Sweet Mixed Nuts image

I started out making this just for the holidays makes a nice gift. Brown sugar,cinnamon, allspice, nutmeg and cloves. Its easy enough to do whenever, one batch in the microwave makes 1 1/2 cups.

1/2 cup brown sugar
1 1/2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon clove
1/8 teaspoon nutmeg
1 1/2 cups nuts (combination of almonds, cashews, pecans, filberts, walnuts)

Steps:

  • Slect power high.
  • In a 2 quart casserole or microwave safe dish combine sugar, water and spices.
  • Heat 1 to 1 1/2 minutes til sugar is melted.
  • Stir in nuts.
  • Place nuts on a microwave safe plate heat on high for 3 1/2 minutes or until syrupy.
  • Becareful to spread the nut mixture evenly on the plate and watch closely not to burn.I find not all microwaves act the same way.
  • Place nuts on wax paper to cool completely.
  • Break into pieces store in air tight container.

This is a great candied nut recipe I stole from my mom. She likes walnuts, I like pecans. It's dead easy and my wife says she needs to leave the house when I make them, so she won't eat them all! Try experimenting with the spices, maybe clove or allspice!

¼ cup butter
½ cup brown sugar
½ teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 tablespoons water
3 cups pecan halves

Steps:

  • Melt butter in a 4 quart glass casserole dish in the microwave. Stir in the brown sugar, nutmeg, cinnamon and water. Microwave on high for 1 minute. Stir in the nuts so they are well coated. Microwave for 4 to 5 additional minutes on high, stirring every minute. Spread cooked nuts out onto parchment or waxed paper to cool.

1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
1/4 teaspoon ground chipotle powder
1/8 teaspoon ground nutmeg
3 tablespoons unsalted butter
1 cup shelled walnuts
1 cup pecan halves
1/4 cup packed brown sugar
1 tablespoon water
1-1/2 teaspoons Worcestershire sauce
Dash Louisiana-style hot sauce

Steps:

  • In a small bowl, combine the salt and spices; set aside. In a large heavy skillet, melt butter. Add walnuts and pecans; cook over medium heat until nuts are toasted, about 4 minutes., Sprinkle with spice mixture. Add the brown sugar, water, Worcestershire and hot sauce. Cook and stir for 1-2 minutes or until sugar is melted. Spread on foil to cool. Store in an airtight container.

1/2 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
4-1/2 teaspoons water
2 cups mixed nuts

Steps:

  • In a microwave-safe bowl, combine the first six ingredients. Stir in the water. Microwave, uncovered, on high for 45 seconds; stir. Add nuts and stir until well-coated. Cook, uncovered, on high for 3-4 minutes or until syrup begins to harden, stirring after each minute. Immediately pour onto a greased foil-lined baking sheet and separate nuts. Cool completely. Store in an airtight container.
