MUSHROOM SAUCE

See in post for more uses!Luxurious yet simple, the key here is getting complexity into the sauce using wine, parmesan and broth. Steps:
- Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
- Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
- Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
- Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
- Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
- Stir through thyme, adjust salt and pepper to taste. Remove from stove.
- Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

Since this savory sauce uses beef broth, instead of the pan drippings, it can be made ahead. Add arrowroot only when ready to serve. I usually use white mushrooms; I have also used chanterelles.

Steps:
- In a medium saute pan, melt 1/4 cup butter over medium heat. Add sliced mushrooms; cook and stir until soft. Remove mushrooms from pan, and set aside.
- Add 1 tablespoon butter to pan, and melt . Add shallots; cook and stir until translucent. Add mushrooms, and cook until soft. Add thyme, bay leaf, and red wine. Reduce.
- In a small bowl, dissolve arrowroot in 1/4 cup cold beef broth. Stir remaining broth into sauce, and bring to a boil. Whisk in arrowroot mixture, and stir until thick. Add reserved mushrooms. Season to taste with freshly ground black pepper and salt.

MUSHROOM SAUCE FOR BBQ MEATS
For this recipe use either the cottage cheese or sour cream - you really can tell very little difference. Make in advance, if you wish and just reheat. I don't like my sauce too thick but add a bit more flour if it is too thin for your liking. Add garlic, hot peppers whatever you fancy, this is just the base recipe.

Steps:
- Melt butter in a frypan and saute the mushrooms for about 3 minutes.
- Blend in the flour, salt, pepper, thyme& chives.
- Meanwhile dissolve the beef cube in the boiling water and stir into the frypan mixture Keep stirring until the mixture comes to a boil and thickens.
- Take pan off the heat and stir in the cottage cheese (sour cream).
- Keep warm and serve with BBQ meats, chicken.

- Cut out 12 squares of aluminium foil, about 20cm square a piece.
- Divide into four piles of three squares each to give you plenty of layers of foil between the food and the grill.
- Oil and butter the top half of one square on each pile.
- Divide the mushrooms equally over the greased foil.
- Scatter over the garlic, chives, salt and pepper and dot with butter.
- Fold the foil around the mushrooms into a sealed packet.
- Cook for 10 minutes over a medium-hot BBQ, turning after 5 minutes.
- Serve straight from the foil.

STEAK TIPS WITH MUSHROOM SAUCE

- Preheat an outdoor grill for medium-high heat. Melt butter in a large skillet over medium-high heat. Sautee the shallot until transparent, then add mushrooms, and cook, covered, until darkened, about 5 minutes. Remove mushrooms from pan, and set aside. Deglaze the pan with one can of beef broth, and burgundy wine. Increase heat, and bring to a boil. Allow the mixture to boil until it has reduced by 1/3.
- Grill the sirloin tips to desired doneness. Season with salt and pepper if desired. Remove to a plate, and set aside.
- When the sauce is reduced, stir in the other can of beef broth, and garlic. Return to a boil, and continue to cook for another 5 to 10 minutes. Sauce will be thin like au jus. Whisk in flour, and cook until the sauce is the desired thickness. Taste and adjust seasoning if necessary. Stir in the mushrooms. Serve tips with mushroom sauce spooned over.
