FEATHERLIGHT DINNER ROLLS
These dinner rolls are a light yeast bread that rises once in a bowl and again in the casserole dish they are baked in. A straightforward easy to follow recipe, don't be intimidated by having to use yeast.

Steps:
- Stir together the first three ingredients in a 2-cup glass measuring cup; let stand 5 minutes.
- Combine the flour and the next 2 ingredients in the bowl of a heavy-duty electric stand mixer. Add 3 tablespoons of the melted butter, egg, and yeast mixture; beat at low speed, using dough hook attachment, 3 minutes or until blended and a soft dough forms. Increase speed to medium-low, and beat 4 minutes or until the dough is smooth and elastic but still slightly sticky. Cover bowl of dough with plastic wrap; and let rise in a warm place (80 to 85 F), free from drafts, 1 hour or until doubled in bulk.
- Lightly grease a 13x9 inch pan with cooking spray. Punch the dough down. Turn the dough out onto a floured surface. Divide the dough into 12 equal portions. Gently shape each portion into a 2 inch ball; place in prepared pan. Brush the tops with 1 tbsp of the melted butter. Cover and let rise in a warm place (80 to 85 F), free from draft, 45 minute or until doubled in bulk.
- Preheat the oven to 375 F. Bake the rolls at 375 F for 15 minutes or until golden brown. Transfer the rolls from the pan to a wire rack, and brush with remaining 1 tbsp melted butter. Serve warm or cool completely (about 30 minutes).

- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
- Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

- In a large bowl, mix sugar, yeast, salt and 2 cups flour. In a small saucepan, heat milk, water and butter to 120°-130°. Add to dry ingredients; beat on medium speed 3 minutes. Add 2 eggs; beat on high 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape dough into 24 balls. Place in 2 greased 13x9-in. baking pans. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 375°. Brush rolls with lightly beaten egg. Sprinkle with toppings for rolls of your choice. Bake until golden brown, 10-15 minutes. Remove from pans to wire racks; serve warm.

Steps:
- Dissolve yeast in warm water; stir in 1 tbsp sugar. Let stand 5 minutes.
- Add milk, shortening, eggs, salt, 3 cups flour, and 1/3 cup sugar. Beat on medium speed for 2 minutes.
- Stir in enough of the remaining flour to form a soft dough (will be sticky). Do not knead. Refrigerate, covered, overnight.
- Punch dough down and turn out onto a lightly floured surface. Cut into 24 equal portions. Cut each portion into thirds. Roll each third into a ball. Place three balls into each greased muffin cup. Cover and rise in a warm place until doubled, about 1 3/4 hours.
- Heat oven to 350* F. Bake rolls for 13-15 minutes or until golden brown. Remove from muffin tins to wire racks. Serve warm.
