Festive Cranberry Cream Cheese Squares image

2 cups Pillsbury BEST® All Purpose Flour
1 1/2 cups oats
3/4 cup firmly packed brown sugar, plus 1 tablespoon, divided
1 cup butter, softened
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
2 large eggs
1 (27 oz.) jar None Such® Ready to Use Mincemeat
2 tbsps. cornstarch
1 (16 oz.) can whole berry cranberry sauce

Steps:

  • HEAT oven to 350 degrees F. Spray 15 x 10-inch jellyroll pan with no-stick cooking spray.
  • BEAT flour, oats, 3/4 cup brown sugar and butter in large bowl until mixture resembles coarse crumbs. Reserve 1 1/2 cups crumb mixture; press remaining mixture into bottom of prepared pan.
  • BAKE 15 minutes or until lightly browned.
  • BEAT cream cheese in medium bowl until fluffy. Gradually beat in sweetened condensed milk until smooth; beat in eggs. Spread over partially baked crust: top with mincemeat.
  • COMBINE remaining 1 tablespoon brown sugar and cornstarch in small bowl; stir in cranberry sauce. Spoon over mincemeat. Top with reserved crumb mixture.
  • BAKE 40 minutes or until golden. Cool. Chill. Cut into squares.

Basic Vanilla Cookie Dough
3/4 cup chopped candied citron
3/4 cup glaceed cherries

Steps:

  • Once the flour is incorporated according to dough recipe, beat in citron and cherries. Divide dough into 2 pieces. Shape each into a 10-inch-long square-shaped log. Wrap in parchment. Refrigerate until very firm, about 2 hours.
  • Slice dough crosswise slightly thicker than 1/8 inch. Reshape if needed. Bake at 350 degrees on parchment-lined baking sheets until firm, 12 to 14 minutes.

¼ cup all-purpose flour
½ cup butter
½ cup white sugar
2 tablespoons frozen orange juice concentrate
1 egg
¼ teaspoon almond extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup chopped walnuts
1 ½ cups confectioners' sugar
3 tablespoons butter
2 tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch square pan.
  • In a small bowl, toss together the glaceed fruit and 1/4 cup of flour just enough to coat the fruit. In a medium bowl, cream together the butter and sugar. Stir in the orange juice concentrate, then the egg, and almond extract. Sift together the flour, baking soda and salt; stir into the creamed mixture. Finally, stir in the flour coated fruit and the walnuts.
  • Spread the batter evenly in the prepared 9x9 inch pan. Bake for 20 minutes, or until bars start to pull away from the sides of the pan. Remove from the oven and cool before frosting.
  • To make the frosting, combine the confectioners' sugar, 3 tablespoons of butter, and orange juice in a small bowl. Beat until light and fluffy. Spread over cooled bars , then cut into squares.

1/2 cup butter or margarine, softened
1 teaspoon grated orange peel
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
1/4 cup Gold Medal™ all-purpose flour
2 1/2 cups candied cherries
1 package (8 ounces) pitted dates, cut in half
1 cup coarsely chopped pecans or filberts
1/3 cup granulated sugar
2 tablespoons orange juice

Steps:

  • Heat oven to 350°F. Grease and flour rectangular pan, 13x9x2 inches. In large bowl, mix 1 cup flour, the brown sugar, butter, orange peel, baking soda, cinnamon, salt and egg with spoon.
  • In medium bowl, mix 1/4 cup flour, the cherries, dates and pecans; stir into brown sugar mixture. Spread in pan.
  • Bake about 35 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In 1-quart saucepan, heat all Orange Glaze ingredients over medium heat, stirring occasionally, until mixture thickens slightly. Drizzle cooled bars with glaze. For bars, cut into 8 rows by 3 rows.

1 head swiss chard or 1 head kale
1 bunch green grape
1 bunch red grapes
1 package dried apricot halves
2 star fruit, sliced 1/4 inch thick
3 bananas, sliced 1 inch thick
2 apples, red and green,sliced 1/4 inch thick
2 pears, sliced 1/4 inch thick
2 oranges, peeled and sliced
2 kiwi, peeled and sliced
1 fresh pineapple, sliced and chunked
1 pint strawberry
1 cup raspberries
1/3 cup frozen limeade concentrate, thawed
1/3 cup honey
1/3 cup vegetable oil

Steps:

  • Whisk limeade and honey until blended.
  • Slowly whisk in oil until thick and smooth.
  • Dip bananas, apples and pears in mixture.
  • Line platter with leaves.
  • Arrange red and green grapes, apricot and starfruit in alternating groups in a circle around outside edge of platter.
  • Alternate orange slices and more star fruit with apple and pear slices in a smaller circle.
  • In the next circle, arrange kiwi, pineapple, bananas and strawberries.
  • Sprinkle raspberries over all.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
6 Tbsp. butter, softened
1/2 cup sugar
1 tsp. vanilla
1 cup flour
1/4 tsp. baking soda
1 can (14 oz.) sweetened condensed milk
3 eggs
1 pkg. (7 oz.) dried fruit bits (apricots, plums, apples, raisins)
3/4 cup chopped pecans
3/4 cup BAKER'S ANGEL FLAKE Coconut

Steps:

  • Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Add flour and baking soda; mix well. Refrigerate 1 hour or until chilled.
  • Heat oven to 325°F. Line 13x9-inch pan with foil, with ends of foil extending over sides. Spray with cooking spray. Roll out dough on lightly floured surface to 15x11-inch rectangle; press onto bottom and 1 inch up sides of prepared pan. Prick bottom of crust in several places with fork. Bake 10 min.
  • Mix sweetened condensed milk and eggs until blended; pour into crust. Top with remaining ingredients.
  • Bake 20 min. or until center is almost set. Remove from oven; cool completely. Use foil handles to remove dessert from pan before cutting into bars.

This is an old recipe, probably at least 50 years. My mother usually made it around Christmas time, because that was when cranberries were available.

1 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups peeled and thinly sliced apples, preferably a firm variety such as granny smith
1 1/2 cups fresh cranberries
1/4 cup water
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon grated orange rind (optional)
1/4 cup shortening
1 egg
1/2 cup milk

Steps:

  • Fruit Layer: Mix together the sugar and the two spices.
  • Sprinkle half of the mixture over the bottom of an 8-inch square baking pan.
  • Arrange the apple slices over the sugar mixture, and then spread the cranberries evenly over the apples.
  • Sprinkle the remaining sugar mixture over the fruit.
  • Pour the water over the fruit, then dot with the margarine.
  • Place the pan in a 400° oven for 10 minutes while mixing the cake batter.
  • Cake Batter: Combine dry ingredients in a mixing bowl.
  • Add remaining ingredients.
  • Mix together with a pastry blender or blending fork, using a cutting-in motion at first to divide shortening into small pieces (about 8 to 10 strokes).
  • Then stir in a circular motion with the blender just until flour is moistened and ingredients blended.
  • The batter will look lumpy.
  • Remove pan from oven and spread cake batter over hot fruit.
  • Bake at 400° for about 35 minutes.
  • Serve upside down while warm.
  • Can be served alone, or with hard sauce, ice cream or whipped cream.
