OATMEAL SCOTCHIES COOKIES (GIFT MIX IN A JAR)
Gift jar directions at bottom of the recipe - add onto a recipe card and attach to the gift! Or skip the gift making and indulge yourself with this treat!! NOTE: This recipe is to be prepared one QUART size wide mouth canning jar and will yield 3 dozen cookies.

Steps:
- Creating the Gift in a Jar:
- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the sugar, flour, salt, cinnamon, baking soda, oatmeal, brown sugar, butterscotch chips and then walnuts - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- OATMEAL SCOTCHIES COOKIES GIFT TAG:
- Additional ingredients to be added by the recipient: 1/2 cup butter, softened, 1 egg and 1 tsp vanilla extract.
- COOKIE INSTRUCTIONS:
- Preheat oven to 375.
- In a large bowl, blend the butter, egg and vanilla extract.
- Add the contents of the jar, and stir until well mixed.
- Drop the dough by heaping teaspoonfuls onto an ungreased baking sheet, spacing the cookies about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are light brown in color.
- Allow to cool for 2 minutes on the baking sheet, then transfer to wire racks and cool completely.
- Serve immediately or store in an airtight container for up to 1 week.
COUNTRY OATMEAL COOKIE IN A JAR
My boyfriend and I made 2 dozen of these jars as Christmas gifts this year, and they were a big hit. You can substitute raisins for chocolate chips, but the chocolate makes for a nice change.

- Using a 1 quart or 1 liter jar, layer in the ingredients in the order given. Pack down the jar after each addition. Put the lid on, and cover with an 8 inch circle of fabric. Secure the fabric over the lid using a rubber band, then cover the rubber band by tying a nice piece of ribbon or raffia around the lid. Attach a tag to the ribbon with the following instructions:
- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together 3/4 cup of softened butter, with 2 eggs and 1 teaspoon of vanilla. Add the entire contents of the jar, and mix by hand until combined. Drop dough by heaping spoonfuls onto an unprepared cookie sheet. Bake for 12 to 15 minutes in the preheated oven.

- Cream butter and sugars.
- Add eggs and vanilla.
- Add flour, soda and spices.
- Stir in oats and morsels.

- In a mixing bowl, beat the butter, brown sugar, white sugar, egg, and vanilla extract until well combined. Beat in flour, baking soda, salt, cinnamon, nutmeg, and rolled oats until thoroughly mixed. Stir in the butterscotch chips and coconut.
