HOME FRIES RECIPE
Quick and easy home fries made from scratch. I'm using boiled potatoes, but you could use raw potatoes if you allow a bit more cooking time. Perfect side for breakfast.

Steps:
- Cut the boiled and cooled potatoes into cubes.
- Slice the onion.
- Place skillet over Medium heat and let warm up.
- Add bacon grease or oil.
- Add the onions.
- Add the cubed potatoes.
- Add garlic powder.
- Add black pepper.
- Add salt.
- Stir together well.
- Stir and cook until onions are translucent and potatoes are browned.
- Add the ketchup.
- Stir and let cook and brown about two more minutes.
- Serve warm
- Enjoy!
QUICK AND EASY HOME FRIES
A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

- Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

DINER HOME FRIES FROM LEFTOVER BAKED POTATOES
In NJ and NY area, this is how many diners make their yummy homefries. The diners I worked at would begin by taking the baked potatoes leftover from dinner, unwrapping the aluminum foil, then cutting off the skins. Steps:
- Heat oil in a large frying pan (or use your griddle pan). Add potatoes and onions (and green bell pepper if desired). Season to taste with salt, pepper and optional garlic powder.
- Fry potatoes for about 5 minutes, turning occasionally. Sprinkle paprika over potatoes and continue cooking and turning them for another 5-10 minutes until heated through. Serve with ketchup.

- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Meanwhile, heat 1 tablespoon of the bacon fat and 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium-high heat. Add the onion and cook, stirring, until golden brown, about 10 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining 3 tablespoons bacon fat and 2 tablespoons vegetable oil. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on one side, about 8 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, until well-browned, about 12 minutes. Stir in the onions, heat through, and sprinkle with the cayenne, if desired. Transfer to a warm platter and serve.

- In a large cast iron pan, heat 1 tbsp. bacon grease over medium-high heat. Once hot, add mushrooms and cook for three minutes. Add potatoes.
- Cook for 5 minutes, stirring frequently. Add other tbsp. of bacon grease along with salt, pepper, paprika, garlic powder, and dried oregano. Continue cooking for another 10-15 minutes, or until potatoes are golden brown to your liking! If needed, add more bacon grease as you toss the potatoes (need to be tossed more often near the end to prevent burning.) In the last few minutes of cooking, stir in red peppers.
