BAKED BANANA-PECAN OATMEAL

Steps:
- In a medium pot, bring 4 1/2 cups water to a boil. Stir in oats and salt and cook 1 minute. Let cool, cover, and refrigerate overnight.
- Bring oatmeal to a simmer over medium-high. Cook until tender, about 10 minutes. Stir in milk and vanilla. Transfer to a 9-inch pie plate.
- Heat broiler, with rack 4 inches from heat. Top oatmeal with bananas and brown sugar and broil until bananas are caramelized, 3 to 4 minutes. Sprinkle with pecans to serve.

BANANAS FOSTER OATMEAL
Steps:
- In a large saucepan, bring water, milk and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Cover and let stand., In a small heavy saucepan, melt butter over medium heat. Stir in brown sugar and spices; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes or until slightly thickened. Add bananas; cook, stirring gently, until bananas are glazed and slightly softened, 1-2 minutes., Remove from heat; stir in extracts. Stir banana mixture into oatmeal. Spoon oatmeal into serving bowls; add toppings of your choice.

- Preheat oven to 350°F Grease a 9x13-inch pan.
- Combine the flour, oatmeal, baking powder, baking soda, salt and nutmeg. Mix well and set aside.
- At medium speed of an electric mixer, cream together the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
- At low speed, add the flour mixture alternately with the buttermilk and mashed bananas, beginning and ending with the flour mixture. Beat only until ingredients are blended; do not overbeat. Stir in the vanilla extract.
- Spread evenly in the prepared pan, and bake for 35 to 40 minutes or until a cake tester comes out clean.
- Allow cake to cool for 10 minutes.
- Topping:.
- In a small saucepan, melt the butter. Add the brown sugar, milk, coconut and pecans, and stir well. (Or, melt the butter in the microwave and combine with the remaining ingredients.) Spread the topping evenly over the cake.
- Place cake in a preheated broiler about 6 inches from the heat. Broil for 2 minutes or until golden brown.

- Preheat oven to 350 degrees.
- Combine oil, sugar, egg, and pecans in a medium bowl. Add oatmeal, baking powder and milk and stir until blended.
- Pour into a lightly-greased 8x8 baking dish. Sprinkle with nutmeg and cinnamon.
- Bake at 350 degrees for 30 minutes. Cut into squares and serve hot or cold with milk and/or fruit.

- Preheat oven to 350*F Spray one bread pan with cooking spray and set aside. Blend together eggs, sugar and butter. Add salt, baking soda & baking powder. Mix again. Add oatmeal and bananas and blend well, scraping sides if needed. Add flour then pecans. Mix well after each addition. Scrape sides of bowl and ensure all is mixed well. Pour batter into prepared pan. Bake for 1 hour or until toothpick inserted into middle of bread comes out clean. Remove from oven, allow to cool for 5 minutes. Remove from pan, slice and slather it with butter! Devour immediately.
