1 bag (10 ounces) mixed baby greens or Italian-blend salad greens
1 avocado, pitted, peeled and sliced
1/3 cup pistachio nuts
1/4 cup dried cranberries

Steps:

  • In small bowl, beat all Balsamic Vinaigrette ingredients with wire whisk until smooth.
  • In serving bowl, toss vinaigrette and all Salad ingredients just before serving.

2 medium apples, cut into 3/4-inch pieces
2 tablespoons crumbled feta cheese
LEMON HONEY SALAD DRESSING:
4 teaspoons lemon juice
2-1/2 teaspoons honey
3/4 teaspoon fat-free reduced-sugar vanilla yogurt
1 teaspoon canola oil
1/4 teaspoon minced fresh garlic
Dash salt
Dash white pepper
Dash ground nutmeg

Steps:

  • In a large salad bowl, combine the salad greens, apple and feta cheese. In a jar with a tight-fitting lid, combine the salad dressing ingredients; shake well. Drizzle over salad; toss to combine.

2 packages (5 ounces each) spring mix salad greens
2 large apples, chopped
2 cups bagel chips, coarsely crushed
1-1/2 cups honey-roasted peanuts
1 cup (4 ounces) crumbled blue cheese
DRESSING:
1/3 cup sugar
1/3 cup canola oil
1/4 cup cider vinegar
1 tablespoon poppy seeds
1-1/4 teaspoons dried minced onion
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Steps:

  • In a large salad bowl, combine the first five ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

I created this one night with what I had on hand. Simple and yummy, and a change from the same old tossed salad.

mixed baby greens, of your choice
1 large apple, diced (I use Gala)
1/2 cup dried cranberries
3/4 cup walnuts, toasted and chopped
1/3 cup parmesan cheese, shaved or shredded not grated
1/4 cup walnut oil
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • Mix greens, apple, cranberries, and walnuts in large bowl.
  • Mix dressing ingredients in small bowl, pour over salad. Toss. Sprinkle parmesan on top.
  • Can substitute bleu cheese crumbles for the parmesan, if desired. Can also add a bit of red onion, if you like (I don't).

1/2 cup walnut pieces
1 Red Delicious apple
1 granny smith apple
2 ounces goat cheese
4 ounces raspberry vinaigrette dressing
1 tablespoon lemon juice

Steps:

  • Chop walnuts.
  • Toss greens with walnuts in a medium-size serving bowl.
  • Core and cut apples into slices.
  • Spritz apples with lemon juice to keep them from browning.
  • Arrange apples on top of the greens.
  • Crumble goat cheese on top of the salad.
  • Serve with raspberry vinaigrette.

  • When I'm making this for a big group, I prep by cutting up the apples and avocado and squeezing a little lemon juice and leaving them in the same prep bowl with the mandarin oranges to prevent them from browning.
