An easy casserole that can be doubled for a crowd. We like it spicy so we use medium or hot salsa. I use chipotles in adobo sauce (chopped) for the corn bread topping. Ground turkey can be subbed for the ground beef if you prefer. The recipe is from a junior league cookbook.

1/3 cup milk
1 egg
1/2 cup sour cream
1/4 cup butter, melted
3 chipotle chiles, seeded and chopped
1 (4 ounce) package corn muffin mix
1 lb ground beef
1 1/3 cups chpped green peppers
1/3 cup chopped onion
1 garlic clove, minced
1 cup mild chunky salsa
1 cup frozen corn kernels
1 (1 1/4 ounce) envelope taco seasoning mix
1/2 cup cheddar cheese

Steps:

  • Cornbread Topping: Mix the milk, egg, sour cream, melted butter and chilies in a bowl. Add the corn muffin mix and stir until just combined.
  • Fiesta Pie: Brown the ground beef stirring until crumbly; drain and set aside. In the same pan, cook the bell pepper, onion, and garlic until tender.
  • In a medium bowl, stir together beef, vegetables, salsa, corn and taco seasoning mix. Spoon into an 8x8 baking dish. Spoon the cornbread mixture over the top.
  • Bake at 375º for 30-40 minutes or until a toothpick inserted in the cornbread comes out clean. Sprinkle the Cheddar cheese over the cornbread and place back in oven for 5-10 minutes or until cheese is melted.
  • Cook's Note ~ The corn bread topping can also be made into muffins. Fill muffin tins half full and bake at 375º for 15 minutes.

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup low-fat buttermilk
1 tablespoon adobo sauce
1 tablespoon honey
2 large eggs
1 chipotle pepper, minced
1/2 stick butter, melted
1 cup shredded sharp Cheddar

Steps:

  • Preheat the oven to 350 degrees F. Coat an 8-by-8-inch baking dish with nonstick spray. Set aside.
  • Mix the cornmeal, flour, baking powder and salt in a large bowl.
  • Whisk together the buttermilk, adobo, honey, eggs, chipotle pepper and butter in another bowl. Add the wet ingredients to the dry ingredients and stir until just mixed. Stir in the cheese.
  • Pour the batter into the prepared baking dish. Bake until golden, 25 minutes. Cut into squares and serve.

2 tablespoons safflower oil
1 onion, minced (about 1 1/4 cups)
2 carrots, cut into a 1/4-inch dice (about 1 cup)
4 cloves garlic, minced (about 2 tablespoons)
Coarse salt
2 tablespoons chili powder
2 tablespoons tomato paste
2 pounds 85 percent-lean ground beef
1 can (14.5 ounces) whole peeled tomatoes, chopped, juices reserved
1 can (15.5 ounces) pinto beans, rinsed and drained
3/4 cup all-purpose flour
3/4 cup fine yellow cornmeal
1 tablespoon sugar
1 1/2 teaspoons coarse salt
1 1/2 teaspoons baking powder
1 cup buttermilk
2 large eggs, lightly beaten
2 tablespoons unsalted butter, melted

Steps:

  • Filling: Preheat oven to 400 degrees. Heat oil in a large ovenproof saute pan over medium-high heat. Add onion, carrots, and garlic, and season with salt. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Add chili powder and tomato paste; cook, stirring, 30 seconds.
  • Stir in beef and cook, breaking up with the back of a spoon, until no longer red, about 5 minutes. Add tomatoes with their juices and beans, bring to a boil, and cook 2 minutes. Remove from heat.
  • Topping: Whisk together flour, cornmeal, sugar, salt, and baking powder in a large bowl. Whisk in buttermilk, eggs, and butter. Spoon mixture over top of filling, spreading almost to edges of pan.
  • Transfer to oven and bake until a tester inserted in topping comes out clean, about 20 minutes. Let rest 20 minutes before serving.

