- Add butter, milk and sugar to a large saucepan and bring to a boil. Remove from heat.
- Stir in oats, vanilla extract, coconut and salt. Drop by teaspoonfuls on to wax paper. Cool completely. Enjoy once firm.

- Bring to a rolling boil for 2 minutes: sugar margarine, milk, and cocoa.
- Remove from Heat.
- Add: vanilla, quick oats, coconut and salt.
- Drop by teaspoonful onto wax paper.

No-bake cookie. Chocolate and oats. Nuts optional. *I haven't tried these with the coconut and walnuts, it is excellent without! Also try half cocoa half peanut butter. I made some with 2/3 cocoa and 1/3 peanut butter and they were so good.

Steps:
- Put the butter or margarine, sugar and milk into the saucepan. Heat on medium, stirring often, until it comes to a boil. Remove pan from heat.
- Add all remaining ingredients. Stir well. Drop by rounded teaspoonfuls onto the waxed paper. Cool completely.
- Store in a container with a lid and waxed paper between the layers. Makes about 40 cookies.

I recently have discovered fiddlehead ferns. I could not find a recipe for them so, I made one up. These are so yummy that I can eat the whole dish in sitting! Great served with fish.

- Bring a large pot of salted water to a boil. Cook fiddlehead ferns in the boiling water until barely tender, 7 to 10 minutes; drain.
- Heat olive oil in a large skillet over medium-high heat. Stir in the prepared fiddlehead ferns, garlic, and the salt and pepper. Cook and stir until ferns are tinged lightly brown and tender, about 5 minutes. Remove from heat and sprinkle with lemon juice.
