- For the raspberry sauce: Combine the raspberries and sugar in a small saucepan. Bring to a simmer over medium heat and cook for 15 minutes. Add the basil and lime juice and allow the sauce to cool in the fridge.
- For the meringue: Combine 1/2 cup water and the rum in a medium saucepan over high heat and bring to a simmer. Slowly stir in 1 cup of the sugar to combine, and use a pastry brush dipped in water to remove any sugar crystals from the side of the pot. Insert a candy thermometer into the mixture.
- In the bowl of a stand mixer using a whisk attachment, beat the egg whites on medium speed until foamy. Slowly stream in the remaining 1/2 cup sugar and beat to soft peaks.
- When the sugar syrup reaches the soft-ball stage (238 degrees F), remove from the heat. Increase the mixer speed to medium high and slowly stream the sugar syrup into the egg whites in the space between the beaters and the side of the bowl with the mixer running. Continue to beat until the meringue forms soft, glossy peaks.
- To assemble the cake: Place the angel food cake onto a cake stand or plate. Pour the raspberry sauce into the center hole. Spread the meringue evenly all over the sides and top of the cake, covering the hole at the top. Use your spatula to create peaks along the tops and sides if desired. Use a kitchen torch to toast the meringue all over before serving.
FROSTED ANGEL FOOD CAKE

- For the angel food cake: Preheat the oven to 350 degrees F.
- Combine the cake flour and salt in a medium bowl and sift together 5 times. Set aside.
- In a large bowl, with an electric mixer fitted with the whisk attachment, beat the egg whites until frothy (lots of bubbles but still liquid and loose). Add the cream of tartar and beat on high until stiff, 4 to 5 minutes. With the mixer on medium low, slowly sprinkle in the sifted granulated sugar. Fold in the sifted flour mixture gently until it's all combined. Sprinkle the vanilla into the bowl and fold gently.
- Spoon the batter into an angel food or tube pan (preferably with cooling legs)--make sure there's no grease or butter in there! Smooth the top and bake until a wooden skewer stuck all the way to the bottom comes out clean, 35 to 45 minutes. (Don't open the oven while it's baking!)
- Carefully remove the cake from the oven and immediately invert it onto its cooling legs (see Cook's Note). Let the cake cool completely while upside-down.
- For the frosting: Beat the powdered sugar, butter and cream in a large bowl with an electric mixer until very light and fluffy. Add a few drops of yellow food coloring as desired.
- Carefully remove the cake from the pan and transfer it to a cake plate upside-down, so that the end that was stuck to the bottom of the pan is now facing up. Frost the cake all over.
RED VELVET FIREWORKS CAKE

- Preheat the oven to 350 degrees F. Brush two 9-inch-round cake pans with vegetable oil; dust with flour and tap out the excess.
- Make the cake: Whisk the flour, cocoa powder, baking soda and salt in a medium bowl. Combine the granulated sugar, vegetable oil, buttermilk, eggs and vanilla in a large bowl; whisk until smooth. Whisk in the food coloring, then add the flour mixture and whisk until smooth.
- Spread 3/4 cup batter in each of the prepared pans (you'll have a very thin layer of batter); set the remaining batter aside. Bake until a toothpick inserted into the center of a cake comes out clean and the top springs back when pressed, 16 to 18 minutes. Transfer to a rack and let cool about 5 minutes in the pans, then invert the cakes onto the rack to cool completely.
- Meanwhile, cool the pans under cold water, then wipe clean. Brush with oil and dust with flour again. Repeat to make 2 more cake layers, using 3/4 cup batter for each, then repeat again. You will have 6 layers.
- Make the frosting: Beat the cream cheese, butter and salt in a stand mixer fitted with the paddle attachment on medium-high speed until fluffy. Beat in the vanilla, then beat in the confectioners' sugar in three additions until smooth.
- Put 1 cake layer on a serving plate and spread evenly with a scant 1 cup frosting. Repeat with the remaining 5 cake layers, then frost the top and sides of the cake with the remaining frosting in a thin layer (just enough so the nonpareils will stick). Refrigerate until the frosting is just set but still soft, about 10 minutes.
- Put the cake (on the plate) on a rimmed baking sheet. Cover the top and sides completely with the nonpareils, reusing the ones that fall onto the baking sheet.
ANGEL FOOD CAKE I
Homemade angel food cake is worth the work. It is moist, unlike the sweet styrofoam available in the grocery bakery. A tube pan with a removable bottom is highly recommended.

