FRESH BASIL-WRAPPED CHEESE BALLS



Fresh Basil-Wrapped Cheese Balls image

Three kinds of cheese wrapped in fresh basil leaves make a wonderful cheese ball appetizer recipe in just 45 minutes!

1/2 cup mascarpone cheese (4 oz)
1/2 cup crumbled Gorgonzola cheese (2 oz)
2 tablespoons grated Parmesan cheese
1/8 teaspoon pepper
24 fresh basil leaves (2 to 2 1/2 inches long)

Steps:

  • In small bowl, mix cheeses and pepper until blended. Cover; refrigerate about 30 minutes or until firm enough to shape into balls.
  • For each appetizer, shape 1 1/2 teaspoons cheese mixture into a ball; roll slightly to form an oval, about 1 inch long. Place on wide end of basil leaf; roll up. Roll leaf and cheese between fingers to form an oval. Repeat with remaining cheese mixture and basil leaves.
  • Serve immediately, or cover with plastic wrap and refrigerate no longer than 24 hours.

2 cups grated sharp cheddar cheese (about 8 oz.)
8 ounces cream cheese, room temperature
1/2 cup loosely packed, roughly chopped basil leaves
1 teaspoon honey
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 1/4 cups chopped toasted pecans
1 Bag Stacy's® Fire Roasted Jalapeño Pita Chips

Steps:

  • In the bowl of a food processor, pulse cheddar cheese, cream cheese, basil, honey, salt and pepper in a food processor until smooth. Place cheese mixture on a large piece of plastic wrap and use plastic wrap to shape into a ball; chill until firm, at least 2 hours.
  • Unwrap and roll cheese ball in pecans and let sit at room temperature 20 minutes before serving. Serve with Stacy's® Fire Roasted Jalapeño Pita Chips.

Steps:

  • In a medium bowl combine the cream cheese, Cheddar cheese, Monterey Jack cheese, green bell pepper, jalapeno pepper, Worcestershire sauce and garlic salt. Mix together and form mixture into a ball. Roll ball in cilantro and serve with your favorite crackers.

1 pound feta cheese
2 eggs, slightly beaten
1/4 cup finely chopped fresh or 1 tablespoon dried basil leaves
1/4 teaspoon white pepper
1 package (16 ounces) frozen phyllo sheets (18x14 inches), thawed
1/3 cup margarine or butter, melted

Steps:

  • Heat oven to 400°F. Grease cookie sheet. Crumble cheese into small bowl; mash with fork. Stir in eggs, basil and white pepper until well mixed.
  • Cut phyllo sheets lengthwise into 2-inch strips. Cover with plastic wrap, then with damp towel to keep them from drying out. Place 1 level teaspoon cheese mixture on end of 1 strip. Fold strip over cheese mixture, end over end in triangular shape, to opposite end. Place on cookie sheet. Repeat with remaining strips and cheese mixture. Brush triangles lightly with margarine.
  • Bake 12 to 15 minutes or until puffed and golden brown. Serve warm.

8 ounces Monterey Jack cheese finely shredded (about 2 cups)
1 (8-ounce) package cream cheese softened
2 tablespoons heavy cream
2 teaspoons basil dried leaves
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/4 cup parsley finely chopped fresh
1/4 cup pecan chopped or pine nuts

Steps:

  • 1. In a small mixer bowl at medium speed, beat cheeses, heavy cream, basil, salt, and garlic powder until well blended. With moistened hands, shape cheese mixture into a ball. Wrap in plastic wrap and chill 1 hour. (If making ahead, remove from refrigerator about 1/2 hour before serving.)2. Just before serving, unwrap cheese ball. Stir together parsley and nuts in a shallow dish. Roll cheese ball in mixture place on a serving plate.
