This Salmon Pasta with Spinach is a deliciously easy pasta recipe with chunks of tender salmon and spinach in a scrumptious, creamy Parmesan sauce!

1 lb. salmon (skinless and boneless - one piece or multiple pieces)
8 oz. uncooked pasta (I use campanelle)
3 tbsp. butter
1 medium onion (chopped)
6 oz. baby spinach
1 cup heavy cream
1 cup Parmesan cheese (grated)
2 garlic cloves (minced)
2 tbsp. parsley (chopped)
salt and pepper (to taste)

Steps:

  • Cook pasta according to the package instructions. Meanwhile, sauté the onion in butter over medium heat for 4-5 minutes.
  • Add the salmon and keep cooking for another 5-7 minutes, breaking it into flakes as it cooks.
  • Add the spinach and cook it for 1-2 minutes, until wilted.
  • Add the heavy cream, Parmesan, garlic, salt, and pepper. Stir and bring to a gentle simmer.
  • Add the cooked pasta and chopped parsley. Mix everything together thoroughly.
  • Garnish with parsley and grated Parmesan. Serve.

¾ pound salmon fillet
2 tablespoons prepared pesto
2 cups dried whole wheat rigatoni pasta
1 tablespoon olive oil
1 (14 ounce) bag fresh baby spinach
3 cloves garlic, chopped
3 small shallots, chopped
¼ teaspoon crushed red pepper flakes, or to taste
ground black pepper to taste
1 (14 ounce) can artichoke hearts, drained
½ cup white wine
2 tablespoons prepared pesto
½ cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Coat salmon fillet with 2 tablespoons pesto. Place in a 9x13 inch baking dish.
  • Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.
  • Remove from oven and flake salmon into chunks; set salmon aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in rigatoni, and return to a boil. Cook uncovered, stirring occasionally, until rigatoni has cooked through, but is still firm to the bite, about 11 minutes. Drain in a colander.
  • Heat olive oil in a skillet over medium-low heat.
  • Cook and stir spinach in oil until wilted, 3 to 4 minutes. Remove spinach and set aside.
  • Cook and stir garlic, shallots, red pepper flakes, and black pepper in the same skillet until garlic and shallots are lightly browned, about 5 minutes. Pour in extra oil if needed.
  • Stir in drained artichoke hearts and cook until heated, about 3 minutes.
  • Pour in white wine and simmer until slightly reduced, 5 to 10 minutes.
  • Combine 2 tablespoons pesto, cooked spinach, salmon, Parmesan cheese, and cooked pasta in the skillet and lightly toss until mixed, 1 to 2 minutes.

8 ounces dry fettuccine pasta
¼ cup butter
1 cup milk
1 tablespoon all-purpose flour
1 cup freshly grated Parmesan cheese
½ pound smoked salmon, chopped
1 cup chopped fresh spinach

¼ cup chopped sun-dried tomatoes
½ cup chopped fresh oregano

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccine, and cook for 11 to 13 minutes or until al dente; drain.
  • In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
  • Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.

100g tagliatelle
1 tsp olive oil
1 garlic clove , finely chopped
50g spinach
75g cream cheese
zest and juice ½ lemon
75g smoked salmon , sliced
small handful basil , finely chopped

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large saucepan and cook the garlic for 1-2 mins until softened. Add the spinach and continue to cook until just wilted. Stir through the cream cheese, lemon zest juice and, and some black pepper.
  • Drain the pasta but reserve a few spoonfuls of the cooking water. Add the salmon, basil and pasta to the sauce, along with the cooking water to loosen it a little. Toss together and season with more pepper, to taste, before serving.

