Milk and honey goes all grown up in this Italian-inspired appetizer that is every bit as comforting as the childhood favorite. In a quick half hour you can prepare a cheese platter fit for the gods, with assertive blue cheese and deeply sweet figs made more luxurious with the addition of a rich balsamic syrup drizzle amped up by a touch of honey. If blue cheese isn't your thing, substitute a fresh goat cheese and sprinkle it, or the heated sweet balsamic-honey syrup, with some fresh thyme. Either way, you have a delicious cocktail party bite that screams luxury. Toasting the walnuts is key here for a mellow nutty topping, as raw walnuts can have a harsher bite. As a time saver, toast the crostini a day or 2 ahead of time and store in an air-tight container until ready to use.

4 oz French bread cut into 16 slices
6 Tbsp Balsamic vinegar
1.5 Tbsp Honey
16 tsp Blue cheese crumbled, (5 Tbsp plus 1 tsp)
1 cup(s) Arugula lightly packed (32 baby leaves)
4 medium Fresh fig(s) quartered
2 Tbsp Chopped walnuts toasted

Steps:

  • Preheat oven to 325°F. Coat a cookie sheet with cooking spray.
  • Place bread on prepared cookie sheet and lightly coat with cooking spray; bake until lightly browned and crisp, about 10 to 13 minutes.
  • Meanwhile, put vinegar in a large nonstick skillet; bring to a boil over medium-high heat. Reduce heat to low; simmer, stirring occasionally, until mixture thickens slightly and reduces to about 2 1/4 Tbsp, about 2 minutes. Remove from heat; stir in honey.
  • To assemble crostini, spread each piece toast with 1 tsp blue cheese; top with 2 arugula leaves and a fig quarter. Drizzle with balsamic-honey mixture; sprinkle each with 1/2 tsp walnuts.
  • Serving size: 1 crostini per serving.

1 tbsp olive oil
2 shallots, minced (about 1/3 c) ((can substitute red onion))
16 dried figs (about 2 cups), diced
1/3 c balsamic vinegar
1 tbsp honey, optional
1 baguette, sliced and toasted
1 cup crumbled blue cheese (or cambozola) ((can substitute goat cheese))
1 bunch arugula

Steps:

  • In a nonstick skillet over medium heat, combine oil and shallot; sauté until shallots are coated and beginning to soften (but not brown)
  • Add diced figs and vinegar and sauté for another 2-5 minutes or until figs soften and the glaze begins to thicken (if you are using the honey, add it now).
  • Sprinkle cheese on each crostini, evenly distributing it over the top of each piece
  • Top with a sprig of arugula and a spoonful of the fig mixture; serve immediately

These are very easy to make and are absolutely delicious. The ingredients are estimates since it really depends on how large your crostini are. Feel free to make your own crostini by cutting french bread into thin slices and toasting them in the oven. Prep time does not include the soak time for the figs. Another option for serving, is to take the soaked figs and blend in a mini food processor, then spread on the goat cheese before baking.

16 plain crostini (home made or store bought)
6 -8 ounces chevre goat cheese
12 dried figs
1/2-1 cup balsamic vinegar (enough to cover the figs so that they can soak)

Steps:

  • Chop figs into 1/4 inch pieces and soak in balsamic vinegar, over night.
  • When ready, preheat oven to 350 degrees F. Spread goat cheese onto the crostini, and top with a spoonful of the chopped balsamic figs. Bake for approximately 10 minutes.
  • Remove from oven, and drizzle with a few drops of the remaining balsamic vinegar. Serve.
