Impress your guests by serving this appetizer in a martini glass or other fancy stemware. I make this every time I have a fancy dinner party and it's always a big hit.-Linda Stemen, Monroeville, Indiana

1 pound peeled and deveined cooked medium shrimp
1 medium tomato, chopped
1/2 cup Italian salad dressing
1 can (4 ounces) chopped green chilies
3 green onions, thinly sliced
2 tablespoons minced fresh cilantro
2 teaspoons honey
1/8 teaspoon hot pepper sauce
Romaine leaves

Steps:

  • Place the first eight ingredients in a large bowl; toss combine. Refrigerate, covered, at least 1 hour., Line six cocktail glasses or serving dishes with romaine leaves. Using a slotted spoon, place about 1/2 cup shrimp mixture in each.

1 jar Crosse & Blackwell® Zesty Shrimp Sauce
1 jar Crosse & Blackwell® Seafood Cocktail Sauce
2 cream cheese, softened
1 pound cooked shrimp, chopped
1/2 cup kalamata olives, pitted and chopped
1/2 red bell pepper, finely chopped
1 bunch green onions, finely chopped
1 jalapeño chile pepper, seeded & minced

Steps:

  • 1. SPREAD cream cheese over large platter; top with shrimp sauce.
  • 1. Try serving with colored tortilla chips for an elegant presentation.
  • 2. SPRINKLE with remaining ingredients. Cover and chill until served.

Spice up cooked shrimp by marinating in lime, cilantro and anaheim pepper. For even more heat, substitute 2 to 4 tablespoons chopped jalapeno pepper for the anaheim pepper.

2 cloves garlic, minced
½ teaspoon finely shredded lime peel
¼ cup lime juice
2 tablespoons olive oil
2 tablespoons finely chopped green onions
¼ cup chopped fresh Anaheim pepper
1 tablespoon snipped cilantro or parsley
½ teaspoon sugar
½ teaspoon salt
¼ teaspoon pepper
Lettuce leaves (optional)
1 medium papaya and/or mango peeled, seeded, and sliced

Steps:

  • Thaw shrimp, if frozen. Peel and devein shrimp. In a medium saucepan bring 4 cups water to boiling. Add shrimp. Simmer, uncovered, for 1 to 3 minutes or until shrimp turn pink, stirring occasionally. Rinse under cold running water; drain. Set aside.
  • In a heavy plastic bag set in a medium bowl combine garlic, lime peel, lime juice, olive oil, onion, anaheim pepper, cilantro or parsley, sugar, salt, and pepper; mix well. Place cooked shrimp in the bag; seal bag. Turn bag to coat shrimp with marinade mixture. Marinate in the refrigerator for 2 to 3 hours, turning the bag occasionally.
  • To serve, drain the shrimp, discarding the marinade. If desired, line a large platter with lettuce leaves and arrange papaya or mango slices around outer edge. Place shrimp in center of platter.

1/4 cup lime juice
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon vegetable oil
1 teaspoon bottled minced garlic
1 teaspoon honey
1/2 teaspoon grated lime rind
1 medium jalapeño pepper, seeded and finely chopped
1 package Keebler® Toasteds® wheat cracker

Steps:

  • 1. Thaw shrimp, if frozen. In large saucepan bring 4 cups water to boiling. Add shrimp. Simmer, uncovered, for 1 to 3 minutes or until shrimp are opaque, stirring occasionally. Rinse under cold running water. Drain well.2. In large re-sealable plastic bag combine shrimp, lime juice, onion, cilantro, oil, garlic, honey, lime peel and jalapeno pepper. Seal bag. Set in shallow pan. Refrigerate for 2 to 8 hours, turning bag occasionally.3. Drain shrimp mixture. Serve on crackers.
