Two 4-ounce packages fresh goat cheese
3 tablespoons finely chopped fresh dill
1 1/2 tablespoons finely chopped dried cranberries
1 1/2 tablespoons finely chopped skinned pistachios
Crackers, for serving

Steps:

  • Put the packages of goat cheese in the freezer to harden slightly, about 15 minutes.
  • Spread the dill out on a cutting board to dry for a few minutes. Mix together the cranberries and pistachios on another part of the cutting board.
  • Remove the cheese logs from the freezer and take them out of the package. Gently roll one log over the dill, coating it almost completely. Do the same with the second log, rolling it in the cranberries and pistachios. Wrap the logs in plastic wrap and chill until time to serve.
  • Serve with crackers.

1 package (3 oz) cream cheese, softened
1 package (6 oz) chèvre (goat) cheese
1 1/2 tablespoons chopped fresh chives
2 tablespoons finely chopped yellow bell pepper
2 tablespoons finely chopped walnuts, toasted*
2 tablespoons chopped pitted Kalamata or Spanish olives
2 tablespoons freshly grated Parmesan cheese
1 jar (2 oz) diced pimientos, drained
Crackers or cocktail breads

Steps:

  • Line three 6-ounce custard cups or molds with plastic wrap. In medium bowl, beat both packages of cream cheese and chèvre cheese with electric mixer on medium speed until smooth. In 3 small bowls, divide mixture into equal portions (about 2/3 cup each).
  • Stir chives into one portion of cheese mixture. Spoon half of mixture evenly into a lined cup. Sprinkle with bell pepper. Top with remaining chives mixture.
  • Stir walnuts into another portion of cheese mixture. Spoon half of mixture evenly into a lined cup. Top with olives. Top with remaining walnut mixture.
  • Stir Parmesan cheese into remaining portion of cheese mixture. Spoon half of mixture evenly into remaining lined cup. Top with pimientos. Top with remaining Parmesan mixture. Cover and refrigerate cheese mixtures in cups at least 24 hours but no longer than 3 days.
  • Turn cups upside down onto serving plate; carefully remove cups and plastic wrap. Serve with crackers.

The most delicious tasting spread! Sometimes I roll it into a log or ball with nuts, and other times I just put it in a crock. The ingredients sound strange but taste great together. I have been asked to make this for friends' parties and share the recipe. Easy, but fancy-looking, especially if you do the ball or log and arrange nice crackers or/and fruit around it. Great for parties or pot luck. I got this from Pampered Chef and altered a bit to my liking.

1 (8 ounce) package light cream cheese, softened
2 -4 ounces cheddar cheese, finely shredded (1/2-1 cup, to taste)
1/4 cup finely diced dried apricot
1/4 cup dried sweetened cranberries, chopped
2 -3 tablespoons scallions, very thinly sliced with some of the green
1/2 cup sliced almonds (only if you are going to roll it as a cheese ball or log)
cracker (or bagels for leftovers)

Steps:

  • In a medium bowl, combine cheeses, apricots, cranberries, and scallions.
  • Mix well.
  • If making as a log or ball, shape cheese mixture using wax paper or parchment paper, and roll log/ball in almonds (on another sheet of wax/parchment paper) until completely coated.
  • Transfer to a pretty dish.
  • Serve with crackers.
  • Leftovers are also great on bagels!

1 cup salsa
1 teaspoon ground cumin
½ teaspoon garlic powder
1 pint sour cream
1 (1.25 ounce) package taco seasoning mix
1 bunch green onions, chopped
2 tomatoes, chopped
2 cups shredded Cheddar cheese
1 cup shredded Monterey Jack cheese

Steps:

  • First (bottom) layer: mix together beans, salsa, cumin, and garlic powder, and spread on large, flat serving dish as a thin layer, maybe 1/2 inch thick.
  • Second (middle) layer: mix together sour cream and taco seasoning, and spread over bean layer.

1 cup sugar
1 package (12 ounces) fresh or frozen cranberries
1/2 cup apricot preserves
2 tablespoons lemon juice
1/3 cup slivered almonds, toasted
1 package (8 ounces) cream cheese
Assorted crackers

Steps:

  • In a large saucepan over medium heat, bring water and sugar to a boil without stirring; boil for 5 minutes. Add cranberries, cook until berries pop and sauce is thickened, about 10 minutes. Remove from the heat. , Cut apricots in the preserves into small pieces; add to cranberry mixture. Stir in lemon juice. Cool. Add almonds. , Spoon over cream cheese; serve with crackers. Store leftovers in the refrigerator.