- Preheat the oven to 375 degrees F (190 degrees C). Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or residue could deflate the egg whites. Sift together the flour, and 3/4 cup of the sugar, set aside.
- In a large bowl, whip the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks. When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not overmix. Put the batter into the tube pan.

CELEBRATION ANGEL FOOD CAKE
This cake is different in that it has red, white and blue sprinkles which makes it perfect for 4th of July! Change the color of the sprinkles and you can use this for any celebration! And now a little history: Angel food cake is also called ice cream cake (a Pennsylvania Dutch wedding cake). It is felt that the abundance of cake molds in southeastern Pennsylvania, one of the major producer of cake molds, indicates that the angel food cake originated there in the early 1800s. Some historians think that the first angel food cakes were probably baked by African-American slaves from the South because making this cake required a strong beating arm and lots of labor to whip the air into the whites. Angel food cakes are also a traditional African-American favorite for post-funeral feasting.

- Sift flour with 3/4 cups sugar 4 times; set aside.
- With a hand-held electric mixer at high speed, beat egg whites with salt and cream of tartar until soft peaks are formed. Gradually beat in remaining 1 cup sugar, about 1/4 cup at a time.

- Preheat the oven to 375 degrees F.
- Sift all the flour and 3/4 cup of the sugar into a large bowl using a fine mesh strainer. Sift another 2 times. Set aside.
- Combine the egg whites, cream of tartar and salt in the bowl of a stand mixer with the whisk attachment fitted. Beat on medium until soft peaks form when the whisk is lifted up.
- Turn the stand mixer back on at a medium speed. Gradually stream in the remaining 1 cup of sugar into the egg whites as they're being whisked. Once it's all been added, let the mixer run on high speed until stiff peaks form when the whisk is lifted up. Add the almond extract and vanilla extract and beat in until just combined.
- Take 1/3 of this beaten egg white mixture and add to the bowl of the flour and sugar. Mix together to combine. Add this to the bowl of remaining beaten egg whites and fold together gently with a spatula until just combined, being careful not to knock too much air out of the egg whites while doing this. Finally, fold in the rainbow sprinkles with a few strokes - don't overmix or the sprinkles will start to bleed into the batter and discolour it.
- Spoon the batter into an ungreased, 10-inch diameter tube pan. Smooth out into an even layer.
- Bake for 35-40 minutes until golden, the top of the cake should spring back when gently pressed with a fingertip. Invert the cake onto a wire rack and leave in its pan to cool completely, about 2 hours.
- Once cooled, use a metal spatula or butter knife to loosen the cake from the edges of the pan. Tip out onto a wire rack.
- Make the candy melt fireworks:.
- Tip the different coloured candy melts into separate, heatproof bowls. Set each one over a pan filled with 1 inch of simmering water on the stove. Let melt, stirring occasionally, until they're fully melted and smooth.
- Divide the colours into individual piping bags fitted with small round tips.
- Pipe firework shapes of different colours, sizes and shapes onto a piece of parchment paper. Set aside to cool and set.
- Make the frosting:.
- Place the cold heavy cream into a large bowl and beat with a whisk or electric beaters until it starts to thicken. Add the powdered sugar and briefly stir inches
- Take 4 small bowls and add 1/4 cup of the whipped cream to each bowl. Add pink food colouring to one bowl, green to another, purple to another and yellow to the last small bowl. Stir through so you have one small bowl of each of the colours. Divide these into 4 separate piping bags fitted with a small round tip.
- To the remaining whipped cream in the large bowl, add the blue food colouring and stir through.
- It's important not to over-stir the cream or it will start to separate. If it starts to look grainy you can pour a little un-whipped heavy cream into the bowl and gently stir that in which should help bring it back from separation.
- Frost the cake:.
- Cover the cooled cake with the blue frosting, using an offset spatula to spread it over the top, sides and inner hole in a smooth layer.
- Take your other colours of whipped cream frosting and pipe fireworks all over the top and sides of the cake.
- Insert the candy melt fireworks you made earlier into the top of the cake.
- Serve immediately or keep chilled, covered for up to 2 days.

- Preheat the oven to 325 degrees F. Whisk the sugar, cream of tartar and salt together in a medium bowl.

RAINBOW CONFETTI ANGEL FOOD CAKE
We go rainbow crazy every June when Pride Week is celebrated in Boston and around the country. Every color of the rainbow is baked into cupcakes, folded into Oreo filling, even mixed through rice crispy treats. For over a week it looks like a carnival let loose on the pastry counter at Flour. I don't know what it is about rainbow sprinkles, but put them on a cake or in a cookie and you have an instant hit. This Funfetti angel food cake covered in toasted meringue is one of the prettiest--and for me tastiest--rainbow specials we offer. The meringue helps keep the cake tender by protecting it from drying out, but I doubt you'll have a lot of leftovers. We never do!

