BACON FETA PENNE PASTA #RAGU
Ragú® Recipe Contest Entry. This Bacon Feta Penne Pasta is decadent and delicious! Penne pasta tossed in a cheesy, creamy sauce with feta and bacon. It's a perfect weeknight dinner.

Steps:
- Cook pasta as directed on package.
- While the pasta is cooking, cook the bacon as desired. (I like to bake at 400 degrees for 15 minutes.
- Mix 4oz Feta with the Ragu® Creamy Mozzarella sauce and simmer over low heat to warm.
- Once the pasta is fully cooked, combine the noodles and sauce.
- Transfer pasta to a 9x13 baking dish.
- Top with remaining feta, breadcrumbs, and diced bacon.
- Place under the broiler on HI for 2-4 minutes, just until the feta is golden brown. Watch carefully so it does not burn.
- Season with salt and pepper and serve warm.

- Place bacon in a large skillet over medium-high heat. Fry for a few minutes, then add the leeks. Cook and stir until bacon is crisp and leeks are tender. Set aside.n
- Melt the butter in a saucepan over medium heat. Whisk together the flour and milk, then pour into the saucepan with the butter. Bring to a boil and cook, stirring constantly, until thickened. Remove from the heat and stir in the feta cheese. Mix in bacon and leeks, then season with pepper to taste. Serve over your favorite pasta.n

BAKED FETA PASTA
Try your hand at this easy vegetarian pasta bake - sweet roasted cherry tomatoes offer a delicious contrast with soft, tangy feta

- Heat the oven to 200C/180C fan/gas 6. Toss the tomatoes, oil, chilli flakes and garlic together in a medium baking dish. Roast for 15 mins, then nestle the block of feta into the middle of the dish. Season everything well and bake for a further 20-25 mins, or until the feta is turning golden and the tomatoes have softened and turned jammy.
- Cook the pasta following pack instructions, then drain, reserving a mugful of the cooking water. Remove and discard the garlic cloves from the baked feta, then break up the cheese using a fork. Tip the pasta into the dish along with a splash of the reserved cooking water, and gently toss to combine with the cheese and tomatoes - the pasta should be well-coated in a creamy, cheesy sauce. Add another splash of the cooking water to loosen, if needed. Season well with black pepper, then scatter over the basil to serve.

I'm showing you my take on domatokeftethes. These are incredibly delicious, versatile, and inexpensive, and they make a perfect summertime appetizer. Serve with freshly squeezed lemon, tzatziki sauce, or just plain Greek yogurt seasoned with raw minced garlic and lemon juice to taste.

- Stir together tomatoes, zucchini, green onions, kosher salt, sugar, black pepper, oregano, and cayenne in a bowl to combine.
- Let sit for 15 minutes for the sugar and salt to draw out liquids from the vegetables.
- Stir the tomato mixture; add parsley, mint, and basil. Crumble in feta cheese. Add flour and baking powder; mix with a spoon until combined. Batter should be relatively loose but will hold its shape on a spoon. If too loose, add more flour; if too dry, add some water until desired consistency is reached.
- Wrap the bowl in plastic wrap and let chill in the refrigerator for at least 30 minutes.
- Heat 1 inch of vegetable oil in a frying pan over medium-high heat to 350 degrees F (175 degrees C), or use a deep fryer.
- Place heaping tablespoonfuls of batter in the hot oil; reduce heat to medium. Fry until golden brown and cooked through, 2 to 3 minutes per side. Flip once more and fry for an additional 30 seconds, if desired. Serve warm or at room temperature.

Steps:
- Sauté chopped bacon in heavy large pot over medium-high heat until fat is rendered, about 5 minutes. Add onions, mushrooms, garlic and oregano and sauté until onions are soft, about 8 minutes. Add wine and bring to boil. Add beans and tomatoes with juices. Reduce heat to medium. Simmer until liquid thickens and flavors blend, stirring occasionally, about 25 minutes.
- Mix in pasta and 3/4 cup cheese and simmer 2 minutes. Season to taste with salt and pepper.
- Transfer pasta to large bowl. Serve, passing remaining cheese.
