FIESTA ONIONS
Handed down from my mother. This is a great salad for onion lovers and even those who don't care much for onions. I always get requests for this recipe. I prefer served at room temperature, but it holds well in the fridge a couple of days. Goes with any meal.

Steps:
- Combine vinegar and water in a large bowl. Whisk sugar into the vinegar mixture until dissolved. Add onion slices and marinate at least 3 hours; drain.
- Whisk mayonnaise, celery seed, salt, and pepper together in a separate bowl; add to drained onion slices and fold to coat. Marinate at least 2 hours before serving.

- In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. Top with the olives, tomatoes, onions and lettuce if desired. Serve with tortilla chips.

FREAKY FAST FIESTA DIP
Andrew came home for the holidays on a very quick trip. While gathering around the kitchen snack bar munching he said, 'Hey, wanna try one of my recipes?' He proceeded to throw this dish together while we all visited and watched. What a great surprise when it was finished. He made it again the next night and again, it was gone in minutes. A very colorful and tasty treat enjoyed by all! Serve with tortilla chips.

Steps:
- Take a large platter and spread out a layer of refried beans on the bottom. Combine the avocados, lemon juice, salt and pepper and spread the mixture on top of the beans. Combine the sour cream and chipotle. Spread that mixture on top of the avocado mixture. Chop and combine the green onions, tomatoes and olives. Spread the mixture in a ring around the outside of the platter. Garnish the top with cheddar cheese and serve with tortilla chips.

This is similar to a recipe by Tastefully Simple. I use their Fiesta Party Dip Mix but zaar decided I had to have all of the ingredients to post the recipe so I estimated the spices. Delicious! Servings are estimated.