- For the rainbow confetti angel food cake: Preheat the oven to 350 degrees F and place a rack in the center of the oven.
- Place the egg whites, vanilla, 1 teaspoon water, and the cream of tartar in a stand mixer fitted with a whisk attachment (or in a large bowl, using a whisk). Whip on medium speed for 2 to 3 minutes (or 5 to 6 minutes by hand) until you can see the wires of the whisk leaving a slight trail in the whites.
- With the mixer still on medium, or while continuing to whip vigorously by hand, slowly add 3/4 cup (150 grams) of the sugar, a few tablespoons at a time. After adding a little sugar, let it whip into the whites for 10 seconds or so, then add more sugar, then again wait about 10 seconds. Continue this way until all the sugar is added; that should take at least 1 minute. Once all the sugar is added to the whites, whip on medium-high for 2 to 3 minutes more (5 to 6 minutes by hand), until the whites are glossy and shiny and hold a peak when you slowly lift the whisk straight up and out of them.
- Stir together the cake flour, the remaining 3/4 cup (150 grams) sugar, the sprinkles, and salt in a small bowl. Carefully sprinkle the flour mixture on top of the whites and gently and quickly fold it in. When the everything is entirely mixed in, scrape the batter into an ungreased 9-inch angel food cake pan. Use a spoon or offset spatula to even off the top of the batter.
- Bake for 30 to 40 minutes, rotating the cake pan midway through the baking time, until the entire top of the cake is light golden brown and the cake springs back when you press it lightly, and a cake tester inserted into the middle of the cake comes out clean. Immediately remove the cake from the oven and turn the pan upside down. (This ensures that the cake does not deflate and compact onto itself; since the cake pan is not greased, the cake won't fall out.) Leave the cake upside down until it is entirely cooled, at least 2 hours.
- When the cake is cool, make the frosting.
- Turn the cake pan right side up. Remove the cake from the pan by first running a knife around the outer edge of the cake and then around the inner tube of the pan; pop out the removable bottom along with the cake, then run a knife along the bottom of the cake to separate it from the pan. Turn the inner tube and pan bottom upside down and remove the cake carefully and quickly, then turn the cake right side up again onto a serving plate. Frost the sides, top, and inner tube with the frosting. Use an offset spatula or knife to smooth the frosting. Use a blowtorch to carefully torch the frosting all over to create a golden brown surface. If you do not have a torch, place the frosted cake on a baking sheet under the broiler and rotate it every few minutes until the sides and top are toasted, 8 to 12 minutes total. Serve immediately, or store at room temperature and serve within 6 hours at the very longest. (The frosting will not last for more than 6 hours at room temperature, and the cake itself does not store well in the fridge.)
- For the fluffy marshmallow frosting: In a small metal or heatproof glass bowl, whisk together the sugar and egg whites to make a thick slurry. Place the bowl over a small pot of simmering water (make sure the pot is small enough that the bowl sits above the water and not directly touching it, or you may end up with scrambled egg whites) and cook, whisking occasionally, until the mixture is very hot to the touch, 6 to 8 minutes. (When you stick your finger in the mixture it should be so hot you immediately remove your finger.) It will thin out a bit as the sugar melts.
- Scrape the sugar-egg white mixture into a stand mixer fitted with a whisk attachment and whip on medium-high speed for 6 to 8 minutes, until the frosting cools, is fluffy and glossy, and looks like shaving cream. Add the vanilla and salt and whip until mixed in. Use immediately.

