MIL's recipes. Gosh...her house smelled wonderful when this was baking. I haven't cooked this recipe myself, but my kids and DH want me to. The Apple Cider Syrup recipe is being posted and I will post it's recipe #. This tastes like it should be served with Cool Whip.

1 lb loaf French bread, unsliced, cubed
8 ounces cream cheese, cubed
8 eggs
2 1/2 cups light cream or 2 1/2 cups half-and-half cream
6 teaspoons butter, melted
1/4 cup maple syrup
1/2 cup sugar
4 teaspoons cornstarch
1/2 teaspoon cinnamon
1 cup apple cider or 1 cup apple juice
1 tablespoon lemon juice
2 tablespoons butter (I like Cabot's)

Steps:

  • Grease a 13 x 9 pan.
  • Cut bread into cubes (you should end up with about 12 cups).
  • Place half bread cubes in pan.
  • Top with cream cheese cubes.
  • Top with remaining bread cubes.
  • Beat together eggs, milk, melted butter, and maple syrup.
  • Pour egg mixture evenly over bread cubes and cream cheese.
  • Slightly press down with spatula to moisten.
  • Cover with plastic wrap and refrigerate for 4 to 24 hours.
  • When ready to bake, remove plastic wrap and bake in oven at 325 degrees Fahrenheit for 35 to 45 minutes or until center appears set and edges are lightly golden.
  • Top with Apple Cider Syrup. Recipe is posted.

Steps:

  • Preheat oven to 325 degrees F. Coat a 13 X 9-inch casserole dish with cooking spray and set aside. Cut baguette into 1/2-inch cubes and spread along the bottom of the dish. 1 loaf (1 pound) cinnamon bread, cubed
1 package (8 ounces) cream cheese, cubed
8 eggs, lightly beaten
2-1/2 cups 2% milk
6 tablespoons butter, melted
1/4 cup maple syrup
CIDER SYRUP:
1/2 cup sugar
4 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • Arrange half of the bread cubes in a greased 13x9-in. baking dish. Layer with cream cheese and remaining bread. In a blender, combine the eggs, milk, butter and maple syrup; cover and process until smooth. Pour over bread. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean.
