Steps:
- In a small bowl, whisk together lime juice, olive oil and melted butter with a dash of seasoned salt. Stir in the shallots, garlic and capers.
- In a separate small bowl, mix together the seasoned salt, pepper, cumin and garlic powder. Spice fish fillets each on both sides.
- Place the fish fillets on a lightly-oiled large baking pan or dish. Cover with the buttery lime mixture you prepared earlier. Now arrange the green onion halves and lime slices on top.
- Bake in 375 degrees F-heated oven for 10-15 minutes. Do not overcook.
- Remove the fish fillets from the oven and garnish with the chopped fresh dill.
- Serve next to white rice or roasted Greek potatoes and a simple Mediterranean salad.

- For fish stock: Pour water into large pot and add bones, white wine, carrots, onion and leek. Simmer for 30 minutes over low heat. Strain and discard bones and vegetables. Season stock with salt and pepper and reduce to half its volume.
- Poach fillets with Vermouth and 3/4-cup stock in large pan over low heat for 10 minutes.
- Pour off most of stock from fillets into saucepan and bring to a boil. Meanwhile, sprinkle fish with remaining vermouth and season. Keep warm on low heat.
- Strain the boiling stock into a clean pan and reduce over high heat to 1/2 cup. Add cream and boil again. Beat egg yolks in bowl and add cream sauce to yolks. Pour all back into pot and reduce heat to low. Do not boil. To serve, arrange fillets on a platter, coat with sauce, and garnish with sliced truffle.
FILLET OF SOLE WITH RHUBARB

- Trim the leaves from the rhubarb and cut it into one-half-inch dice. Heat two tablespoons of the butter in a large skillet. Add the rhubarb and shallots and saute over medium heat until the vegetables are tender and lightly browned, about 10 minutes. Remove them from the pan and set aside.
- Add another tablespoon of butter to the pan. Pat the fish fillets dry on paper towels and add them to the pan. Saute just a minute or two on each side until they are barely cooked through. Do not overcook the fish. Remove the fish from the pan and set it aside, loosely.
- Add the lemon juice and honey to the pan and cook briefly, then return the rhubarb and the shallots to the pan. Season with pepper. Swirl in the remaining tablespoon of butter.
- Transfer the fish to each of four individual plates, spoon some of the rhubarb mixture over each, sprinkle with parsley and serve.

FILLET OF SOLE IN AN OIL SAUCE
A very easy to make fish recipe that goes very well with cooked spinach. I developed this for my wife over 25 years ago as she would not eat fish before. It is now a regular fish dish in our home.

Steps:
- In a glass jar, mix together lemon juice, olive oil, minced garlic and dried oregano; shake well until creamy.
- Divide sauce in half and set aside.
- Preheat oven to 400 F degrees.
- Rinse fillet of sole in cold water and pat dry with paper towelling.
- Sprinkle each side of fish with dried dill weed and black pepper.
- Place fish in a oven-proof casserole dish.
- Pour half of the creamy sauce mixture over fish.
- Bake in preheated 400 F oven for 10 minutes on each side or until fish is flaky (DO NOT OVERCOOK).
- In the meantime, in a cooking pot or large saucepan, bring 4 cups of water to boil.
- Add chopped spinach and cook for 2 minutes.
- Drain immediately and cover with cold water and some ice cubes to cool.
- Drain when cooled and pat spinach dry on paper towelling.
- Divide spinach equally on 4 serving plates.
- Place 1 piece of cooked fish on each plate.
- Pour remaining creamy mixture sauce over fish.
- Serve immediately.

We used lemon sole, a flaky, mild-tasting white fish. At the market, look for flat fish such as sole or flounder; Pacific-caught are the most sustainable. Tilapia works well, too. Serve it with steamed new potatoes and sauteed spinach.

- Preheat oven to 400 degrees F (200 degrees C). Lightly oil a baking dish.
- Combine crab, poblano pepper, panko bread crumbs, green onion, lemon juice, salt, and black pepper together in a bowl.

My mom often served a version of this dish when I was a kid, and it was one of my favorites. I guess it makes sense that it has become one of my go-to fast and easy dinners too. It's a weeknight trifecta-simple, tasty, and family friendly. All you need to do is sprinkle seasoned buttered bread crumbs onto a white, flaky fish fillet, and in less than 10 minutes the fish is done and the bread crumbs are crisped. I made it healthier by using freshly made whole-grain bread crumbs (which are a cinch to make) and adding some olive oil to the mix to keep the butter minimal. Roasting asparagus right alongside makes it a real two-for-one. Enjoy with some whole-grain rice, quinoa, or orzo.

- Preheat the oven to 425 degrees F.
- Trim the asparagus spears, then place them in a baking dish. Toss with 2 teaspoons of the oil and 1/4 teaspoon of the salt. Roast until they are crisp-tender, 10 to 15 minutes depending on the thickness of the spears.
