BROILED GROUPER PARMESAN



Broiled Grouper Parmesan image

Fresh grouper is my absolute favorite. It is a mild fish and this recipe may entice even those who don't like fish to make it a favorite. The recipe is super easy and can be served with a minimum preparation and cooking time. Perfect for a warm summer evening supper. Garnish with lemon twists and parsley before serving.

2 pounds fresh grouper fillets
2 tablespoons lemon juice
½ cup grated Parmesan cheese
¼ cup butter, softened
3 tablespoons mayonnaise
1 dash hot pepper sauce (e.g. Tabasco™)
salt and pepper to taste

Steps:

  • Preheat the oven's broiler.
  • Place the grouper fillets on a greased baking tray. Brush them with lemon juice. In a small bowl, stir together the Parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. Set aside.
  • Broil the fillets for 4 to 6 minutes, until they can be flaked with a fork. Remove from the oven and spread the cheese mixture on top of fillets.
  • Return to the broiler for an additional 30 seconds, or until the topping is browned and bubbly.

GROUPER WITH FENNEL AND OLIVE RELISH



Grouper with Fennel and Olive Relish image

Yield 4 to 6 servings

Number Of Ingredients 11

1/2 cup olive oil
1 large red onion, diced
3 fennel bulbs, trimmed, washed and thinly sliced
1 teaspoon coarse salt
2 jalapeno chiles, stemmed, seeded and minced
1/2 cup pitted black olives, roughly chopped
3 tablespoons balsamic vinegar
1/2 bunch parsley, chopped
4 to 6 (6ounce) grouper fillets, skinned
Olive oil for brushing fish
Coarse salt and freshly ground black pepper

Steps:

  • Heat the oil in a skillet over medium low heat. Saute the onions with salt and pepper until soft but not brown, about 5 minutes. Add the fennel and cook 3 to 5 minutes more. Set aside to cool.
  • Transfer the onion mixture to a bowl. Add the remaining ingredients and mix well. The relish can be refrigerated overnight.
  • Heat a grill. Brush fillets with olive oil and sprinkle with salt and pepper. Grill until cooked through, 3 to 4 minutes per side.
  • To serve, place fish on a serving platter or individual plates and top with relish.

Toasted fennel seeds, along with dill and thyme, make a terrific tasting crust on grouper in this recipe developed by Chef Allen Susser. Serve with Vanilla Beurre Blanc for a special presentation.

2 teaspoons McCormick® Gourmet Collection® Fennel Seed
1 teaspoon McCormick® Gourmet Collection® Dill Weed
1 teaspoon McCormick® Gourmet Collection® Thyme Leaves
½ teaspoon salt
¼ teaspoon McCormick® Gourmet Collection® Coarse Grind Black Pepper
2 pounds grouper fillets
2 tablespoons olive oil, divided
2 tablespoons dry white wine

Steps:

  • Toast fennel seeds over medium heat 1-2 minutes or until aromatic in a small skillet. Remove from skillet. Finely crush toasted seeds using a mortar and pestle, a spice mill, a clean coffee grinder or a rolling pin. Blend with dill, thyme, salt and pepper.
  • Rub spice mixture evenly on both sides of grouper fillets. Drizzle with 1 tablespoon oil; set aside.
  • Heat remaining oil over medium-high heat in a large nonstick skillet. Add fillets; saute 4-5 minutes per side or until done and lightly browned. Add white wine to pan; cook 1 minute. Remove grouper to serving plate. Serve with Vanilla Beurre Blanc, if desired.
