We have banana trees in our backyard that bear fruit all year. After making banana bread, muffins and cookies, I still had some of our bountiful crop left, so I decided to try this recipe. -Sera Smith, West Palm Beach, Florida

3/4 cup all-purpose flour
3/4 cup finely chopped pecans
3 tablespoons sugar
2 tablespoons brown sugar
1-1/2 teaspoons vanilla extract
6 tablespoons butter, melted
FILLING:
1 cup mashed ripe bananas
2 tablespoons lemon juice
2 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 cup sour cream
2 tablespoons cornstarch
1-1/4 teaspoons vanilla extract
1/8 teaspoon salt
3 large eggs, lightly beaten
TOPPING:
1 cup sour cream
1/4 cup sugar
1/4 teaspoon vanilla extract
1 cup assorted fresh fruit

Steps:

  • Combine the first five ingredients; stir in butter. Press onto the bottom of a greased 9-in. springform pan; place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack., Combine bananas and lemon juice; set aside. In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, cornstarch, vanilla and salt. Add eggs; beat on low speed just until combined. Fold in banana mixture. Pour into crust. Place pan on a baking sheet. , Bake at 350° for 50-60 minutes or until center is almost set. Let stand for 5 minutes. Combine sour cream, sugar and vanilla; spread over top of cheesecake. Bake 5 minutes longer. , Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan; cool 1 hour longer. Refrigerate overnight. Garnish with fruit.

2 slices bacon
1 slice bread
1 teaspoon butter
1 ripe banana
2 slices cheese (a sharp or tasty brand)

Steps:

  • Cook bacon under a grill (medium-high) until crispy.
  • Toast bread and then butter it while hot.
  • Place bacon on top of toast.
  • Slice banana and place on top of the bacon.
  • Then top with cheese.
  • Place under the grill (medium-high) until golden and bubbly.
  • Slice into 3 fingers and serve.

1 large egg
½ cup light brown sugar
¼ cup granulated sugar
½ cup butter
¼ cup sour cream, Greek yogurt may be substituted
2 teaspoons vanilla extract
2 bananas
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 pinch salt
1 large egg
4 oz cream cheese, softened
¼ cup granulated sugar
3 tablespoons all-purpose flour

Steps:

  • In a large bowl, mix the egg, sugars, butter, sour cream, and vanilla. Add the bananas, mash into the mixture.
  • Add flour, baking powder, baking soda, salt, and mix. Set aside.
  • In a large bowl, mix cream cheese, sugar, flour, and egg.
  • Pour half of the bread batter into a 9x5 inch (22cm x 12cm) pan, pour the cream cheese filling, smooth into corners, top with remaining batter.
  • Bake at 350°F / 180°C for about 50 mins. Baking times may vary, so keep an eye on the bread.
  • Allow to cool for 15 mins.
  • Enjoy!

1 teaspoon vegetable oil
2 tablespoons golden raisins
1 tablespoon freshly grated orange zest
1 tablespoon light brown sugar
2-inch piece fresh ginger, peeled and cut into fine julienne
1 cinnamon stick
4 whole cloves
12 small ripe finger bananas (3 to 4 inches), peeled
1/3 cup guava nectar
2 tablespoons balsamic or cider vinegar
1 tablespoon molasses or honey
Accompaniments: queso blanco (fresh white cheese; optional) and lime wedges

Steps:

  • Melt butter with oil in a 12-inch nonstick skillet over moderate heat, then stir in raisins, zest, brown sugar, ginger, cinnamon stick, and cloves until sugar is dissolved. Add bananas and cook, turning frequently, until lightly browned, about 5 minutes.
  • Stir together guava nectar, vinegar, and molasses and pour over bananas. Simmer, stirring gently, until sauce is thickened, about 30 seconds. Discard cinnamon stick and cloves and serve bananas warm.

6 ripe but firm medium bananas, peeled and cut lengthwise into halves
8 ounces cream cheese, softened
1/4 cup dark brown sugar, tightly packed
1/2 cup whipping cream
3 tablespoons dark rum
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 325º.
  • Heat butter in skillet over medium heat until melted.
  • Cook bananas in butter, a few at a time, until brown on both sides; gently remove.
  • Place cream cheese, brown sugar, whipping cream, rum and cinnamon in blender container.
  • Cover and blend on high speed, stopping blender occasionally to scrape sides, until smooth, about 1 minute.
  • Arrange half of the bananas in ungreased 8-in. square or rectangular baking dish.
  • Spread half of cream cheese mixture over bananas; top with remaining bananas and cream cheese mixture.
  • Bake uncovered until corners are bubbly, 20 to 25 minutes.
  • Serve warm.