1 box Betty Crocker™ Seasoned Skillets® hash brown potatoes
4 cups very hot water
2 tablespoons margarine, butter or spread, melted
1 egg, slightly beaten
2 cups shredded Colby-Monterey Jack cheese (8 ounces)
2 small jalapeño chiles, seeded and finely chopped
1 small red bell pepper, finely chopped (1/2 cup)
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
2 eggs
2/3 cup milk
Shredded lettuce, if desired
Sour cream, if desired
Sliced chile peppers, if desired

Steps:

  • Heat oven to 375°F. Cover potatoes with water. Let stand 15 minutes; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mixture on bottom and up side of ungreased pie plate, 9x1 1/2 inches. Bake 20 minutes.
  • Reduce oven temperature to 350°F. Sprinkle half of the cheese, finely chopped chiles and bell pepper in potato crust; repeat. Beat flour, salt and 2 eggs until blended; stir in milk. Pour over cheese mixture.
  • Bake about 35 minutes or until center is set and top is golden brown. Let stand 10 minutes before cutting. Garnish with shredded lettuce, sour cream and sliced chile peppers.

1 1/2 lbs ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) can whole kernel corn
1 (16 ounce) can Mexican style pinto beans
1 (16 ounce) can black beans
1 (16 ounce) can nacho cheese
2 cups shredded cheddar cheese
diced onion (optional)
chopped fresh cilantro (optional)
diced tomato (optional)
chili peppers (optional) or pepper, of your choice (optional)
sliced olive
1 1/2 cups white flour
1 1/2 cups cornmeal
1/2 cup sugar
2 tablespoons baking powder
2 teaspoons salt
1 egg
1 1/2 cups buttermilk or 1 1/2 cups milk, works too

Steps:

  • Preheat oven to 375.
  • Brown ground beef and add taco seasoning according to package directions.
  • Drain grease and spread ground beef in a layer across a 9x13 casserole dish.
  • Add a layer of nacho cheese, and spread 1/2 of the shredded cheese in a layer.
  • Mix the corn and the beans together and add them in as a layer.
  • If you are using any of the optional filling ingredients, mix them together and add them as a layer now.
  • Add the remaining cheese in a layer. Set this dish aside while you mix the cornbread using the directions below in Step 12.
  • Once your cornbread batter is prepared, carefully spread the batter in an even layer across the top of your dish. If you want to get extra fancy, you can pipe the batter layer and create pretty designs for your crust.
  • Bake at 375 for 30-35 minutes, or until a golden brown crust forms and a toothpick inserted into the center comes out clean.
  • Optional: Melt 2 tbsp butter with 1 clove of peeled, crushed garlic and 1 tsp sugar to make a sweet and flavorful garlic butter to brush on the cornbread as it comes out of the oven.
  • Allow to cool 5-10 minutes, then chow down.
  • Cornbread Instructions:.
  • Mix all dry ingredients together in a bowl, then add the egg and buttermilk, one at a time, forming a medium-thick batter.

This is a dish that I make about twice a month. My family loves this served with fresh cantaloupe and spanish rice.

1 onion, chopped
1 1/2 lbs ground beef
1 package taco seasoning mix
1 package medium flour tortilla
1 (16 ounce) can refried beans
taco sauce
1 (4 ounce) can peeled and chopped green chilies
2 cups shredded taco cheese (colby and monterey jack)
2 cups crushed tortilla chips
2 medium tomatoes, chopped

Steps:

  • saute onion in a small amount of oil until tender.
  • Add beef and brown, stirring.
  • Drain grease from meat and add taco seasoning packet along with 1/3 cup of water.
  • simmer, stirring occasionally.
  • Meanwhile, place 3 flour tortillas on bottom of a 9 inch pie pan, spreading tortillas out to cover the entire bottom of the pan.
  • Spread 1/2 of the refried beans over the tortillas.
  • Add 1/2 of the green chilies.
  • Cover with half of the meat mixtureand 1 cup of the cheese.
  • Repeat the layers and top with cruched tortilla chips.
  • Bake at 350 degrees for 30 minutes.
  • top with chopped tomatoes and serve with taco sauce, if desired.

It makes a good Sunday night meal or great for the sports fan to munch on while cheering for their favorite team. This is a good recipe to use any Chili you have made and put in the freezer or you can use the canned.

1 (11 ounce) can corn niblets (or Mexican-style corn, drained )

1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese

I hope you enjoy this as much as we did. It's a quick and easy one dish meal. I always fix up a salad to go with it. This recipe has lots of possibilities. You could add green beans and potatoes to the mixture as well.Addition: I have realized that I did leave out an ingredient in the topping. I found the recipe and looked and--sure enough, you need milk.
