EASY CHICKEN BALTI RECIPE
Easy Chicken Balti Recipe, a delicious chicken curry that is ready in about 30 minutes. Cooked in a fantastic blend of Indian spices, this homemade chicken balti is as good as the restaurant version. The balti sauce is beautifully spiced, but not overly spicy, and the chicken pieces are cooked to perfection to recreate a delicious Indian dish.

Steps:
- Heat up the oil in a pan set over a low to medium heat.
- Peel and chop the onions, and fry until soft and golden.
- Add the chopped tomatoes, garlic puree, ginger, garam masala, chilli powder, cinnamon stick, peppercorns and cardamom pods and stir well.
- Leave to cook for about 5 minutes or until the tomatoes are mushy.
- Cut the chicken breasts into chunks, then add them to the curry sauce.
- Stir well to coat, then leave to cook for about 15 minutes or until the liquid is released, and the chicken is cooked through.
- Add the yogurt and lime juice, and leave to cook for a further 2-3 mintues.
- Garnish with chopped coriander (cilantro).

BALTI CHICKEN CURRY

- In a large heavy bottomed skillet (cast iron preferred), heat the oil over medium heat until hot but not smoking. Add the onions and chopped tomatoes and stir-fry until soft. Stir in the green chiles, ginger, garlic, peppercorns, chili powder and garam masala and cook for another 5 minutes to bring out the aroma of the spices.
- Add the chicken (whole breasts or chopped) and cook for 5 minutes turning frequently. Stir in the chicken stock and cook until all the flavors have combined, about 10 to 12 minutes. Add the tomato paste and stir, which will help thicken the sauce. Remove from the heat and add the vanilla yogurt, cilantro and lemon juice. Season with salt and pepper and let it rest for another 5 minutes until all the flavors meld. Transfer to a serving bowl and serve with Basmati Rice and Naan Bread, if desired.

- Heat the oil in a large pot over high heat. Add chicken and 2 tablespoons Tasty™ Fiery Seasoning Mix and stir to coat. Cook until the chicken is no longer pink, 5-6 minutes, then remove from the pot.
- Add the yellow and orange bell peppers, and red onion to the pot and toss well to combine. Cook until the onion is translucent, 5-7 minutes.
- Return the chicken to the pot with the milk and pasta. Be sure to stir occasionally to prevent the pasta from sticking together. Cook for about 20 minutes, until the pasta is al dente and the liquid has reduced to a thick sauce that coats the pasta.
- Add the spinach, mozzarella, and parmesan cheeses and stir until melted.
- Serve warm.
- Enjoy!

SWEET AND SOUR BALTI CHICKEN
This is my family's favourite. Hardly a weekend goes by without my having to cook this one up. You can make it as fiery as you like but two green chillies is about right for us .Gorgeous!

- Blend together tomato puree, yogurt,garam masala, chilli powder, garlic, mango chutney, salt and sugar.
- Heat oil in a karahi or wok then add mixture.
- Lower heat and cook for two minutes,stirring occasionally.
- Add the chicken and stir until it is well coated in the mixture then add the water.
- Continue cooking for about 5- 7 mins until the chicken is tender.
- Stir from time to time.
- Add green chillies, chopped coriander and milk, stir in and cook for another two minutes.
- Serve with rice or warm Indian breads.
BALTI CHICKEN PASANDA
This dish is very popular in Pakistan and becoming increasingly so in the West. I truly love it. I like it with plain basmati rice and a cucumber-tomato salad.

- Combine Greek yogurt, ground almonds, garam masala, garlic, ginger, chili powder, salt, cumin seeds, cinnamon stick, cardamom pods, and peppercorns in a medium bowl. Mix until a smooth paste forms. Add chicken pieces and mix well to coat. Marinate for at least 2 hours.
- Heat oil in a large skillet. Add onions and cook until softened, 2 to 3 minutes. Add chicken and marinade and blend well with the onions. Cover skillet and simmer over medium heat until sauce thickens and chicken is cooked through, 12 to 15 minutes. Add chile peppers and 2 tablespoon cilantro. Pour in cream and bring to a boil. Reduce heat and simmer for 1 to 2 minutes.
- Garnish servings with more fresh cilantro.

- Stir together 1 teaspoon cooking wine and 1/2 teaspoon salt in a bowl; add the chicken and stir to coat. Allow to marinate 2 to 3 minutes. Place the marinated chicken in a large, sealable plastic bag with the cornstarch and shake to coat.
- Heat the peanut oil in a wok or large skillet over high heat. Fry the chicken in the oil until it begins to crisp around the edges, 7 to 10 minutes. Remove the chicken to a paper towel-lined plate to drain. Reserve 2 tablespoons of the oil, discarding the rest.
- Reheat the reserved oil in the wok over medium-high heat; cook and stir the garlic, ginger, and green onions in the oil until fragrant, about 1 minute. Add the green chilies, crushed dried chilies, and Szechuan peppercorns; continue frying about 20 seconds more. Return the chicken to the wok; stir in the soy sauce, 2 teaspoons cooking wine, sugar, and 1/2 teaspoon salt until thoroughly combined. Remove from heat and serve immediately.

Steps:
- Melt the butter with the oil in a large saucepan and fry the cinnamon and cumin for a few seconds.
- Add the onions and cook until golden brown, stirring regularly.
- Stir in the garlic, ginger and chili pepper and cook for 2-3 minutes, stirring.
- Stir in the tomatoes and cook until the oil separates from the onions.
- Add the chicken pieces and cook in the sauce until the meat is colored and sealed on all sides.
- Sprinkle over the chilli powder, cumin, coriander, curry powder, garam masala, salt and pepper.
- Stir in the lemon juice then add the water and tomato puree.
- Bring the curry to a gentle simmer and cook for about 45 minutes or until the chicken is tender, stirring occasionally. Alternatively, spoon carefully into a large casserole dish and cover. Cook in the center of a preheated oven at 350F/180C/Gas 4 for 45 minutes.
- Garnish with lots of fresh coriander.
