A recipe for melted cheese with peppers and tomatoes from Tirana which would make a good first course or accompaniment

45 ml olive oil
2 large green or red peppers, peeled and diced
450 g tomatoes, peeled and diced
225 g feta cheese, crumbled
1 tablespoon flour
50 g butter
Salt, black pepper and Cayenne pepper, to taste

Steps:

  • Heat the oil in a frying pan and sauté the peppers and tomatoes for 5-7 minutes.
  • Meanwhile, in a saucepan, melt the butter and add the flour, cheese, seasoning and Cayenne pepper.
  • Add the pepper mixture to the saucepan and mix thoroughly with the cheese mixture.
  • Pour into a greased baking dish and bake in the oven for 30 minutes.
  • Serve immediately.

Tirana Fergese is the national dish of Albania, this is a vegetarian version made with peppers, tomatoes, and cheese.

1/2 lb green peppers or 1/2 lb red pepper
1 lb tomatoes
3 tablespoons extra virgin olive oil
1/2 lb cottage cheese (salted) or 1/2 lb feta cheese
1 tablespoon flour
1/4 lb butter
salt
fresh ground black pepper
cayenne pepper

Steps:

  • Peel the skins off the tomatoes and peppers; saute tomatoes and peppers in oil for about 5 to 7 minutes, then set aside to cool.
  • Dice vegetables.
  • Melt the butter in another saucepan; stir in flour, cottage or feta cheese, salt, pepper, and cayenne to taste.
  • Mix cheese mixture with vegetables and place in a pre-heated 350 degree F oven for 15 minutes.
  • Remove from oven and serve immediately.