- Preheat oven to 325 degrees, with rack in lower third but not on bottom shelf. Prepare a 10-inch angel-food-cake pan: Using the pan as your guide, cut a circle from a piece of parchment paper; use it to line bottom of pan. Using a sieve, sift flour and 1/2 cup sugar onto another piece of parchment.
- Set sieve over a bowl, and return mixture to sieve; sift again and set aside.
- Place egg whites in a large mixing bowl. Beat on medium speed until frothy, about 1 minute. Add the cream of tartar, lemon juice, vanilla, and salt; continue beating until soft peaks form, about 2 1/2 minutes. With mixer running, add remaining cup sugar a little at a time, beating no longer than 1 minute.
- Raise speed to medium-high; continue beating until firm, but not stiff, peaks form (when beater is lifted, only the tip of the peak should fall over slightly). Gently transfer egg-white mixture to a large, wide bowl. Sprinkle a third of the reserved flour mixture over the whites. Using a whisk, gently combine in a folding motion, allowing batter to fall through the whisk as you fold. Sprinkle remaining flour mixture over whites in two more batches; fold until just combined. Be careful not to overmix because the egg whites will deflate.
- Using a large rubber spatula, transfer batter to prepared pan. Run a knife gently through the center of the batter to remove any large air bubbles. Bake until a cake tester inserted in the middle comes out clean and cake is springy to the touch, 45 to 50 minutes.
- Remove pan from oven and invert onto its legs, making sure cake clears the surface of the counter. (If using a tube pan, invert it and hang over the neck of a bottle.) Let cool completely, 1 1/2 to 2 hours. To remove cake, reinvert pan, top side up. Run a knife around the inner and outer edges of the cake before releasing the bottom. Cake will keep up to 2 days at room temperature in an airtight container or wrapped in plastic. To serve, slice with a serrated knife.

I didn't base the merit of this recipe solely on the use of a boxed mix and canned frosting. - Preheat the oven to 350°F Grease and flour two 8-inch round cake pans or see Tip #1 below.
- Prepare the cake mix batter according to package directions.
- Pour 1 cup batter into each prepared pan. Drop 5 to 7 drops each of the red and blue food coloring randomly on batter. (I found the larger the drop pools, the better the effect. In other words, don't skimp or there will not be enough gel effect when cutting the cake.) Swirl the coloring with a wooden skewer. Divide the remaining batter evenly between the pans, spooning batter gently on top of swirled colors. Drop 5 to 7 drops each of red and blue food coloring randomly on the batter again; swirl coloring with a wooden skewer.
- Bake the cakes until a toothpick inserted in centers comes out clean, 30 to 35 minutes. Cool the cakes in the pans on wire racks for 10 minutes. Remove the cakes from the pans and place on wire racks to cool completely.
- Place one cake layer on a serving plate. Spread the top with about 3/4 cup frosting. Top with the second cake layer. Spread the side and top of the cake with the remaining frosting. Draw several sets of concentric circles on top and side of cake with the red and blue decorating gels. Drag a wooden skewer through the circles to feather the colors and make bursting fireworks designs.
- Two Tips To Remove Cake From Pans:.
- Tip 1. An easier method is to outline 2 pieces of wax paper cut to the size of the bottom of the cake pan. Place wax paper on bottom and pour batter over. When inverting after baking, immediately peel off wax paper and dispose.
- Tip 2. Let each cake layer cool in the pan for 10 minutes before removing; the cake will release steam and begin to pull away from the pan edge.
- Check to see if the cake will come out easily by placing one hand on top of the cake and carefully inverting the pan. If the cake layer doesn't release, run a knife around the edge of the cake to help loosen. Place your hand on the top and carefully invert the pan again. Remove the cake and carefully place on a rack to cool completely.

- Note: For those not use to making angel food cakes Don't get any yoke in the whites, if you do throw out and start over. I always separate the egg in a glass first. Then if no yoke pour into measuring container.
- DO NOT GREASE PAN.
- I always use a two piece angelfood cake pan.
- Heat oven to 375°.
- Sift the cake flour and 3/4 cup + 2 Tbsp sugar separately; set aside.
- Combine the extracts in a small bowl; set aside.

- Add the other 3/4 cup of sugar slowly, then beat on high until stiff peaks form.
- If you have a mixing guard for your mixer bowl now would be a good time to attach it.
- Beating on LOW, add flour mixture and extracts slowly.
- Make sure you fold in the sides and bottom of your mixing bowl.
- (You can fold in flour mixture by hand but this way is faster.) Spoon into an angel food cake pan.
- Move a knife through batter to remove air pockets.
- Bake 30-35 minutes or until top springs back when touched lightly with finger.
- Invert pan onto a tin funnel to cool completely.
- To remove the cake from your pan run a knife around the rim of the cake pan just to get the 'crust' away from the pan.
- Then firmly spank the sides of your pan.
- You could use a knife but this sometime tears the sides of the cake.
- Invert onto your serve plate then take the knife to the now top which was the bottom of your pan and gently cut cake away from the pan insert.
- No need to cut around the center tube as you just give the cake a gently but firm tap or downward shake on to the plate.
- Or you can pick up plate while holding onto the pan insert with your thumbs and firmly strike the bottom of the plate onto a folded towel. (Just give it a slam down on the towel/table).
