My mom found this recipe years ago, and now it's become a cheap and easy weeknight favorite at my house.

1 tablespoon butter
1 small onion, chopped
3 pounds chicken thighs
⅔ cup ketchup
⅓ cup brown sugar
1 tablespoon apple cider vinegar
1 teaspoon dry mustard powder
1 (8 ounce) can whole berry cranberry sauce

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. Remove the dish from the oven, push the onion over to one end, and place the chicken thighs in the dish in a single layer. Return to the oven and bake for about 25 minutes.
  • Stir together the ketchup, brown sugar, vinegar, mustard powder, and cranberry sauce in a bowl. Remove the chicken from the oven, and scoop the cooked onions into the cranberry mixture. Spoon the mixture over the chicken thighs, and return to the oven.
  • Bake until the cranberry mixture is slightly caramelized and the chicken is done, about 20 more minutes. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

1 cup cranberry juice
2 tablespoons brown sugar
6 bone-in chicken breast halves

Steps:

  • In a small saucepan, combine cranberries and 1/4 cup whiskey. Bring to a boil; cook until liquid is evaporated. Transfer to a blender. Cover and process until blended. Place in a small bowl; stir in the butter, 2 teaspoons thyme, salt and pepper. Set aside., In the same saucepan, combine the cranberry juice, brown sugar and remaining whiskey. Bring to a boil; cook until liquid is reduced to about 1/3 cup. Stir in remaining thyme., With fingers, carefully loosen skin from each chicken breast; rub butter mixture under the skin. Place in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 30-40 minutes or until juices run clear, basting occasionally with cranberry mixture.

A delicious recipe for the upcoming fall season. I like using chicken thighs rather than breasts in the crock pot as they stand up better to the longer cooking and add more flavor to the dish. Do not overcook the thighs. Six hours is about as long a cooking time as you'll need. I actually use a little less time. This recipe was posted by Wolverine on the TOHBB.

1 small onion, sliced thinly
1 cup fresh cranberries (may be frozen, if frozen, do not thaw)
2 1/2 lbs boneless skinless chicken thighs (remove large amounts of fat)
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard
2 teaspoons cider vinegar
1 1/2 tablespoons cornstarch
2 tablespoons cold water
salt

Steps:

  • Place onion slices and cranberries in the bottom of your crock pot. Arrange chicken on top.
  • In a small bowl, mix together the catsup, brown sugar, dry mustard and vinegar. Pour over the chicken.
  • Cover and cook on low setting about 6-7 hours or until the chicken is tender.
  • To serve: lift the chicken out and set on serving platter. Cover and keep warm in your oven on a low setting. Mix the cornstarch and water until smooth. Turn the crock pot to high setting and add cornstarch mixture. Cover and cook this for about 15 minutes more or until the sauce thickens. Season to taste with salt and pour the sauce over the chicken.

6 boneless, skinless chicken breasts
1 teaspoon garlic salt
½ teaspoon paprika
1 teaspoon pepper
½ teaspoon seasoning salt
2 Tablespoons olive oil
1 cup cranberries (fresh or frozen)
½ cup brown sugar
⅓ cup white wine vinegar
1 Tablespoon minced garlic
4 sprigs fresh rosemary
½ cup chicken broth
1 lemon

Steps:

  • Preheat oven to 375 degrees.
  • In a bowl combine garlic salt, paprika, pepper, and all season salt.
  • Rub the mixture into each chicken breast on both sides.
  • Heat a skillet to medium heat and add olive oil.
  • Place the chicken breasts into the pan, browning them on both sides, but not cooking them all the way through.
  • Place them in a sprayed 9x13 pan.
  • Place sprigs of rosemary between the breasts and lemon slices on top or in between breasts.
  • Pour the chicken broth into the 9x13 pan.
  • In a separate bowl, combine the cranberries, brown sugar, minced garlic and vinegar stirring until well mixed.
  • Pour the mixture over the chicken breasts.
  • Place in oven and cook for 45 minutes or until the juices run clear.