14.11 ounces ready-to-eat salmon (see *Notes below)
4.59 ounces spinach (finely chopped)
6.35 ounces pasta (enough for 4)
3 teaspoons butter
2 teaspoons flour
1 cup milk
½ vegetable stock cube
1 teaspoon Dijon mustard
3 tablespoons cream cheese
Fine sea salt and pepper to taste

Steps:

  • Use salmon leftovers or cook salmon from raw (see **Recipe Notes for instructions).Start by boiling the pasta al dente (according to packet instructions). Strain, reserve some of the water and set aside. In the meantime prepare the sauce.
  • In a large pan melt the butter, add the flour and whisk until the mixture is smooth. Add the milk, stock cube and mustard and whisk until the sauce thickens and starts bubbling. Remove from the heat, add the cream cheese and whisk in until smooth.
  • Stir in the spinach. Heat up the sauce again if needed but do NOT cook the spinach.
  • Add the pasta and salmon, season to taste, stir, drizzle over a little olive oil (optional) and/or lemon juice and serve.

fettuccine - 17.5 oz (500 g)
spinach - 17.5 oz (500 g)
salmon - 9 oz (250 g)
garlic - 3 cloves, crushed
olive oil - 2 tablespoons
lemon juice - 2 tablespoons
liquid cream - 1 cup (250 ml)
butter - 1 tablespoon
salt
black pepper
soya sauce - 4 tablespoons, light

Steps:

  • Salt the salmon and sprinkle it with black pepper , top it with soya sauce and let it season for 15 minutes. Heat a little oil in a pan and then fry evenly on both sides. Once slightly cooled, cut it into pieces.
  • Boil the fettuccine in salted water and drain them. Mix them while still warm with 1 tablespoon butter. Heat the olive oil in a pan on the stove and fry the chopped garlic . Gradually pour in the cream and once the sauce boils, season it with salt, pepper and lemon juice. Simmer for a few minutes and remove it from the heat.
  • Blanch the spinach in salted water until reduced in volume. Distribute it in deep plates as a base, put fettuccine on top, then salmon pieces and add the cream sauce.

1/4 cup butter
2 tablespoons flour (I used brown rice flour)
2 cups milk
1 cup parmesan cheese, freshly grated
1 cup monterey jack cheese, sliced
2 (7 ounce) cans salmon (or a pound of cooked salmon)
2 cups fresh spinach, julienned
1/2 cup sun-dried tomato
1/2 cup fresh oregano, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook for 11 to 13 minutes or until al dente; drain.
  • In a medium saucepan over medium heat, melt the butter add the flour and whisk constantly until it bubbles and is smooth.
  • Gradually stir in the milk and cheeses whisking continously until smooth.
  • Crumble salmon into the butter mixture.
  • Stir in the spinach, sun-dried tomatoes, and oregano.

1 pound dried bow tie pasta (, or farfalle)
2 cups chopped asparagus spears (, cut into 1-inch pieces)
2 cups heavy cream
2 Meyer lemons (, zested (use 2-3 regular lemons if you can't find Meyer lemons))
½ cup freshly grated Parmesan cheese
1/8 cup fresh dill (, chopped, plus more for serving)
2 cups flaked, cooked salmon
kosher salt and freshly ground pepper

Steps:

  • Bring a large pot of water to boil and cook the bow tie pasta according to package directions until al denté.
  • When noodles are done cooking, use a slotted spoon to transfer the pasta to a colander, reserving the pasta cooking water in the pot. Reheat the pot of water over medium heat and add the chopped asparagus spears, cooking until they turn bright green, about 1-2 minutes, then transfer to the same colander as the pasta. You want the asparagus to still have a snap to but not taste raw.
  • While the pasta and asparagus are cooking, pour the cream into a 12-inch skillet and bring to a boil, then reduce to simmer and cook until reduced by half and the cream easily coats the back of a spoon.
  • Add the lemon zest, Parmesan cheese, fresh dill and cooked salmon to the cream and stir until the Parmesan is melted into the cream and the salmon is warmed through. Season with kosher salt and freshly ground pepper.
  • Add the cooked bow tie pasta to the skillet and toss to coat. Add more salt and pepper if desired, and top with more Parmesan cheese and dill if desired. Serve immediately.
